Vorrichtung zur Durchführung von Schimmelpilzgärungen auf festen Nährböden
Es ist bekannt, daß gewisse Schimmelpilze unter bestimmten Bedingungen Citronensäure,
Gluconsäure, Fumarsäure, Oxalsäure, Fettsäureglyceride, Eiweißstoffe und andere
Stoffe erzeugen. Zahlreiche frühere Verfahren scheiterten jedoch an der Vorrichtungsfrage.
Es fehlt im Schrifttum insbesondere an Angaben, wie Schimmelpilzgärungen auf festen
Nährböden im großen durchgeführt werden sollen. Daß feste Stoffe in einem Großbetrieb,
in dem täglich viele Tonnen verarbeitet werden müssen, nicht in die bisher für flüssige
Nährböden vorgeschlagenen Schalen gefüllt und aus denselben wieder ausgeladen werden
können, ist für den wirtschaftlich denkenden Fachmann selbstverständlich.Device for carrying out mold fermentation on solid nutrient media

Den Gegenstand der vorliegenden Erfindung bildet eine der Großoberflächenzüchtu:ng
angepaßte, einfache, übersichtliche und in allen Teilen leicht zugängliche Vorrichtung,
welche die Züchtung der Schimmelpilze im Großbetrieb auf festen Nährböden erlaubt.
Sie besteht, wie die beiliegende Zeichnung zeigt, aus zwei parallelen endlosen Bändern
2o, 21, welche auf einem Gerüst angeordnet sind und über Rollen 22 o. dgl. synchron
bewegt werden können. Die Bänder werden vorzugsweise aus metallenem Stäbchengitterwerk
o.,dgl. angefertigt. Der Abstand zwischen den beiden Bändern2o und 21 wird der Eigenart
des festen Nährbodens angepaßt und beträgt im allgemeinen 5 bis io cm. Die Größe
der Öffnungen des Gitterwerks wird der Korngröße .des festen Nährbodens angepaßt.
Die ganze Vorrichtung wird in geschlossenen, sterilisierbaren Zuchträumen untergebracht,
die gleich mehrere Vorrichtungen aufnehmen können. Die Beschickung geschieht .so,
daß der Nährboden in einen Trichter 23 gefördert wird, aus dem er in den Raum 2q.
zwischen- den beiden Bändern 2o und 21 fällt und von den über Rollen 22 sich bewegenden
Bändern mitgenommen wird. Sobald der Nährboden den ganzen Raum zwischen den beiden
Bändern gefüllt hat, was durch Beobachtung von außen festgestellt werden kann, wird
die Bewegung der Bänder abgestellt. Soll die Vorrichtung entleert werden, so werden
die Bänder in Bewegung gesetzt, wodurch die Masse auf ein Förderband 25, 26 fällt
und davon mitgenommen wird. Die an den Bändern haftende Masse wird durch zweckmäßig
angeordnete Abstreifer 27 zurückgehalten. Die Bänder, insbesondere Gitterwerkbänder,erlauben
einen vollkommen freien Luftzutritt zu der zu vergärenden Masse. Die Temperierung
der zu dünner Schicht ausgebreiteten Masse ist mit Hilfe eines temperierten Luftstromes
leicht durchführbar. Infolge der intensiven Luftberührung wird die Entwicklung und
Gärleistung der Schimmelpilze gefördert, so daß dickere Schichten als sonst, z.
B. bei Ausbreitung auf einer Tenne, angewandt werden können. Es
ist
durch diese Vorrichtung möglich, die ganze Ladung der Bänder mechanisch in eine
Mischvorrichtung zu befördern, darin gegebenenfalls mit Zusätzen durchzumischen
und dann wieder auf die Bänder zu schichten. Beispiel Kartoffelpülpe wird sterilisiert,
die Temperatur auf das Optimum eingestellt und mit einer Schimmelpilzzucht besät.
Die Masse wird gutdurchgemischt und auf die beschriebene Vorrichtung geschichtet.
Der Zuchtraum wird finit einem temperierten Luftstrom belüftet und temperiert, z.
B. 28 bis 32° C. Die Vergärung ist in wenigen Tagen beendet, bedeutend schneller
als bei den bekannten flüssigen Nährböden, da Schimmelpilze feste Nährböden bevorzugen.
Die Vergärung kann weiter beschleunigt werden, indem man die Masse in eine Mischvorrichtung
leitet, dort gut durchmischt und dann wieder auf die Bänder schichtet. Gegebenenfalls
kann in der Mischvorrichtung noch vergärbarer Stoff, auch Würze, zugesetzt werden,
da die schwammige Pilzhaut noch Flüssigkeit aufnehmen kann. Nach beendeter Vergärung
wird das Gärprodukt durch Auslaugen usw. entfernt. Der Rest ist reich an Eiweiß
und kann als Kraftfuttermittel verwendet werden. Ähnlich erfolgt die Verarbeitung
