Abstract

A packaging film is provided for foodstuffs, wherein the foodstuffs are preferably meat products. The a net is connected to one side of the film to increase resistance to tearing. The net is adhered to the film by a soluble edible adhesive. The film may be shaped into a container wherein the net lies predominantly on an outer side of the container. After filling the film with the foodstuff, the adhesive is dissolved, whereupon the net can be removed without destroying the film.

Description

The invention relates to a packaging film door Food, in particular for meat, sausage or Fish products, the film being suitable for consumption is and to increase the tensile strength of a network at the Foil is present.

Such packaging films have a large Field of application and provide a high-quality replacement for natural intestines. Beyond that they are but also suitable for packaging food, because of their size or shape they are not in natural casings can fill. Generally, they are for the packaging of all kinds of protein foods especially suitable, taking with the protein of the food can make a connection. in principle it can be animal or vegetable Act protein.

However, the packaging films described are not particularly tear-resistant; they must, therefore, as long as they are not familiar with the protein of the food carefully handled or be reinforced by additional measures. A widespread measure to protect the film in that one surrounds them with a net, which in capable of reducing the weight of the food and the resulting to absorb forces resulting from processing.

So one lets to the automation of the Sausage making Sausage mass, foil and net directly from a double-fill tube. In doing so result However, difficulties, especially if the film to a hose or the like is formed. So can not be reliable today ensure that the edges of the film overlap evenly and be sufficiently firmly interconnected. As a result, it comes in this area again and again to holes or cracks, in which the meat or sausage filling exits. The filling then combines by coagulation with the net and then pulling off the net becomes the filling partially torn out.

In addition, the method described, regardless of whether the protein film manually or automatically covered with a net, very expensive.

In addition, an artificial sausage casing is known from DE-A 1 217 238 has become, which has a mesh cover on the outside. This Mesh cover can be glued to the intestine acting as an inner tube be connected. To the inner tube with the net cover bring together, the inner tube at its lower end by sealed a stopper and then slipped over a blowpipe and shirred. This blowpipe is connected to a blower, so that the inner tube can be acted upon with internal pressure. The upper end of the Inner tube is guided in a large-caliber tube, which at his Outside carries a shirred netting tube that up through a stopper is closed. Inner tube and mesh tube should then simultaneously be pulled off above, whereby the inner tube due to the inner Overpressure is pressed against the outer mesh tube, so both Hoses can be glued together.

Based on this, the invention has the object, a Packaging film and a method for packaging food which are of high quality, for the packaged food Ensure good protection, accessible to automation, food in a variety of forms to allow packaging and cost In the Production or implementation are.

This object is achieved by the features of the claims 1 and 11 solved.

The fact that film and net are fixed to each other, resulting in essential Advantages of processing. For one thing, the film can no longer under the Net back and slide and consequently no wrinkles form, the Otherwise, tensions or tears may result. On the other hand, that can be Composite of foil and net much easier and without risk of cracking in bring the desired outer shapes for the food. Some Forms are even possible by the composite material for the first time, what new promotional presentation options opened. In this context, network and Of course, foil be joined together before the Foil is processed, especially before the food be filled.

In addition to the composite property is for the invention the solubility of the adhesive decisive. Thereby In general, this can be unpleasant and annoying felt net after the manufacturing, cook or Ripening process can be easily removed again because then the film is held sufficiently in shape, so that tearing is no longer to be feared.

The release of mesh and film could indeed at accurate dimensioning of the adhesive effect easy done by mechanical tearing of the network. However, it is advantageous to dissolve or decompose the Adhesive. This can be done, for example, by longer ones Contact with gases or similar chemicals respectively. For food law reasons recommends especially water as a solvent. Should In the future, however, other harmless solvents Of course, these can just as well be used.

For proper and high quality Packaging, the film should be permeable to water vapor and oxygen be. As materials come first Line those in question that deal with the foods, especially with their protein, connect. exemplary protein, starch, modified starch, Cellulose, polysaccharides or carrageenan or a mixture called these substances. Particularly suitable Polysaccharide films of pullulan, carrageenan, genue gum, Glycerin, crystalline cellulose, honey wax, alcohol, Sugar esters, bean oil, xantane gum and Water. Suitable formulations are, for example Pullulan approx. 0.21% carrageenan approx. 2.1% genue-gum about 2.1% glycerin about 1.4% Abicel RC-30 about 1.12% Honey wax approx. 0.07% alcohol approx. 4.0% water approx. 89% (moderately soluble in water) or pullulan about 8.4 % Carrageenan approx. 2.4% xantane gum approx. 1.2% Avicel approx. 1.96% sugar ester approx. 0.1% bean oil approx. 0.1% alcohol approx. 4.43% water approx. 81.4% (heavy water soluble) or pullulan approx. 0.9% Avicel approx. 2.3% Agar approx. 8.1% Genue Rubber approx. 0.45% Xantane Gum approx. 0.45% sugar ester approx. 0.04% water approx. 88% (very difficult to dissolve in water). Previous information refer to weight percent.

Preferably, water insoluble or difficult to use water-soluble film, because then the during cooling, condensation forms the film can not dissolve.

The term "net" is intended to mean any kind of material that meant essentially two demands fulfilled: First, it must be tear-resistant, to the mentioned To ensure protection of the film. Second, it should preferably be permeable to air and water vapor so that the foods in it are appropriate mature and can be stored.

The mesh is preferably coarse or fine mesh fabric, knitted or knitted fabric and consists made of natural or synthetic fibers, such as Creel, cotton, polyethylene, polypropylene and / or polyamide.

As the adhesive are particularly water-soluble Adhesives, such as modified starch and / or Collages. In addition, glues are also gelatin-based well suited, such as an adhesive with about 5% to about 30% gelatin and about 70% to about 95% glycerin or an adhesive with about 50% to about 90% alcohol and about 10 % to about 50% shellac.

The film along with its net is advantageously long connected at least some of their edges, so that a container, in the simplest case a hose, shaped. By bonding with the net, the film can not only glued along the edges but first also sewn or stapled. This allows a much more stable connection, reducing the film Numerous new applications opened up become.

Finally, the film can be aesthetic Reasons or for brand marking printed be. The writing is preferably on the inside attached, to which the film transparent or clear is. Alternatively, however, is a coloring of the entire Foil conceivable.

Concretely, one has the invention Method for packaging food with the inventive To present the film as follows: First, the foil and the net with the help of food law safe adhesive glued together. Then, in principle, there are two possibilities for further processing. Either that will Composite material, in particular by sewing, stapling or gluing, formed into a container, with openings for filling and possibly for venting be released and the network at least predominantly lies outside. Then the container filled with the food. Alternatively, the Forms of the container also directly when filling the Foods happen by wrapping them on the foil become.

After filling and after the tire or the heat treatment or at the end of the manufacturing process the film has become insoluble with the food connected and then the network can be removed again become. This is done by simply removing the Net after previous release of the adhesive. The release is done partly by the alone Condensation that adheres to the packaged food forms. In addition, offers cooking, washing dishes or showers, especially if this for further processing of the food anyway is displayed. In addition, the release of the adhesive has with the aid of a solvent, especially water, the big advantage that the film after removal of the net an aesthetically pleasing surface without adhesive residues.
