The combined kit of the warming and insulating box designed by the invention can realize different functions in different combinations. If the first box cover 1 and the short box body are combined into the food heat-preservation storage and transportation box, the food heat-preservation storage and transportation box can be used for heat preservation, storage and distribution of food; the temperature of the food is not lower than 65 ℃ after the hot food (more than 80 ℃) is held for 2 to 3 hours at the ambient temperature of-50 ℃ to-40 ℃, and the temperature of the food is not higher than 10 ℃ after the cold food (less than 4 ℃) is held for 3 to 5 hours at the ambient temperature of 40 ℃ to 50 ℃. If the second box cover 2 and the tall and short box bodies are combined into the food warming and heat preserving box, the food warming and heat preserving box can be used for warming and heat preserving hot food; when the temperature in the box body for containing hot food is lower than a low temperature threshold value, such as 70 ℃, the heating and warming functions are automatically started, and when the temperature reaches a high temperature threshold value, such as 75 ℃, the heating is stopped, so that the temperature in the box body is always at the food safety temperature. The power supply voltage AC220V is not more than 600W. If the first box cover 1 used by the current box is damaged in the using process, the first box cover 1 can be replaced by a new first box cover 1, and the second box cover 2 can also be replaced. The hot food is placed in the box formed by combining the warming and heat preserving box combined kit designed by the invention, so that the staple food and the dish can be kept at edible temperature during long-time transportation and storage, the problem of aging and retrogradation of starch in the food due to cooling is solved, the requirements of heat preservation, storage and transportation of the food can be met, the technical problems that the refrigerated food is difficult to heat in a large scale and the like can be solved, and heavy manual workers can be supplied to eat at the same time in a large scale.
The combined kit of the warming and insulating box designed by the invention is verified by a plurality of experiments:
(1) from the temperature curve, the natural cooling speed is higher, and the temperature can be reduced to below 60 ℃ within 20 minutes; the first box cover is used, the heat preservation effect is good within 8 hours, and the temperature can be basically maintained above 60 ℃; the second box cover has good heat preservation effect and can maintain the temperature of dishes within the range of 70-75 ℃; meets the pasteurization condition.
(2) From the sensory indexes and nutrient indexes, different preservation modes of the dish comprise refrigeration, normal-temperature storage, heat preservation and warming storage, the influence on the pH value, the amino acid content and the fatty acid content of the dish is small, and the influence on the color difference, the texture and the vitamin B1 is large. The temperature-increasing and heat-preserving box combined set is used for combining a box, so that the hardness of dishes and the content of vitamin B1 are reduced.
(3) From the safety index, different dishes are treated at a constant temperature of 0-4 ℃, so that the accumulation of the content of the nitrite can be effectively reduced, and the nitrite is slowly accelerated in 6 hours of heat preservation storage and temperature rise storage. The low temperature treatment can effectively delay the growth of microorganisms. The heat preservation and the temperature increase treatment can effectively kill the microorganisms in the dishes.
(4) From the sensory evaluation, the optimal storage method and storage time of different dishes are respectively given after a large amount of data are analyzed. The heat preservation storage time is generally suitable within 4 hours, and the temperature-increasing storage time is generally suitable from 4 to 6 hours.
The invention can be used in various occasions, such as food is fed in front, the food is put into the box body after being cooked, the food is fed from the back to the front, and the second box cover is selected and heated when the time consumption is long during the passing. Such as supplying different batches of people to eat at home, factory, etc., loading the cooked food into the box, using the first cover for a short time, and using the second cover and heating for a longer time or for multiple batches. And (4) closing the box cover after different batches of people respectively take out the food according to the requirements. Because the interior of the box is always kept at a higher temperature, harmful microorganisms are not easy to survive, and the food is safer.
When in use:
(1) selecting different box covers and box bodies according to needs, selecting a second box cover when heating is needed, selecting a first box cover for heat preservation, and selecting different box bodies according to the number of users;
(2) opening a butterfly lock catch on the box cover and opening a plug;
(3) taking out all 1/2 stainless steel portions boxes in the box body, putting a plurality of foods into the 1/2 stainless steel portions box, tightly closing the portions box cover, and putting all 1/2 stainless steel portions boxes in the box body;
(4) covering the box cover;
(5) then all the butterfly latches are fastened, and if long-time heat preservation is needed, the vent valve is blocked by using a plug;
(6) printing a two-dimensional code card according to food in the box, placing the two-dimensional code card at a specified position or generating an electronic two-dimensional code, and transmitting the electronic two-dimensional code to a display screen for display;
(7) if the temperature in the box needs to be heated, the temperature is set in the temperature control module and the temperature control module is connected with a power supply;
(8) storage or transportation;
(9) if the box cover or the box body has faults and the number of the devices is enough, the same parts are replaced; if the quantity of the equipment is insufficient, the currently owned parts are used for replacement, such as a first box cover is used for replacing a second box cover, and such as two short box bodies are used for replacing a high box body.
The combined kit of the warming and insulating box designed by the invention has the advantages of large capacity, light weight, advanced technology, complete functions, reliable performance, safe use, convenient operation, good matching performance with other equipment, strong man-machine engineering and environmental adaptability, realizes multiple functions by replacing the box cover, effectively solves the problems of storage and transportation, turnover and distribution of food raw material ingredients and heat insulation, forward delivery and distribution of hot food finished products, can keep the temperature in the box constant, and can meet the requirements of heat insulation, storage and transportation of food.
