Ziel der Erfindung ist ein Verfahren zur Herstellung eines Geliermittelkonzentrates, welches eine hohe Material- und Energieoekonomie ermoeglicht, in dem unter Ausschluss der Trocknung der Pektinrohstoffe mittels Extraktion neben den Pektinstoffen auch Zuckerstoffe und Genusssaeuren gewonnen werden und unter Nutzung der Hydrolysesaeure ein qualitativ hochwertiges Pektinprodukt hergestellt wird.
