背景技术
科学合理的饮食对于我们的健康至关重要,但是在日常的生活中往往存在饮食不均衡、能量摄入过多等问题。而且,现代食品常以精加工、高热量为主,低纤维、低钙质、高糖高盐类食品成为大多数人主要摄入的食物。长此以往就会引发种种健康问题,例如肥胖、高血脂血糖、消化不良、容易疲劳等。通过减少日常饮食中高热量食品的摄入,以纯天然营养粉作为替代辅食,可以改善营养结构,使人体摄入的营养更加全面,提高免疫机能。尤其对高血脂、高血压、肥胖人群效果明显。
现有技术对营养粉有诸多报道,例如:中国专利CN104026573A公开了一种发芽糯糙米大豆复合营养粉及其制作方法,包括以下步骤:将糯糙米洗净后先于水中浸泡,然后将糯糙米放入恒温水培液中浸泡发芽,取出经灭酶、烘干、除根、粉碎制成发芽糯糙米粉,再与大豆粉、甘草粉、安赛蜜和植脂末混合均匀,烘烤、冷却后包装,本发明的复合营养粉营养价值高,感官优良、冲调性好。中国专利CN105010976A公开了一种减肥降糖营养粉及其制备方法,包括以下步骤:将青稞经过筛选、清洗后甩干,再进行干燥,粉粹成青稞全粉;将燕麦麸皮清洗干净后粉粹、过筛成燕麦麸皮超微粉;将干燥的桑叶、荷叶、苦瓜分别进行加温浸提,提取后获得的浸提液过滤后浓缩,喷雾干燥,即分别得到桑叶浸提物、荷叶浸提物、苦瓜浸提物的粉末;将燕麦麸皮超微粉、桑叶浸提物、荷叶浸提物、苦瓜浸提物,以及魔芋精粉、木糖醇充分混合均匀;再加入青稞全粉混合均匀,即得,本发明的该营养粉冲调性和口感性好,不仅可以直接冲调食用,还可以添加到传统食品中制作面包、面条等主食。
发明内容
针对上述现有技术中存在的不足,本发明旨在提供一种营养复合粉的配方及制作工艺,通过各原料的合理搭配及科学配比,在保证营养全面、利于吸收的同时,使营养复合粉的感官品质也得到改善,使得口感醇香、冲调方便。
一种营养复合粉,包括以下原料:青稞粉、藜麦粉、山药粉、银耳粉、黑豆粉、花生粉、核桃粉。
优选的,一种营养复合粉,包括以下重量份原料组成:
25-35重量份青稞粉、25-35重量份藜麦粉、15-25重量份山药粉、5-15重量份银耳粉、5-15重量份黑豆粉、3-6重量份花生粉、3-6重量份核桃粉与5-7重量份营养物缓释颗粒。
青稞作为一种谷类作物,具有低脂肪、低糖和高蛋白、高纤维、高维生素的优点,是高糖高脂人群的友好食物。青稞中维生素及钙、磷、铁、铜、锌、锰、硒等微量元素含量普遍高于一般的农作物。青稞中富含β-葡聚糖,具有降血糖血脂、降胆固醇、调节免疫及抗感染等功效,还能改善肠道功能、控制饱腹感,在提供人体所需营养的同时,减少代谢负担。此外,青稞中也含有阿魏酸、异阿魏酸、香草酸、香豆酸等酚类、黄酮类、γ-氨基丁酸等天然活性成分,能够起到清除自由基、抗氧化等作用。藜麦具有非常全面的营养组成,其自身就可以基本满足人体的营养所需。作为全谷类蛋白碱性食物,藜麦的蛋白含量与牛肉相当,高达20%左右,而且蛋白品质也与奶类及肉类相当,不仅包含人体必需的九种氨基酸,而且含有多数农作物所没有的赖氨酸,以及对人体有益的矿物质及维生素、多酚、皂苷、类黄酮类和植物甾醇类活性物质。此外,藜麦中不含胆固醇且糖、脂肪的含量相对较低,是一种低糖低脂类健康食物。

1.2、将山药清洗、去皮后切片,厚度为0.5-2cm,在100℃下隔水蒸制50-70min,结束后冷却;最后冷冻干燥,粉碎过100-300目网筛,得到山药粉;

本发明在营养复合粉中加入了由辣木籽、桑叶、黄精制备而成的营养物缓释颗粒,通过加入玉米淀粉及麦芽糊精作为载体和填充剂,经湿法制粒得到颗粒,而其中加入的α-淀粉酶在加水制粒过程中遇水后活化,通过酶解作用使载体玉米淀粉部分水解形成一定数量的微孔通道结构,从而使颗粒具有缓释作用。因此,在食用后不会立刻被肠胃吸收,而是随时间延缓均匀地释放出其中的辣木籽提取物、桑叶提取物、黄精提取物、番茄红素及虾青素等活性营养物再被有效补充吸收,避免浪费,更利于发挥活性营养物的作用。
所述营养物缓释颗粒的制备方法为:

