Description
The present invention relates to baking ovens food, comprising a cooking enclosure closed by a wall peripheral and a door, with an internal turbine for setting air circulation driven in rotation by motor means, and with means for injecting water into the turbine so that the turbine blades radially project water by distributing it on heating elements arranged on the periphery of the turbine.
Such steam ovens in which the turbine participates spraying water to be sprayed have been known since long time. For example, in documents DE 27 47 097 A1, EP-A-523 489 and DE 296 06 655 U1, an internal circulation turbine air is rotated along a horizontal axis and is fitted with peripheral blades arranged in a cylinder for suction the air axially according to an air suction current and for the discharge radially according to an air discharge zone. of the heating elements are distributed around the turbine and depending on its depth in the air discharge area. Water to vaporizing is brought under pressure by a supply pipe of water to a spray nozzle placed at the inlet of the turbine in the central air suction current, the nozzle throwing water axially in the direction of the suction current air. We note, with such an arrangement, that water sprayed spreads preferentially towards the bottom of the turbine, and is distributed evenly around the entire perimeter of the bottom of the turbine on the corresponding heating elements. he as a result that the heating elements placed on the periphery of the bottom of the turbine receive a significant amount of the water they vaporize, while the heating elements placed on the periphery of the inlet portion of the turbine receive very little water and stay at a higher temperature. Besides an uneven distribution water on the heating elements, this arrangement requires a pressurized water inlet and a spray nozzle, a such nozzle having a tendency to clog after a period of use, because of deposits of impurity or scale. It results in a fairly frequent cleaning requirement, a decrease reliability, and an irregularity in the amount of steam produced.
To avoid plugging nozzle problems spraying, we imagined solutions in which the water is brought in without pressure by a pipe, and a rotary means of spraying of water is planned in the turbine to spray the water radially against the turbine blades which then distribute it on the heating elements. For example, the document EP 0 233 535 A proposes to bring the water without pressure above the turbine hub. The water flows on the hub which, by its rotation, pulverizes it radially by projecting it towards the blades of the turbine. In document EP 0 244 538 A, an inverted cone, open according to its small base towards the turbine inlet and closed according to its large base towards the bottom of the turbine, is fixed at the end of the turbine hub. Water is brought in through a pipe inside the cone, and it escapes in a radial film continuous along the entire periphery of the cone inlet lip, in being projected towards the turbine blades. In the document EP 0 523 489 A, the water is brought into an inverted rotary cone open, and escapes in a radial film through the large base posterior from the cone to the turbine blades. In the document DE 41 31 748 A, a drilled or ribbed disc is fixed at the end of the turbine hub, and water is supplied to the front of the disk. By its rotation, the disc projects water radially towards the turbine blades. In document EP 0 640 310 A, water is brought on a ribbed rotating anterior sphere, which projects water radially to the turbine blades.
In all these arrangements by means of spraying rotating water, the distribution of water along the periphery is regular but this water distribution is inequitable along the depth of the turbine. As a result, only certain portions of the heating elements receive a quantity substantial water spray, other portions of elements heaters receiving little or no portion of the water at spray. In addition, the realization of the rotating elements of spraying requires modification of the turbine structure, and to ensure satisfactory balancing of the rotating parts. The manufacturing is thus more complex.
The problem proposed by the present invention is to design a new spray and distribution structure water in a steam oven turbine, which allows a equitable distribution of water around the turbine and according to the turbine depth, without affecting the balancing of the turbine itself, and which is compatible with a power supply water without pressure and therefore without spray nozzle.
Another object of the invention is to facilitate the cleaning of the functional elements of the oven, and in particular of elements for spraying and distributing water.

- at least one fixed distribution plate, arranged and oriented so that the water coming from the longitudinal slot flows and is distributed by entrainment in the central air suction current in an area extending in the depth of the turbine.
According to an advantageous embodiment, the section end of pipe is offset laterally away from the horizontal axis of the turbine, and a distribution plate and the associated longitudinal slot are arranged on the section side end of the pipe closest to the turbine blades.
According to one possibility, the end section of pipe comprises two opposite longitudinal slots, arranged laterally on either side and each associated with a respective fixed distribution plate.
Preferably, the distribution plate is inclined according to an ascending orientation following the direction of the current central air intake.
In a preferred embodiment, the plate distribution is an elongated plate in the direction of the current central air intake, and the distribution plate is extended beyond the corresponding side slit towards the inside of the turbine.
Good distribution results are obtained using a distribution plate comprising an inclined front section at a first inclination, followed by a posterior section inclined at a second inclination greater than the first tilt.
In all cases, the distribution plate is preferably positioned in the turbine so that its anterior end is substantially at the end - anterior of the corresponding lateral slit and at the plane front end of the heating elements, and that its end posterior is slightly in front of the posterior end plane heating elements.

In the embodiment shown in more detail on

At least one
In the embodiment illustrated in the figures, the
plaque de répartition 22.In the embodiment illustrated in the figures, the
PP des éléments chauffants 9, comme illustré sur la figure 6.To ensure good distribution over the entire depth
of the turbine 4, the
The lateral overflow width L of the
de la turbine 4.In the embodiment of Figures 1 and 2, the
In the embodiment illustrated in FIGS. 7 to
10, the
et 121, au-dessous du moyeu 11 de la turbine 4.In this case, as illustrated in Figure 7, we can
imagine placing the distribution structure with the
selon toute la profondeur P de la turbine 4.The operation of the device of the invention is the

It can advantageously be provided that the structure

As illustrated in FIG. 1, the turbine 4 can be

The present invention is not limited to the modes of which have been explicitly described, but it includes the various variants and generalizations contained in the field of the claims below.
