Abstract

Procedimiento para el tratamiento a alta presión de un producto, en particular un alimento envasado, en donde, en una primera etapa de procedimiento, el producto es solicitado en una cámara de alta presión (2) con un agente a presión, en donde, en una etapa de procedimiento subsiguiente, la presión acumulada en la cámara de alta presión (2) se reduce de nuevo, en donde la reducción de la presión tiene lugar en una o varias fases (17, 19, 20) y en donde la reducción de presión se regula al menos en una de las fases (19), caracterizado por que para la regulación se recurre a un segundo parámetro, que se determina por medio de un primer parámetro registrado durante la acumulación de la presión, en donde o bien se determina como primer parámetro qué masa del agente a presión, en particular qué corriente másica, se necesita para alcanzar durante la acumulación de presión una diferencia de presión determinada, o bien se determina como primer parámetro qué volumen del agente a presión, en particular qué corriente volumétrica, se necesita para alcanzar durante la acumulación de presión una diferencia de presión determinada.
