Fruit is semi-preserved by bleaching, boiling, washing with cold water, cooking, yeing, rinsing and then putting into bags contg. a syrup of 10 degrees Be and heating at 60 degrees C with progressive adding of more conc. syrup up to 35 degrees Be by the 7th day; followed by draining and heating and impregnating with alcohol at 45-55 degrees to remove syrup, and pasteurising. The alcohol impregnation reduces the sticking of fruit, prepd. according to the parent patent, so that it can be handled in automatic machines. Perfume and savour are also improved.
