Abstract
Envase para su calentamiento por microondas (100; 200; 300; 400; 500; 600; 700; 800, 900; 1000; 1100; 1200; 1300) que comprende: un primer panel (102; 202; 302; 402; 502; 602; 702; 802, 902; 1002; 1102; 1202; 1302) y un segundo panel (104; 204; 704; 804) unidos entre sí en una relación de enfrentamiento, en la que el primer panel y el segundo panel definen las paredes del envase; y un tercer panel (106; 206) unido al primer panel y al segundo panel, en el que el tercer panel define la base del envase, en el que el primer panel, el segundo panel y el tercer panel definen un espacio interior (108; 208; 308; 408; 508; 608; 708; 808, 908; 1008; 1108; 1208; 1308) para recibir alimento (F), incluyendo cada uno del primer panel y del segundo panel material interactivo con la energía de las microondas (112; 212; 312; 412a; 412b; 512a; 512b; 612a; 612b; 712; 812, 912; 1012; 1112), en el que el espacio interior incluye una serie de regiones que incluyen una región baja (R2) adyacente al tercer panel del envase, de tal modo que la región baja incluye la parte más baja del espacio interior, y una región superior (R1) dispuesta encima de la primera región y contigua a la misma, de tal modo que la región superior incluye la parte más elevada del espacio interior, el tercer panel actúa para aumentar la distancia entre el primer panel y el segundo panel en el interior de la región baja del envase, de tal modo que la anchura lateral del espacio interior aumenta desde la región superior a la región baja, y el material interactivo con la energía de las microondas del primer panel y del segundo panel es adyacente a la región superior del espacio interior, caracterizado porque el material interactivo con la energía de las microondas (112; 212; 312; 412a; 412b; 512a; 512b; 612a; 612b; 712; 812, 912; 1012; 1112) actúa para reflejar sustancialmente toda la energía incidente de las microondas.

de la región del refuerzo. La dimensión más pequeña de centro de panel a centro de panel era aproximadamente de 47,2 mm, situada en la parte de arriba de la superficie del alimento.
Las bolsas de control (Ensayos 4-1 y 4-6) no incluían elementos interactivos con la energía de las microondas. Las bolsas experimentales (Ensayos 4-2 a 4-5 y Ensayos 4-7 a 4-10) incluían una protección contra la energía de las microondas en los paneles frontal y posterior de la bolsa, similar a la configuración del envase mostrado en la figura
2. La protección contra la energía de las microondas se extendía aproximadamente 25,4 mm por encima de la superficie del alimento, excepto en los Ensayos 4-5 y 4-10, en los que la protección contra la energía de las microondas se extendía aproximadamente 12,8 mm por encima de la superficie del alimento.
El alimento se calentó durante 2,75 minutos (4-1 a -4-5) o 3,5 minutos (Ensayos 4-6 a -4-10) en un horno de microondas Panasonic de 1.000 vatios, con plato giratorio. Se utilizaron un termómetro manual de termopar de respuesta rápida y una sonda rígida para medir la temperatura de la parte superior del alimento (aproximadamente 38 mm por debajo de la superficie de arriba) en el interior de la primera región de calentamiento -R1-y de la parte baja del alimento en el interior de la segunda región de calentamiento -R2-(aproximadamente 38 mm desde el fondo de la bolsa). Se tomaron seis (6) mediciones en cada posición y se halló la media. La temperatura objetivo del alimento era de 70 ºC. Los resultados se muestran en la Tabla 5.

En los Ensayos 4-2 y 4-7 la utilización de la protección más grande redujo el calentamiento de la parte superior del artículo alimenticio más que en la región del refuerzo, creando una reducción mayor del 50% en la diferencia entre las temperaturas de las regiones superior y del refuerzo. En los Ensayos 4-5 y 4-8 la utilización de una protección más pequeña incrementó la temperatura a lo largo de la parte superior del alimento y en la región del refuerzo, posiblemente mediante la redistribución de los modos del campo electromagnético de una manera beneficiosa. Por lo tanto, en el caso de alimentos muy fluidos con densidades compuestas cercanas a la del agua y capaces de flujos significativos de transferencia del calor por convección natural, las protecciones más grandes pueden reducir las diferencias de temperatura más que las protecciones más pequeñas. Además, en el caso de tiempos de calentamiento más cortos, una gama más amplia de tamaños de protección puede proporcionar algún beneficio en comparación con los tamaños que muestran beneficios con tiempos de calentamiento más largos.
EJEMPLO 5
Se evaluó el efecto de utilizar diferentes elementos interactivos con la energía de las microondas para calentar un alimento en una bolsa que se mantiene derecha. La bolsa tenía una longitud aproximada de 184 mm, una anchura aproximada de 139 mm, una altura del refuerzo aproximada de 38 mm, una anchura de la costura lateral aproximada de 10 mm y una anchura del cierre del refuerzo del fondo aproximada de 5 mm. La proporción de la anchura -W-de la bolsa menos la anchura de las dos costuras laterales con respecto a la altura -D-del refuerzo era de 1,57. La capacidad total de la bolsa era de 473 cm3 aproximadamente una vez cerrada con una costura en la parte de arriba de una anchura aproximada de 10 mm.
Se colocaron aproximadamente 510 g de “Dinty Moore Hearty Meals Beef Stew” en el interior de la bolsa, se cerró la parte de arriba y se creó una pequeña ventilación justo debajo del cierre de arriba. La bolsa de control (Ensayo 5-1) no incluía elementos interactivos con la energía de las microondas. La bolsa experimental del Ensayo 5-2 incluía un conjunto de elementos reflectantes de la energía de las microondas de aproximadamente 114,3 mm x 88,9 mm en los paneles frontal y posterior de la bolsa, similar a la configuración del envase mostrado en la figura 3. La bolsa experimental del Ensayo 5-3 incluía tanto un conjunto de elementos reflectantes de la energía de las microondas como un parche de protección de la energía de las microondas en los paneles frontal y posterior de la bolsa, similar a la configuración del envase mostrado en la figura 4.