本发明同时含有辣木籽提取物、桑叶提取物和黄精提取物,相互之间形成配合,能够更好的发挥保健功效。其中,辣木籽含有黄酮类、皂苷类、多酚类、多糖类等活性物质,具有抗氧化、抗癌、保肝和降糖等作用。桑叶含有黄酮类、植物甾醇、γ-氨基丁酸、槲皮素等活性物质,具有抗氧化、降脂降压、抗菌抗炎、润肠排毒等作用。黄精含有多糖类、皂苷类、黄酮类、胡萝卜素、二氨基丁酸等活性物质,具有抗氧化、抗衰老、降糖降脂、保护心血管等作用。此外,少量补充的两种抗氧化活性物番茄红素和虾青素,可以辅助上述提取物发挥作用,也能作为保护剂防止上述提取物在加工、储存及使用过程中受到环境影响破坏活性。
优选的,所述营养物缓释颗粒的制备方法为:
S1、将晾干的辣木籽、桑叶、黄精置于80-90℃下烘干7-12h,取出后分别粉碎过60-100目网筛,然后按照固液比1kg:3-6L分别加入到60-70wt%乙醇水溶液中混合均匀,在70-80℃下超声提取1-3h,过滤收集滤液,重复提取2-5次,将收集的滤液减压浓缩、冷冻干燥,分别得到辣木籽提取物、桑叶提取物、黄精提取物;
S2、取10-30重量份辣木籽提取物、10-20重量份桑叶提取物、10-20重量份黄精提取物、1-3重量份番茄红素、2-5重量份虾青素与3-6重量份麦芽糊精加入球磨机中球磨10-30min,球磨速率100-200rpm,得到混合营养物;然后再加入1-3重量份α-淀粉酶与25-30重量份玉米淀粉混合均匀,最后加水制粒,流化干燥后过50-100目网筛,得到所述营养物缓释颗粒。

测试例1
抗疲劳测试:选择40只体重相近的同龄小鼠,随机平分为2组,其中1组正常喂食饲料作为对照组。剩余1组在喂食饲料的基础上每天早晚各喂食1次上述实施例3得到的营养复合粉(20g/次)作为试验组,试验周期为30天,在相同水温下做游泳耐力实验。
游泳耐力实验的结果为:试验组的小鼠平均游泳持续时间为52.5min,对照组的小鼠平均游泳持续时间为23.0min。可见,本发明得到的营养复合粉能够有效提升小鼠的抗疲劳能力。这可能是因为本发明采用玉米淀粉及麦芽糊精作为载体和填充剂经湿法制粒得到营养物缓释颗粒,在食用后会随时间延缓均匀地释放出其中的辣木籽提取物、桑叶提取物、黄精提取物、番茄红素及虾青素等活性营养物再被小鼠机体有效补充吸收,避免浪费,提高了吸收利用率,更利于发挥活性营养物的作用。
测试例2
稳定性测试:将上述实施例得到的营养复合粉密封保存180天后进行测试,环境温度25℃、相对湿度65%。取等量营养复合粉配制成浓度相同的乳状液,以500rpm离心20min,在距离底部1cm处取样测定吸光度A500nm。稳定系数=A1/A0×100%,其中A0为离心前吸光度;A1为离心后吸光度。平行5组,取平均值。

从上述结果可知,实施例1-3的营养复合粉稳定性高于实施7,这可能是因为采用营养物缓释颗粒在起到缓释作用的同时,还可以对其中的活性物起到有效的保护作用,从而使营养复合粉的性能更加稳定,能保持较长时间的营养活性和感官品质。
测试例3
抗氧性测试:将上述实施例得到的营养复合粉分别配制成1wt%的样品溶液,备用。将DPPH配制成0.15mg/mL的DPPH乙醇溶液,备用。在10mL比色管中依次加入4mL的DPPH乙醇溶液和4mL的样品溶液,用无水乙醇补至10mL,混匀立即测定吸光度A517nm,记为Ax,再置于室温避光保存30min后测定吸光度A517nm,记为Ay,对照样为只加DPPH乙醇溶液测定吸光度A517nm,记为Az。自由基清除率=[1-(Ax-Ay)/Az]×100%。平行5组,取平均值。

从上述结果可知,相比于实施例4-6,实施例3的营养复合粉同时含有辣木籽提取物、桑叶提取物和黄精提取物,相互之间形成配合,能够更好的发挥抗氧化性能。其中,辣木籽含有黄酮类、皂苷类、多酚类活性物质,桑叶含有黄酮类、植物甾醇、槲皮素等活性物质,黄精含有皂苷类、黄酮类、胡萝卜素等活性物质,这些具有抗氧化活性的提取物在联合使用时能发挥协同功效,使营养复合粉的自由基清除能力显著提升。
