Abstract

In the area of the support conveyor 5 , a stripping tool 20 is provided, consisting of a pair of clamping elements 21 , which form a clamping gap 22 between them, into which the comb 11 of the breastbone 10 enters as the conveyance progresses. In order to enable the stripped meat to be released, the clamping elements 21 are installed in a manner that is not shown, so that they can be pivoted out of the way of the holders 2 in opposite directions.

The mode of operation of the device is described below by following a poultry body shown in FIG. 1 for the sake of clarity without meat topping through the device. The poultry body is held securely by clamping the part 14 of the sternum plate 12 located in front of the comb 11 of the sternum 10 and between the attachment points of the raven legs 13 by clamping between the fixed and movable part of the holder 2 . The crest 11 of the breastbone 10 is held in that the spikes of the driver elements 9 capture the trailing, cartilaged part 18 of the breastbone 10 while penetrating into it, while the support elements 8 are supported on the ossified part 19 with the centering between them. The respective leading support elements 8 engage directly behind the bulge in the area of the front edge of the breastbone 10 .

The clamping force is generated by support curves, not shown, which guide the work of the support conveyor 5 and can be arranged to be displaceable outwards against spring force.

In this way, the crest 11 of the sternum 10 is held continuously so that the machining forces occurring in this part of the device are prevented from the skeleton. The processing is expediently carried out in such a way that the meat is first pushed off from the leading wing joints 16 and the fork leg 17 up to the front edge of the breastbone 10 with a retaining tool, not shown, shortly before the retaining tool is reached. Claims (2)

1.
