技术领域
本发明涉及保健饮料技术领域,具体为一种姜黄复合饮料及其制备方法。
背景技术
随着社会进步和工业的迅猛发展,工业烟尘和汽车尾气排放等空气污染日益严重;此外现代人生活压力大,生活节奏块,熬夜睡眠少;环境和个人情绪和作息习惯综合因素,导致很多人长期处于亚健康状态。亚健康状态主要体现为身体机能减退,免疫力低下,容易感染疾病等。而现有医药用品针对的是疾病对症治疗,暂时没有针对亚健康的有效药品。
亚健康的改善关键在于保健调理和劳逸结合的生活习惯的调整。而在保健调理方面,天然的植物提取物具有良好的保健功效,且无副作用,可以长时间食用,相对于药品具有无法比拟的保健预防优势。
现有功能饮料种类繁多,各具特色。总结来说,现有饮料可以分为:多糖类饮料、维生素饮料、维生素饮料、矿物质饮料、运动类饮料、益生菌饮料、免疫类饮料以及低能量饮料等。虽然现有各种饮料产品可以满足各种人群的需求,也能解决人民比如提神、口味以某方面保健问题,但是现有饮料中一般含有防腐剂或者化学合成原料,不宜长期饮用;另外现有饮料在保健,改善亚健康领域效果普遍不理想。
发明内容
本发明目的是针对上述现有技术存在的不足,提供一种营养丰富、解酒护肝,滋阴补血、延年益寿、提高免疫等保健作用且风味独特的纯天然姜黄复合饮料。
本发明另一目的是提供上述姜黄复合饮料的制备方法,可以有效的保留各种组分可以协同增效的活性成分和营养物质,且安全无副作用。
为达到上述目的,本发明是通过如下技术方案实现的:一种姜黄复合饮料,由包括以下重量份数组分制成:姜黄30-50、山楂5-10、枸杞5-12、大枣30-50、捻子15-30、刺梨40-60。
优选的,所述姜黄复合饮料,由包括以下重量份数的组分制成:姜黄35-45、山楂6-8、枸杞6-10、大枣35-45、捻子20-25、刺梨45-55。
优选的,所述姜黄复合饮料,由包括以下重量份数的原料制成:姜黄30-35、山楂5-6、枸杞6-8、大枣35-40、捻子15-18、刺梨45-50。
优选的,所述姜黄复合饮料,由包括以下重量份数的原料制成:姜黄35、山楂6、枸杞10、大枣45、捻子18、刺梨50。
所述姜黄复合饮料的制备方法,其包括的步骤如下:
(1)原料处理:将姜黄、山楂、枸杞、大枣、捻子和刺梨进行喷淋清洗,经冷破后压榨得到果浆;将果浆放入密闭容器中,加热到110-120℃,同时加压到3-5MPa,并保持8-10s后瞬间减压至常压、在5-8min冷却至室温,然后过滤得到果汁;
(2)一次提取:将果汁置于提取罐内,加入其质量7-8倍的90-95℃的纯净水,并保持温度90-95℃,时间为1-2小时,过滤,得滤液为一次提取物,将滤渣返回提取罐内
(3)二次提取:向滤渣加入其质量3-4倍的85-90℃的纯净水,保持温度85-90℃,时间为30-60min,过滤,得滤液为二次提取物;
(4)调配:将一次提取物与二次提取物按1∶2-4体积比混合均匀,形成饮料原液。
(5)灌装:将饮料原液以转速为8000-10000rpm离心8-10min,收集上清液,然后130℃-140℃下UHT灭菌3-10秒,最后灌装。
所述(1)步骤中,冷却至室温过程中实施超声处理直至冷却结束,所述超声功率为300~450W。通过超声波处理,利用超声波促使果浆内水以及各种组分剧烈的相互作用,起到了很好的搅拌作用,促进果浆中的活性成分与水进行物质交换,且促使部分不溶性活性组分溶解在水中被提取出来。
优选的,所述超声处理功率为330~380W,处理方式为没处理20-35s后暂停30s,有利于部分活性物质析出,且不会在持续的超声波空化中被挥发掉。
优选的,所述(1)步骤中,过滤的滤网规格为20-50目。
所述(2)步骤中,每隔10-15min开启空气泵吹气1次,每次吹气3-5min,去除在高温提取的过程中溢出的有害气体和物质,减少提取物的污染源。
所述(2)步骤中,过滤的滤网规格为100-400目。
所述(3)步骤中,每隔10-15min开启空气泵吹气1次,每次吹气3-5min,过滤的筛网规格为100-400目。
