Abstract

An industrial freezing process and freezer plant for edible game and poultry carcasses which have been drawn and stripped of feathers or fur before being brought into a thermally insulated, refrigerated zone. A metered jet of liw. CO2 is injected into the eviscerated cavity of each carcass where it expands to form a mass of dry ice filling the cavity while cold CO2 gas escapes from the cavity into the thermally insulated zone. The freezer plant comprises a freezing tunnel with conveyor fitted with hollow spikes each to engage a carcass cavity and provide an entry passage for an axially advancing injector pipe which is connected via a shut-off valve to a supply of liq. CO2. Virtually instant refrigeration of the entire internal surface of the eviscerated cavity takes place which avoids pollution and pockets of bacterial contamination; this is achieved without mechanical refrigeration and its associated high capital investment and subsequent maintenance costs. The carcass is not dried out of loaded with excess H2O and retains high quality taste, texture and appearance.
