Abstract

Physical process to obtain cocoa extract using cocoa leaf in two stages: firstly, the selection and drying of cocoa powder in the production area. Mature cocoa leaves are dried and sieved, then ground in a mill, and put into boiling water to make the extract. The extract is filtered to remove impurities, and mixed with a preservative, preferably sodium benzoate, and put in a blender to produce an emulsion of the extract and the preservative. The dried residue remains on the walls of the blender, thus obtaining the final product.< IMAGE >Dry, mature coca leaves are crushed into flour and sieved. The flour is milled with boiling water in a roller mill to give an extract which is filtered, mixed with preservative, pref. sodium benzoate and centrifuged to give an emulsion of extract and preservative. The dry resolves remains on the walls of the liquefier.
