A packaging system according to one of the preceding claims, characterized in that the sorting station (13) comprises at least two collecting containers (14) or conveyor belts for accommodating packagings (21) depending on the category of the respective product (19) and a reject container (14') for sorting out empty or defective packagings (21).
  7. A packaging system according to one of the preceding claims, characterized in that the monitoring unit (4) comprises a laser system, an X-ray system and/or a vision system.
  8. A method of operating a packaging system (1) comprising a product feeder (3), a packaging machine (7), an infeed station (9), a sealing station (10), a sorting station (13) arranged downstream of the packaging machine (7) for filling packagings (21) into collecting containers (14) or for placing them onto conveyor belts, and a control unit (18), wherein said control unit (18), by means of a software based line control, traces all the supplied products (19) along a direction of production (R) from the product feeder (3) through the packaging machine (7) up to the sorting station (13), and wherein a monitoring unit (4), which is provided upstream of or along the product feeder (3), detects at least one characteristic of the products (19) and transmits it to the control unit (18) so as to insert, at the sorting station (13), the packagings (21) and the products (19) contained therein into the collecting containers (14) or transfer them onto the conveyor belts, depending on a category of the products (19).
  9. A method according to claim 8, characterized in that the products (19), preferably in the form of a portion comprising a plurality of slices, are produced upstream of the product feeder (3) by means of a cutting unit (2).
  10. A method according to claim 8 or 9, characterized in that the packaging machine (7) is a thermoform packaging machine or a tray sealer.
  11. A method according to one of the claims 8 to 10, characterized in that a unit (15) places an insert (16, 17), prior to insertion of the product (19), into the open package trough (22) or an insert (16, 17) below the product (19) along the product feeder (3).
  12. A method according to one of the claims 8 to 11, characterized in that a labeller (11) applies labels to the packagings (21), depending on the category of the respective product (19).
  13. A method according to one of the claims 8 to 12, characterized in that the monitoring unit (4) detects the characteristic of the product by means of a vision system, a laser system and/or an X-ray system.
