本发明涉及一种党参陈皮复合饮料,其每500ml饮料含有下述重量份的原料:党参30~50g;陈皮5~20g;青柠2~6g;糖料5~15g;复配增稠剂0.05~0.20g;酸味剂0.1~0.3g;处理水余量。本发明党参复合饮料以党参、陈皮作为主要原料,党参有补中益气,健脾益肺之功效;陈皮亦有补中益气之功效;同时添加青柠汁掩盖党参的土腥味,使得产品清新爽口,可满足现代消费者的多重需求。该款饮料颜色呈淡黄色且体系呈浑浊偏澄清状态,该款饮料营养均衡,多糖含量丰富(>8.793±0.213g/100g),是一款集健康营养为一体的新口味复合饮料。
Description
技术领域
本发明属于保健食品以及食品加工制造技术领域,尤其是一种党参陈皮饮料及其制备 方法。
背景技术
党参在我国历史悠久,是一种非常常用的药物。中国人自古以来就用热水煎熬并食用 它来治疗胃酸过多,脾虚腹泻和其他疾病。当归是补气养血的良药,尤其是补肺气,治疗 肺虚证。此外,肢体虚弱,食欲不振,容易感冒的人也适合服用当神。可以看出党参在增强人体成分和抵抗力方面非常有效。目前,市场上党参的流通方式主要是原材料,不如 其他农作物那么丰富。基本的处理方式是日晒。因此,党参的综合开发研究还很薄弱,加 工方式相对单一。例如,党参片,党参蜜饯和党参茶是非常简单的产品,它们的附加值通 常很低,不能为人们提供方便的使用,也不能更好地吸收党参的营养成分。因此,有必要 大力发展党参的深加工,全面开发利用党参,以提高党参的附加值。
陈皮,也称为柑橘柚,最初记载于《神农本草经》。它是芸香科橙的成熟果皮及其干燥和放陈后的栽培品种。由于产地和品种的不同,旧果皮可分为桔皮和广芝果皮两种,这是桔皮的一种。根据《本草纲目》,进入脾和肺经脉的橘皮可以治疗恶心,呕吐,咳嗽, 便秘,乳腺癌和其他女性疾病。当神性质温和,橘皮性质温暖。两者均具有补气的作用, 并且适合于色彩组合。
中国有五千年的中医药文化,使用具有医学和食品同源性的天然植物来治疗和预防疾 病特别有利。长期积累的中医药知识不仅为人们预防和治疗疾病积累了丰富而宝贵的经 验,而且为维护人的健康提供了许多先知。
通过检索,发现如下几篇与本发明申请相关的专利公开文献:
1、一种党参粉复方固体饮料及其制备方法(CNI08208510A),该专利公开了一种党参粉复方固体饮料及其制备方法,包括按照重量份数比配伍的下料原料:党参粉20~30份,山药粉50~55份,益智仁粉5~10份。该发明将党参、山药和益智仁经烘干、灭菌、 粉碎成120~400目细粉、过筛、混匀,包装。也可以优先采用超低温冷冻干燥技术制取 的党参粉、山药粉、益智仁粉。此外本发明一种党参复合固体饮料及其制备方法,工艺简 单,疗效显著,且对人安全、无毒、有效。
2、一种党参保健饮料(CN106509562A),该专利公开了一种党参保健饮料,每500ml饮料含有下述重量份的原料:党参18~23份、白砂糖3~5份、悬浮剂0.10~0.13份、甜赛糖0.03~0.05份、柠檬酸0.16~0.20份、山梨酸钾0.02~0.04份、柠檬酸钠0.02~0.04份、糊精 0.01~0.03份、食用香精0.03~0.05份、护色剂0.05~0.07份,余量为纯净水。该发明的目 的提供一种具有理气解郁,舒缓神经,可以促进人体健康,增强人体免疫力的党参保健饮料, 具体地说是一种党参保健饮料及其制备方法。
