Abstract
Die Erfindung betrifft ein Verfahren zur Herstellung von Rohmasse aus Mandeln oder anderen Samenkernen im industriellen Massstab. Ziel der Erfindung ist es, eine qualitaetsgerechte Rohmasse aus Mandeln oder anderen Samenkernen mit hoher Produktivitaet und geringem Energieeinsatz herzustellen. Aufgabe der Erfindung ist es, die Rohmasse durch intensive Zerkleinerung der geschaelten Mandeln sowie Einstellen der Endfeuchte im wesentlichen durch Zugabe von Zuckerloesung und ggf. Wasser herzustellen. Erfindungsgemaess wird die Aufgabe dadurch geloest, dass die Samen mit der Zuckerloesung gemischt und in einem Schneidmischer zerkleinert werden.The invention relates to a process for the production of raw material from almonds or other seeds on an industrial scale. Description
Die Erfindung betrifft ein Verfahren zur Herstellung von Rohmasse aus Mandeln oder anderen Samenkernen im industriellen Maßstab.The invention relates to a process for the production of raw material from almonds or other seeds on an industrial scale.
Die traditionelle Herstellung von Rohmasse aus Mandeln besteht aus folgenden Verfahrensschritten: Reinigen der Mandeln von fremden Beimengungen, Klassieren nach Größe, falls erhebliche Größenunterschiede der Kerne vorhanden sind, Brühen der Mandeln in siedendem Wasser 5 bis 7min, Schälen der Mandeln in Walzenstühlen mit Gummiwalzen, Entfernen der Netzfeuchte von der Oberfläche der Mandeln, Verlesen oder Farbsortierung zur Entfernung ungeschälter oder farbabweichender Kerne, Mischen der mit Wasser gesättigten geschälten Mandelkerne (18... 20% Feuchte) mit Zucker (35% Saccharose auf 65% Kerngut), Zerkleinern des Gemisches auf Dreiwalzwerk mit Granitwalzen in eine homogene, feinzerriebene flockige, wasserhaltige Paste, Rösten bei 90...950C für die Dauer von 15...20min zur Senkung des Wassergehaltes von etwa 25% auf etwa 18% sowie zur Aromabeeinflussung und Sterilisation, Kühlen der Masse auf etwa 30°C, Verpacken (Autorenkollektiv, Technologie der Zuckerwaren, VEB Fachbuchverlag Leipzig 1977, S. 153-159). Dieses Verfahren ist durch das Zerkleinern des Gemisches auf Dreiwalzwerk-Anlagen technisch aufwendig, besitzt eine niedrige Stundenleistung und ist kontaminationsgefährdet. Das abschließende Rösten ist energieaufwendig, da dieser Prozeß zugleich der Einstellung des Endwassergehaltes von 17 bzw. 18% Sollwert dient, wobei eine Feuchtereduzierung je nach Ausgangsfeuchte der Mandeln bis zu etwa 8% erforderlich ist. Ferner ist das Rösten in Verbindung mit der Endwassergehaltseinstellung mit größeren technologischen Unsicherheiten verbunden, da eine schnelle und repräsentative Wassergehaltsbestimmung der Rohmasse bisher nicht realisiert werden konnte und größere Abweichungen auftreten können, die bei Wasserüberschuß eine Nachröstung erfordern. Eine Unterröstung führt zu ungenügender Entfeuchtung der Rohmasse, so daß eintretender mikrobieller Verderb und hohe Verluste die Folge sind. Eine Überröstung führt zur Zerstörung der Wasser-Öl-Emulsion, die die Masse ölig und brüchig und damit zur Weiterverarbeitung ungeeignet macht. Die Beurteilung des Röstgrades erfolgt mangels verfügbarer Meßsonden sensorisch und beinhaltet größere Abweichungen vom Sollwert. Nach DE-AS1932 838 werden geschälte Mandeln mit 12% Feuchtigkeit unter geringem Wasserzusatz traditionell gemahlen. Der Brei wird unter Zugabe von Zuckersirup durchmischt sowie im geschlossenen Gefäß erhitzt und abgekühlt. Durch das Kurzbrühen der Mandeln wird mit vorzugsweise 5 bis 8% Feuchtigkeit ein so geringer Ausgangsfeuchtigkeitswert der Mandeln eingestellt, daß es möglich ist, die Endfeuchte im wesentlichen allein durch exakt dosierte Zugabe von Zuckerlösung bzw. Wasser einzustellen. Es wurde gefunden, daß sich diese trockenen Mandeln in der Zuckerlösung gut, d. h. ohne unzulässigen Ölaustritt, in einem Schneidmischer intensiv zerkleinern lassen. Chargenweise werden durch genaue Dosierung 50kg der geschälten Mandeln mit einer Feuchte von 5% mit 43,5kg Zuckersirup, bestehend aus 9kg Wasser, 25kg Saccharose und 9,5kg Invertzucker von einer Temperatur um etwa 110°C miteinander vermischt und danach mit einem Schneidmischer intensiv in 5 Minuten auf Endfeinheit zerkleinert. Nach 4 Minuten des Zerkleinerungsprozesses wird das Restwasser von 6kg bei Temperaturen zwischen 90 bis 1000C zugegeben, wodurch eine Endfeuchte der Rohmasse von 17,6% genau eingestellt wird. Anschließend wird noch eine Minute bis zur Endfeinheit zerkleinert.
