Abstract
The process consists of (a) cooking the mussels for around 2 mins. at 100-110 deg.C to open them and paralyse their enzymatic and micro-biological processes; (b) collecting the surrounding liquid and the coagulation prods. of the mussel proteins formed by the effect of heat; (c) concentrating the liquid at ambient temp., pref. by an intermittent process, until a solids content of around 50% is achieved; and (d) pasteurising the conc. liquid..