3、党参保健饮料(CN102524891A),该专利公开了党参保健饮料,,其特征在于,所述配方为每党参保健饮料中含有鲜党参20~100份或党参药材5~30份,山楂鲜果20~100份或山楂干果5~30份,桂花5~15份,枸杞鲜果0~100份或枸杞干果0~25份。肌醇0.1~0.8 份,牛磺酸0.1~0.8份,柠檬酸0~20份,蔗糖0~25份,蜂蜜0~30份。余量为纯净水。该发明提供了一种以党参、山楂为主要原料,辅以枸杞和桂花,制备成的具有多重保健功能及辅助治疗作用的保健饮料。
通过对比,虽然均为党参产品,但第一个专利是党参固体粉进行食用,本发明属于党 参复合饮料发明领域,尤其是一种党参复合饮料及其制备方法,食用更加简单有效,不必 进行冲泡等繁琐的工作,有本质区别;第二个专利虽然党参保健饮料,但产品属性不同,且并无其他与之复配的植物,故产品功能特性存在本质差异;第三个专利党参保健饮料,与党参复配的其他重要成分并无补气功效且成分繁多成本较高。本发明党参复合饮料以党参和陈皮作为主要成分,党参有着丰富的营养价值,但研发的产品较单调,本发明产品将党参作为主原料,利用陈皮补气的功能使之作用更强大,同时利用青柠汁掩盖党参的土腥味,在生产过程中不添加任何香精,同时又赋予甜度,从营养和视觉上都紧紧抓住消费者。
故通过对比,本发明专利申请与上述专利公开文献存在本质不同。
发明内容
本发明的目的在于克服现有技术的不足之处,以党参和陈皮作为主要成分,青柠增香; 提供一种满足现代消费人群的多重需求的党参陈皮复合饮料及其制备方法,该饮料富含多 种营养成分和饱满的视觉感,该制备方法操作方便、简单,原料成本低廉,可以工业化生 产。
本发明解决其技术问题是采取以下技术方案实现的:
一种党参陈皮复合饮料,其每500ml饮料含有下述重量份的原料:
一种如上所述的党参复合饮料的制备方法,步骤如下:
(1)党参浸提液:挑选,清洗,烘干,将干党参研磨后过6~60目筛得到党参粉,然后加水至料液比1∶20~30,调节pH,加入纤维素酶,恒温酶解2~3小时,沸水浴灭酶活性, 离心去上清液,最后过400~1000目滤布过滤得滤液,即得党参浸提液;
(2)陈皮浸提液:挑选,清洗,烘干,加水至料液比1∶20~30,调节pH,恒温浸提1~2小时,离心去上清液最后过400~1000目滤布过滤得滤液,即得陈皮浸提液;
(3)溶胶:将稳定增稠剂和糖料混合后,加入适量处理水,溶胶的水量和胶质量比为200∶1, 于70℃~80℃下不停搅拌使其充分溶解,得胶液;
(4)调配:将党参浸提液、陈皮浸提液、青柠汁、酸味剂和胶液混合搅拌均匀,用余下 的处理水定容至饮料总体积,得混合液;
(5)杀菌:将党参复合饮料初品于85~100℃中加热处理8~10min;
(6)灌装:将热处理的物料,趁热灌装密封,然后冷却检验,颜色透亮,无沉淀,即得党参复合饮料。
本发明的优点和积极效果是:
1、本发明党参陈皮复合饮料将党参和陈皮作为主要特色成分,不添加任何色素和香 精,极大保留党参的有效成分,与陈皮相作用达到补中益气的疗效;并且用青柠汁掩盖党 参的土腥味的同时赋予了其动态的外观吸引力,可满足现代消费人群的多重需求;该款饮 料营养丰富,方便饮用、携带,是一款集健康营养和美观为一体的新口味复合饮料。
2、本发明的党参浸提液的提取方法充分保留了党参多糖的含量,成品中多糖含量丰 富,未造成营养的过度流失。
3、本发明饮料的制备方法操作方便、简单,原料成本低廉,可以工业化生产。

下面结合实施例,对本发明进一步说明;下述实施例是说明性的,不是限定性的,不 能以下述实施例来限定本发明的保护范围。