优选的,所述(2)步骤和所述(3)步骤中过滤通过振动筛来进行,所述振动筛的筛网规格为200-300目,振次为1500-3000rpm,可以有效的提高过滤效率。
所述(5)步骤中,可以根据需要添加部分食品添加剂,其中所述食品添加剂可以包括酸味剂以及甜味剂等。所述酸味剂优选为柠檬酸或者苹果酸,添加量为饮料原液质量的0.1-0.8%。
与现有技术相比,本发明与如下有益效果:纯天然果汁饮品,口感细腻、酸甜适宜,并且具有姜黄沙棘捻子山楂独特的香味;长期饮用能提高人体免疫功能,增强抗病能力;通过加压、加热处理,果浆在高压以及高剪切力、高水分的环境中,通过连续混和、调质、升温、增压和骤然降压、降温后使蛋白质、可溶性纤维等长链结构变为短链结构的程度增加,同时间短,对果汁的色、香、味破坏少;营养丰富,可以补充人体所需的营养物质和微量元素,可以提高免疫力,解酒护肝,防癌抗衰,改善人体亚健康症状。
具体实施方式
下面结合具体实施例对本发明作进一步描述,但实施例并不构成对本发明要求保护范围的限定。
本发明组分中,姜黄中富含姜黄素,姜黄素具有多种生物活性和药理作用,对高血脂、癌症、老年痴呆、糖尿病、肝损伤等多种疾病具有预防和治疗作用,在药物、营养保健等方面具有重要的应用价值。然而一般的姜黄素本身存在难溶于水,在光、热、高或低pH及金属离子的作用下很不稳定,且具有大部分人不适应的较强辛辣味等缺点,单一的姜黄素使用并不能很好的保持活性和口感。刺梨为蔷薇科多年生落叶灌木缫丝花的果实,其内含用丰富的维生素C。维生素C是高等灵长类动物与其他少数生物的必需营养素,也是一种抗氧化剂,保护身体免于自由基的威胁,维生素C同时也是一种辅酶。沙棘中维生素、黄酮类、萜类化合物及沙棘油等活性物质。其中的,维生素C、氨基酸、黄酮等活性成分可以使人体抗氧化能力迅速提高,具有抗癌作用,还具有抗过敏、增强免疫、护肝、降脂、抗氧化等药理功效。沙棘油、沙棘总黄酮能防止体内脂质过氧化,维持生物膜和酶蛋白的正常功能,对活性自由基有清除作用,是有效的抗氧化剂,可预防CC14引起的甘油三酯在肝内的堆积,保护肝细胞膜,阻止GPT、GOT的升高,降低T2BIL含量的升高,形态学观察亦发现该药可明显防止肝组织嗜酸性变、坏死等病理损伤。捻子果含有较为全面的营养成分,其中含粗脂肪7.97%、粗蛋白6.21%、粗纤维34.97%、木质素31.76%、总糖18.53t%、还原糖15.52%、维生素C28.8%、维生素H10.19mg/100g、S-胡萝卜素0.388mg/100g,更有丰富的氨基酸,其中天门氡氨酸含量高达124.7mg/L、缬氨酸71.7mg/L、色氨酸44.2mg/L、丙氨酸43.9mg/L和谷氨酸42.7mg/L,而多种人体所需的矿物质中,钙、镁更高达56.10μg/g,果实的构成糖中大量的为中性单糖,尤其在鲜果中含有更高的果胶多糖。捻子果有养血止血、涩肠固精,治疗血虚体弱、吐血、鼻衄、劳伤咳血、便血、崩漏、遗精、带下、痢疾、脱肛、烫伤、外伤出血、收敛止血的功效。大枣具有滋阴补阳,补血之功效;能提高人体免疫力,并可抑制癌细胞。大枣含有大量的糖类物质,主要为葡萄糖,还含有果糖、蔗糖及由葡萄糖和果糖组成的低聚糖、阿拉伯聚糖及半乳醛聚糖等;并含有大量的维生素C、核黄素、硫胺素、胡萝卜素、尼克酸等多种维生素。具有较强的补养作用,能提高人体免疫功能,增强抗病能力;有很好的增强肌力、消除疲劳、扩张血管、增加心肌收缩力、改善心肌营养。枸杞子具有滋阴补血,益精明目等作用;常用于治疗因肝肾阴虚或精血不足而引起的头昏、目眩腰膝酸软、阳痿早泄、遗精、白带过多及糖尿病等症。枸杞果皮中富含的有效成分之一一枸杞多糖(LBP)对骨髓造血功能和各项细胞免疫指标有明显的增强作用,能明显提高机体血液、肝和肌组织的超氧化歧化酶(SOD)的活性含量,从而有利于活性氧的清除,延缓衰老和抗疲劳;增加抗体形成细胞的数量,提高抗体效果。山楂味甘性温、归脾胃经,有补中益气、养血安神、缓和药性的功能。
本发明上述组分均为鲜果制成的纯天然混合物,通过特定的高温、高压和过滤萃取,充分的保留了各组分相互协同的活性成分,其中富含蛋白质、糖类、有机酸、维生素A、维生素C、氨基酸、各种活性组分以及很多微量元素。在促进白细胞的生成、降低血清胆固醇、提高血清白蛋白、保护肝脏,滋阴补血、调节免疫、抑制癌细胞等保健功效,且风味独特,无毒副作用,可以长期食用用于改善亚健康,增强体质。
