Claims (13)
1. Menetelmä kaseiiniproteiinituotteen valmistamiseksi, joka menetelmä käsittää vaiheet: a) kaseiinikonsentraatti lähtöaineen tarjoaminen, b) valinnaisesti kaseiinikonsentraattiaineen konsentroiminen, c) materiaalin lämpökäsitteleminen lämpötilaan 80 °C -155 °C, d) lämpökäsitellyn materiaalin jäähdyttäminen, e) jäähdytetyn materiaalin saattaminen käsittelyyn ristisitovalla entsyymillä, f) valinnaisesti jäähdytetyn materiaalin saattaminen käsittelyyn koagulantilla, g) materiaalin prosessointi kaseiiniproteiinituotteeksi, jonka pH on välillä 5,5-6,7, h) valinnaisesti tuotteen eristäminen ja/tai pakkaaminen.
2. Patenttivaatimuksen 1 mukainen menetelmä, jolloin menetelmä sisältää lisävaiheet: a) maitoraaka-aineen tarjoaminen ja b) maitoraaka-aineen saattaminen membraanisuodatusprosessiin kaseiinikonsentraatin tuottamiseksi.
3. Patenttivaatimuksen 1 tai patenttivaatimuksen 2 mukainen menetelmä, jossa jäähdytetty materiaali saatetaan käsittelyyn koagulantilla.
4. Minkä tahansa patenttivaatimuksen 1 - 3 mukainen menetelmä, jossa kaseiinikonsentraatti käsittää proteiinia 9-50 %, laktoosia 0-2 %, kalsiumia 2 500 - 12 500 mg/kg ja fosforia 1 600 - 8 000 mg/kg.
5. Minkä tahansa patenttivaatimuksen 1 - 4 mukainen menetelmä, jossa kaseiinikonsentraatti käsittää proteiinia 15-30 %.
6. Minkä tahansa patenttivaatimuksen 1 - 5 mukainen menetelmä, jossa kaseiinikonsentraatti käsittää kalsiumia 4 000 - 7 000 mg/kg.
7. Minkä tahansa patenttivaatimuksen 1 - 6 mukainen menetelmä, jossa kaseiinikonsentraatti käsittää fosforia 3 000 - 5 000 mg/kg.
8. Minkä tahansa patenttivaatimuksen 1 - 7 mukainen menetelmä, jossa jäähdytysvaiheessa (d) materiaali jäähdytetään lämpötilaan 2 °C - 20 °C.
9. Minkä tahansa patenttivaatimuksen 1 - 8 mukainen menetelmä, jossa ristisitova entsyymi on transglutaminaasi.
10. Minkä tahansa patenttivaatimuksen 1 - 9 mukainen menetelmä, jossa koagulantti on juoksetin tai kymosiini.
11. Kaseiiniproteiinituote, jonka pH on välillä 5,5 - 6,7 ja joka käsittää - proteiinia 9-50 %, - laktoosia 0 - 2 %, - kalsiumia 2 500 - 12 500 mg/kg, - fosforia 1 600 - 8 000 mg/kg ja - biologisesti aktiivisia peptidejä 20 - 700 mg/kg.
12. Patenttivaatimuksen 11 mukainen kaseiiniproteiinituote, joka käsittää rasvoja ja/tai öljyjä, kuten palmuöljyä, rypsi- ja rapsiöljyä, pellavansie-menöljyä, oliiviöljyä, maissiöljyä, auringonkukkaöljyä, kermaa, voiöljyä tai niiden yhdistelmiä tai seoksia.
13. Patenttivaatimuksen 11 tai patenttivaatimuksen 12 mukainen kaseiiniproteiinituote, jolloin se on valmistettu minkä tahansa patenttivaatimuksen 1-10 mukaisesti.