本发明中所使用的原料,如无特殊说明,均为常规的市售产品;本发明中所使用的方 法,如无特殊说明,均为本领域的常规方法。
实施例1
一种党参陈皮复合饮料,其每500ml饮料含有下述重量份的原料:
上述的党参复合饮料饮料的制备方法,步骤如下:
(1)党参浸提液:挑选,清洗,烘干,将干党参研磨后过60目筛得到党参粉,然后加水 至料液比1∶20,调节pH,加入纤维素酶,恒温酶解3小时,沸水浴灭酶活性,离心去上 清液,最后过400目滤布过滤得滤液,即得党参浸提液;
(2)陈皮浸提液:挑选,清洗,烘干,加水至料液比1∶30,调节pH,恒温浸提2小时,离心去上清液最后过400目滤布过滤得滤液,即得陈皮浸提液;
(3)溶胶:将稳定增稠剂和糖料混合后,加入适量处理水,溶胶的水量和胶质量比为200∶1, 于70℃下不停搅拌使其充分溶解,得胶液;
(4)调配:将党参浸提液、陈皮浸提液、青柠汁、酸味剂和胶液混合搅拌均匀,用余下 的处理水定容至饮料总体积,得混合液;
(5)杀菌:将党参复合饮料于100℃中加热处理8min;
(6)灌装:将热处理的物料,趁热灌装密封,然后冷却检验,颜色透亮,无沉淀,即得党参复合饮料,颜色呈淡黄色,多糖含量为8.897±0.143g/100g。
实施例2
一种党参陈皮复合饮料,其每500ml饮料含有下述重量份的原料:
上述的党参复合饮料饮料的制备方法,步骤如下:
(1)党参浸提液::挑选,清洗,烘干,将干党参研磨后过60目筛得到党参粉,然后加水至料液比1∶25,调节pH,加入纤维素酶,恒温酶解3小时,沸水浴灭酶活性,离心去 上清液,最后过400目滤布过滤得滤液,即得党参浸提液;
(2)陈皮浸提液:挑选,清洗,烘干,加水至料液比1∶20,调节pH,恒温浸提2小时,离心去上清液最后过400目滤布过滤得滤液,即得陈皮浸提液;
(3)溶胶:将稳定增稠剂和糖料混合后,加入适量处理水,溶胶的水量和胶质量比为200∶1, 于70℃下不停搅拌使其充分溶解,得胶液;
(4)调配:将党参浸提液、陈皮浸提液、青柠汁、酸味剂和胶液混合搅拌均匀,用余下 的处理水定容至饮料总体积,得混合液;
(5)杀菌:将党参复合饮料于100℃中加热处理8min;
(6)灌装:将热处理的物料,趁热灌装密封,然后冷却检验,颜色透亮,无沉淀,即得党参复合饮料,颜色呈淡黄色,多糖含量为9.217±0.129g/100g。
实施例3
一种党参陈皮复合饮料,其每500ml饮料含有下述重量份的原料:
上述的党参复合饮料饮料的制备方法,步骤如下:
(1)党参浸提液::挑选,清洗,烘干,将干党参研磨后过60目筛得到党参粉,然 后加水至料液比1∶25,调节pH,加入纤维素酶,恒温酶解3小时,沸水浴灭酶活性,离 心去上清液,最后过400目滤布过滤得滤液,即得党参浸提液;
(2)陈皮浸提液:挑选,清洗,烘干,加水至料液比1∶25,调节pH,恒温浸提2 小时,离心去上清液最后过400目滤布过滤得滤液,即得陈皮浸提液;
(3)溶胶:将稳定增稠剂和糖料混合后,加入适量处理水,溶胶的水量和胶质量比为200∶1,于80℃下不停搅拌使其充分溶解,得胶液;
(4)调配:将党参浸提液、陈皮浸提液、青柠汁、酸味剂和胶液混合搅拌均匀,用 余下的处理水定容至饮料总体积,得混合液;
(5)杀菌:将党参复合饮料于90℃中加热处理10min;
(6)灌装:将热处理的物料,趁热灌装密封,然后冷却检验,颜色透亮,无沉淀, 即得党参复合饮料,颜色呈淡黄色,多糖含量为8.793±0.213g/100g。