一种姜黄复合饮料的实施例1-6如下表所示:
所述姜黄复合饮料的制备方法,其包括的步骤如下:
(1)原料处理:将姜黄、山楂、枸杞、大枣、捻子和刺梨喷淋清洗,经带式果汁压榨机冷破后压榨得到果浆;将果浆放入密闭容器中,加热到115℃,加压到4MPa,并保持9s后瞬间减压至常压、在7min冷却至室温,然后通过50目滤布过滤得到果汁;冷却至室温过程中实施超声处理直至冷却结束,所述超声处理功率为350W,处理方式为没处理25s后暂停30s;
(2)一次提取:将果汁置于提取罐内,加入果汁8倍质量的93℃的纯净水,并保持温度为93℃,时间为1.5小时,每隔13min开启空气泵吹气1次,每次吹气4min完成一次提取;将一次提取料液输送过滤器,用180目滤布过滤,得滤液为一次提取物,将滤渣返回提取罐内;其中过滤振动筛来进行,所述振动筛的筛网规格为280目,振次为2000rpm;
(3)二次提取:向上述滤渣加入4倍重量份数的88℃的纯净水,二次提取的温度为88℃,时间为45min,二次提取结束后,将二次提取料液输送过滤器,用250目滤布过滤,得滤液为二次提取物;其中过滤振动筛来进行,所述振动筛的筛网规格为280目,振次为2000rpm;
(4)调配:将一次提取物与二次提取物按1∶3体积比混合,形成饮料原液;
(5)灌装:将饮料原液与酸味剂等添加剂按一定比例混合,搅拌均匀,以转速为9000rpm离心9min,收集上清液,然后135℃下UHT灭菌8秒、灌装。
其中,所述酸味剂可以为柠檬酸或者苹果酸,添加量为饮料原液质量的0.5%。
毒理学试验
一、急性毒性试验(LD50)
1、材料:
1.1、实验材料:
样品为无色液体。
1.2、动物:
NIH小鼠,体重20-28g,雌雄各半。
2、方法与结果:
2.1、试验方法:
健康NIH小鼠40只,体重20-28g,雌、雄各半,采用Horn`s法,随机将小鼠分为4个剂量组,分别以0.1ml/10g.b.w、0.3ml/10g.b.w、0.5ml/10g.b.w、1ml/10g.b.w的灌胃量24小时内空腹灌胃4次,两次间隔4小时,观察一周,结果见下表。
2.2、结果:
受试小鼠经口服上述不同剂量本发明所述姜黄复合饮料,均未观察到小鼠有中毒反应,表明本发明所述姜黄复合饮料为无毒物质。
二、小鼠骨髓微核试验:
1、材料:
1.1、试验材料:
样品为无色液体。
1.2、动物:
NIH小鼠,体重20-26g,雌雄各半。
2、方法与结果:
2.1、试验方法:
健康NIH小鼠60只,体重20-26g,雌、雄各半,随机将小鼠分为6组,实验按″食品安全性毒理学评价程序和方法″进行,分两次灌胃,于第二次灌胃6小时后,处死小鼠取胸骨骨髓材料涂片、染色、镜检,求出各组微核率,结果按泊松分布法统计,结果见下表。
2.2、结果:
各剂量组的微核率与阴性对照组比较,统计学均无显著性差异,试验结果为阴性,表明本发明所述姜黄复合饮料对体细胞无诱变作用。
三、小鼠精子畸形试验
1、材料:
1.1、试验材料:
样品为无色液体。
1.2、动物:
NIH健康小鼠,体重18-35g,雌雄各半。
2、方法与结果:
2.1、试验方法:
NIH健康小鼠25只,体重25-35g,随机分成5组,连续灌胃5天(环磷酰胺阳性组作腹腔注射),灌胃量:0.3、0.5、1ml/10g.b.w,经35天后处死动物取双侧副睾按常规制片、染色,油镜下检查每组完整精子5000条,求出精子畸形率,按Wilcoson秩和检验法进行统计学处理,结果见下表。
2.2结果:
各剂量组的精子畸形率与阴性对照组比较,在统计学上均无显著性差异意义。样品在剂量变化均未发现对生殖细胞有诱变畸形作用,表明本发明所述姜黄复合饮料对生殖细胞无诱变作用。
效果实验
一、解酒效果评价
采用体重18~25g的小白鼠进行动物实验,设立对照组和实验组。
对照组:10只,灌喂体积比浓度为60%的酒精10mL/kg体重,然后灌喂35.0g/kg体重的生理盐水。
