Abstract

Compressed air is used to project tiny particles of edible vegetable seeds, e.g. rice, crushed nuts, etc., against the outer surfaces of the sausages, in effect 'blast cleaning' the prod. The air pressure is pref. is approx. 2 bars and the duration of blasting 2-3 minutes. The machine pref. comprises a horizontal, rotary, perforated drum through which the sausages are conveyed, e.g. by internal helical scroll surfaces on the drum. The upper part of the drum contains a horizontal pipe running parallel to the drum axis and supplying compressed air and blasting particles to nozzles which can be positionally adjusted for max. blast effect. The abrasive particles pass out through drum perforations and can be recycled. The cleaning process is to remove moulds, blooming, yeasts etc. which develop on the sausage skins. Also to take off grease exuded from the sausage interior. Process is more effective and hygienic than brushing off the growths etc. The brushes rapidly became clogged and were ineffective in removing grease from skin wrinkles.