实施例4
一种党参陈皮复合饮料,其每500ml饮料含有下述重量份的原料:
上述的党参复合饮料饮料的制备方法,步骤如下:
(1)党参浸提液::挑选,清洗,烘干,将干党参研磨后过60目筛得到党参粉,然后加水至料液比1∶30,调节pH,加入纤维素酶,恒温酶解3小时,沸水浴灭酶活性,离心去 上清液,最后过400目滤布过滤得滤液,即得党参浸提液;
(2)陈皮浸提液:挑选,清洗,烘干,加水至料液比1∶30,调节pH,恒温浸提2小时,离心去上清液最后过400目滤布过滤得滤液,即得陈皮浸提液;
(3)溶胶:将稳定增稠剂和糖料混合后,加入适量处理水,溶胶的水量和胶质量比为200∶1, 于80℃下不停搅拌使其充分溶解,得胶液;
(4)调配:将党参浸提液、陈皮浸提液、青柠汁、酸味剂和胶液混合搅拌均匀,用余下 的处理水定容至饮料总体积,得混合液;
(5)杀菌:将党参复合饮料于90℃中加热处理10min;
(6)灌装:将热处理的物料,趁热灌装密封,然后冷却检验,颜色透亮,无沉淀,即得党参复合饮料,颜色呈淡黄色,多糖含量为9.248±0.135g/100g。
尽管为说明目的公开了本发明的实施例,但是本领域的技术人员可以理解:在不脱离 本发明及所附权利要求的精神和范围内,各种替换、变化和修改都是可能的,因此,本发 明的范围不局限于实施例所公开的内容。
Claims (9)
2.根据权利要求1所述的党参复合饮料,其特征在于,所述党参浸提液原料为上党党参,制备方法如下:
(1)处理:挑选,清洗,烘干;
(2)研磨:将干党参研磨后过6~60目筛得到党参粉;
(3)提取:将党参粉加水至料液比1∶20~30;调节pH,加入纤维素酶,恒温酶解2~3小时,沸水浴灭酶活性,离心去上清液;
(4)过滤:浸提液经400~1000目滤布过滤得滤液,即得党参浸提液,备用。
3.根据权利要求1所述的党参复合饮料,其特征在于:所述陈皮汁制备方法如下:
(1)处理:挑选,清洗,烘干;
(2)提取:将陈皮加水至料液比1∶20~30;调节pH,恒温浸提1~2小时,离心去上清液;
(3)过滤:浸提液经400~1000目滤布过滤得滤液,即得陈皮浸提液,备用。;
4.根据权利要求1所述的党参复合饮料,其特征在于:所述青柠为市售青柠。
5.根据权利要求1所述的党参复合饮料,其特征在于:所述糖料为蔗糖、果糖、果葡糖浆、葡萄糖、麦芽糖浆中的一种或几种的混合物。
6.根据权利要求1所述的党参皮复合饮料,其特征在于:所述稳定增稠剂为羧甲基纤维素钠、黄原胶一种或两种的混合物。
7.根据权利要求1所述的党参复合饮料,其特征在于:所述酸味剂为柠檬酸、葡萄糖酸、酒石酸、苹果酸一种或两种的混合物。
8.根据权利要求1所述的党参复合饮料,其特征在于:所述处理水符合饮料用水要求。
9.一种如权利要求1至8任一项所述党参复合饮料的制备方法,其特征在于:步骤如下:
(1)溶胶:将稳定增稠剂0.05~0.2g和糖料5~15g混合后,加入适量处理水,溶胶的水量和胶质量比为200∶1,于70℃~80℃下不停搅拌使其充分溶解,得胶液;
(2)调配:将30~50g党参浸提后的浸提液、5~20g陈皮浸提后的浸提液、青柠汁2~6份、酸味剂0.1~0.3g和胶液混合搅拌均匀,用余下的处理水定容至饮料总体积,得混合液;
(3)杀菌:将党参复合饮料初品于85~100℃中加热处理8~10min;
(4)灌装:将热处理的物料,趁热灌装密封,然后冷却检验,颜色透亮,无沉淀,即得党参复合饮料。