实验组:10只,灌喂体积比浓度为60%的酒精10mL/kg体重,然后灌喂35.0g/kg体重的实施例1制得的姜黄复合饮料。
观察两组动物醉酒后的维持时间,结果如下表所示:
从上述实验结果可以看出,本发明所述姜黄复合饮料具有极其优良的解酒效果。本发明其他实施例也具有基本一直的功效。
总的来说,本发明所述的姜黄复合饮料秉承了中医理论和配方原则,并结合恰当的提取工艺,可以有效保留各组分的有效成分,通过加压、加热处理,果浆在高压以及高剪切力、高水分的环境中,通过连续混和、调质、升温、增压和骤然降压、降温后使蛋白质、可溶性纤维等长链结构变为短链结构的程度增加,同时间短,对果汁的色、香、味破坏少。此外无毒,营养丰富,可以补充人体所需的营养物质和微量元素,可以提高免疫力,解酒护肝,防癌抗衰,改善人体亚健康症状。
最后应说明的是:以上实施例仅用以说明本发明的技术方案,而非对其限制;尽管参照前述实施例对本发明进行了详细的说明,本领域的普通技术人员应当理解:其依然可以对前述各实施例所记载的技术方案进行修改,或者对其中部分技术特征进行等同替换;而这些修改或者替换,并不使相应技术方案的本质脱离本发明各实施例技术方案的精神和范围。
Claims (10)
1.一种姜黄复合饮料,其特征在于,由包括以下重量份数组分制成:姜黄30-50、山楂5-10、枸杞5-12、大枣30-50、捻子15-30、刺梨40-60。
2.根据权利要求1所述的一种姜黄复合饮料,其特征在于,所述姜黄复合饮料,由包括以下重量份数的组分制成:姜黄35-45、山楂6-8、枸杞6-10、大枣35-45、捻子20-25、刺梨45-55。
3.根据权利要求1所述的一种姜黄复合饮料,其特征在于,所述姜黄复合饮料,由包括以下重量份数的原料制成:姜黄30-35、山楂5-6、枸杞6-8、大枣35-40、捻子15-18、刺梨45-50。
4.根据权利要求1所述的一种姜黄复合饮料,其特征在于,所述姜黄复合饮料,由包括以下重量份数的原料制成:姜黄35、山楂6、枸杞10、大枣45、捻子18、刺梨50。
5.根据权利要求1-4任一所述的一种姜黄复合饮料的制备方法,其特征在于,其包括的步骤如下:
(1)原料处理:将姜黄、山楂、枸杞、大枣、捻子和刺梨进行喷淋清洗,经冷破后压榨得到果浆;将果浆放入密闭容器中,加热到110-120℃,同时加压到3-5MPa,并保持8-10s后瞬间减压至常压、在5-8min冷却至室温,然后过滤得到果汁;
(2)一次提取:将果汁置于提取罐内,加入其质量7-8倍的90-95℃的纯净水,并保持温度90-95℃,时间为1-2小时,过滤,得滤液为一次提取物,将滤渣返回提取罐内
(3)二次提取:向滤渣加入其质量3-4倍的85-90℃的纯净水,保持温度85-90℃,时间为30-60min,过滤,得滤液为二次提取物;
(4)调配:将一次提取物与二次提取物按1∶2-4体积比混合均匀,形成饮料原液;
(5)灌装:将饮料原液以转速为8000-10000rpm离心8-10min,收集上清液,然后130℃-140℃下UHT灭菌3-10秒,最后灌装。
6.根据权利要求5所述的一种姜黄复合饮料的制备方法,其特征在于,所述(1)步骤中,冷却至室温过程中实施超声处理直至冷却结束,所述超声功率为300~450W。
7.根据权利要求7所述的一种姜黄复合饮料的制备方法,其特征在于,所述超声处理功率为330~380W,处理方式为没处理20-35s后暂停30s。
8.根据权利要求5所述的一种姜黄复合饮料的制备方法,其特征在于,所述(2)步骤中,每隔10-15min开启空气泵吹气1次,每次吹气3-5min。
9.根据权利要求5所述的一种姜黄复合饮料的制备方法,其特征在于,所述(3)步骤中,每隔10-15min开启空气泵吹气1次,每次吹气3-5min,过滤的筛网规格为100-400目。
10.根据权利要求9所述的一种姜黄复合饮料的制备方法,其特征在于,所述(2)步骤和所述(3)步骤中过滤通过振动筛来进行,所述振动筛的筛网规格为200-300目,振次为1500-3000rpm。
