Abstract

A method of cleaning the interior surfaces soiled by food product debris from a roasting cavity in a gas oven, consisting of (1) supplying as inlet gas exterior air and fuel gas to said furnace, the amount of said external air greater than the stoichiometric amount for the combustión of said gas, (2) burning said combustible gas in order to produce hot combustión gases (3) circulating said hot combustión gases and said excess air within said cavity in contact with said surfaces stained by food product debris in order to raise the temperature of said cavity and said surfaces above 398.8ºc (750ºf), thereby converting said food product residues into hot vapors and in heating said excess air, (4) passing said hot vapors in contact with said combustible gas that is being burned to substantially incinerate all said vapors until achieving a substantially complete oxidation state, and (5) passing said fully oxidized hot vapors and said excess hot air in heat exchange with said inlet gases in order to cool said completely oxidized hot vapors and said hot air excessively large enough to allow the release of relatively cold combustión gases in the space surrounding the kiln.
