Im Nachstehenden wird ein Apparat zur Herstellung von Champagner und anderen
moussirenden Getränken durch Gährung beschrieben. Mittels dieses Apparates gelingt es,
den Champagner auch in kleineren Mengen zu erhalten, so dafs jede, selbst die kleinste Weinhandlung,
ihren Bedarf an Champagner selbst decken kann. Der Apparat ermöglicht es, in
jedem Lande, wo die Champagnerfabrikation bisher noch nicht Platz gegriffen hat, Sekt
herzustellen und dadurch den hohen Einfuhrzoll zu sparen.The following is an apparatus for making champagne and others

Zur Herstellung von Champagner wird der Wein in das genannte Fafs gefüllt, und wenn

wird dadurch erhalten, dafs man Rosinen in einem Mörser zerquetscht, leichten gezuckerten
Wein darauf giefst und diese Mischung einige Tage in leicht verpfropftem Zustande einer
Temperatur von ca. 25° C. aussetzt. Am dritten Tage sind lebendige Hefezellen gebildet.
Die Temperatur des Raumes, in welchem das Fafs steht, soll zur Gährung eine Temperatur von ca. 22 ° C. besitzen. Nachdem
der zur Herstellung des Champagners dienende Wein in das Fafs eingefüllt, das
Ferment im Bedarfsfalle zugefügt und der Apparat geschlossen ist, wird die in dem
Mantel befindliche atmosphärische Luft durch Kohlensäure verdrängt. Dies geschieht dadurch
, dafs der Hahn c durch ein Rohr mit dem weiter unten erwähnten Expansionsgefäfs
in Verbindung gebracht wird, während der Hahn b geöffnet ist. Sofort nach der Einführung
beginnt die Gährung und nach circa 14 bis 21 Tagen ist dieselbe beendet. Die
Hefentheile setzen sich zu Boden. Die konische Form des Fasses hat den Zweck, das Anhaften
der Hefe an den Wandungen zu verhindern. Durch einen kleinen Zusatz von Tannin und
nöthigenfalls von Alaun kann der Hefe eine pulverige und nicht häutige Form gegeben
werden, die ein schnelleres Ansetzen bewirkt. Nach beendeter Gährung wird der klare
moussirende Wrein durch das mit Ablafshahn a
versehene Rohr, welches von-Edelmetall hergestellt ist und etwas über dem Boden des
Fasses mündet, in die vorher mit Liqueur beschickte Flasche gefüllt, während die Hefe bis
zur Leerung des Apparates am Boden des Fasses liegen bleibt. Beim Abziehen, das genau wie bei Mineralwässern geschieht, wird
