Abstract

Fish heads are moved along a transport track, passing through the mouth of the head, by a transport mechanism, which presses the head bone to the track. Cutting knives are mounted in a plane parallel to the direction of motion of the head to cut into the transport space of the head to create cuts in the direction of motion. At least one of the knives is a knife mounted below the beam which cuts the tongue from the head.
