- ethylene is a hormone released by fruit and vegetables that induces the ripening process.
- Ethylene is a gas that has negative effects on quality and shelf life in the post-harvest storage phase of fruit and vegetables. When fruit and vegetables are not yet ripe, the level is low, but at a certain stage of development ethylene production suddenly increases, leading to ripening, and thus to softening, senescence, decay and increased susceptibility to attack by microorganisms.
- the speed of this process depends on each variety of fruit and vegetable.
- fruits can be classified into two main groups.
- the first group is called climacteric fruits that emit a large amount of ethylene during ripening.
- the second group is called the non-climacteric fruits in which ethylene production does not increase post-harvest. This second group is however susceptible to deterioration if it is exposed to an external source of ethylene such as a ripening climacteric fruit.
