Abstract
本发明涉及一种葡萄香精,其组成为香基0.1‑100份;溶剂0‑99.9份;表面活性剂0‑20份;助表面活性剂0‑20份;载体0‑99.9份;所述香基由以下重量份的组分组成:乙酸:0.1‑0.5份;丁酸乙酯:1‑2份;乙基麦芽酚:3‑5份;叶醇:1‑2份;邻氨基苯甲酸甲酯:0.5‑1份;乙酸丙酯:1‑2份;麦芽酚:1‑2份;2‑甲基丁酸乙酯:0.8‑1.5份;异丁酸乙酯:0.5‑1份;乙酸苏合香酯:0.4‑0.8份;乙酸乙酯:3‑5份;乙酰乙酸乙酯:0.5‑1份;丙酸乙酯:2‑3份;2‑甲基戊酸乙酯:0.2‑0.5份;N‑甲基邻氨基苯甲酸甲酯:1‑2份。添加本发明葡萄香精的饮料和其它食品的果汁感、特征感和实物感增强,并具有天然的香气及口感。
Description
技术领域
本发明涉及食品添加剂技术领域,更具体的说,涉及一种葡萄香精。
背景技术
红地球葡萄(又称美国红提)在我国各地普遍种植,与巨峰品种成为我国鲜食葡萄栽培最为重要的两个品种。红提葡萄具有耐贮运、果粒大、果肉脆、色泽艳、口感适中及产量高等一系列特点,故红提葡萄被认为是鲜食葡萄中综合性状最佳的品种之一。在现如今各式各样的葡萄口味的果汁饮料产品层出不穷,在葡萄风味的果汁饮料生产中为补充香气风味,让消费者感受到新鲜、且有特色的葡萄的风味,除了体现葡萄本身的功能性以外,还能提升果汁饮料的天然口感。但是浓缩葡萄汁在生产过程中经过加热、浓缩等过程,除了造成香气的大量损失,还加速了葡萄香气的变化,致使葡萄浓缩果汁的香气风味非常淡,并具有不愉快的香气,与新鲜葡萄的风味有很大的差异。同时,各品种葡萄之间的差异性也因生产工艺有所损失,无法体现原有天然水果特有的特征风味,大大降低了其个性化的优势。
传统的葡萄香精特征不足,无法表现出各葡萄品种的特点,且很难调出具有真实感的葡萄香气,因此市面上大多数葡萄香精的香气缺乏新鲜葡萄的天然感和果实感,影响了使用该香精的果汁饮料产品的自然风味,致使其风味单一,果汁感和特征香气不足。另外,传统的葡萄香精使用的主要风格相对单一,缺乏天然性,无法区分各种品种之间不同的香气特征,无法满足现今消费者对于个性化和独特性的要求,不受消费者欢迎。
发明内容
本发明的目的是提供一种具有新鲜葡萄的风味的葡萄香精,以克服上述传统的葡萄香精配方中存在的缺陷。
为实现本发明的目的,本发明的技术方案是:
一种葡萄香精,其特征在于,由以下重量份的组分组成:
所述香基由以下重量份的组分组成:
在本发明的一优选实施例中,所述溶剂为酒精、丙二醇、动植物油、辛酸癸酸甘油酯、三醋酸甘油酯、水、柠檬酸三乙酯、甘油、苧烯中的一种或几种的混合物。
根据所应用的产品不同,选用不同的原料作为溶剂。在近水饮料中选用酒精或丙二醇的组合能更好的释放香气。在乳制品类的产品中,选用丙二醇、甘油或者三醋酸甘油酯可以更好的体现风味的厚实感。而在烘焙类产品中则优先选用辛癸酸甘油酯,能有更好的热稳定性。
在本发明的一优选实施例中,所述表面活性剂为卵磷脂、大豆卵磷脂、单硬脂酸甘油脂、蔗糖酯中的一种或几种的混合物。在实验过程中发现,以单硬脂酸甘油酯和蔗糖酯按配比搭配使用,对于产品的稳定性有更好的体现
在本发明的一优选实施例中,所述助表面活性剂为阿拉伯胶、果胶、明胶、西黄鳍胶、黄原胶、羧甲基纤维素、琼脂、辛烯基琥珀酸淀粉钠、松香酸甘油脂中的一种或几种的混合物。通过实验结果表明选用阿拉伯胶,对于香气的表现和产品的稳定性都能有更好的提升
在本发明的一优选实施例中,所述载体为二氧化硅、玉米淀粉、麦芽糊精、变性淀粉、葡萄糖粉、环状糊精、乳糖粉、蔗糖粉中的一种或几种的混合物。实验过程中发现,选用二氧化硅与麦芽糊精搭配,对于产品的流动性和分散性有更好的提升
在本发明的一优选实施例中,所述葡萄香精配方为液体、固体或乳状物。
本发明的葡萄香精配方具有独特的果皮香气,和果肉的颗粒感饱满的特色,给人以很强的印象。使添加本发明的葡萄香精的葡萄果汁饮料、发酵乳、调味乳饮料等饮料和其它食品的果汁感增强,并具有天然的香气及口感。另外本发明的葡萄香精的耐热性、香气质量高于国内同类香精的水平。
具体实施方式
下面结合具体实施例进一步说明本发明,但本发明的内容完全不局限于此。
实施例中的原料均为市售所得。
实施例1
称取原料如表1所示:

将以原料搅拌均匀,即得16.0kg香基,向该香基中再加入84.0kg食用酒精,搅拌至完全溶解均匀,即获得100kg液体葡萄香精。
对比例1-1将实施例1中邻氨基苯甲酸甲酯的用量改为0.9kg,将乙酰乙酸乙酯的用量由0.6kg,相应更改酒精的重量,使成分的重量之和仍为100kg。其余等同于实施例1。
对比例1-2将实施例1中邻氨基苯甲酸甲酯的用量改为0.6kg,将N-甲基邻氨基苯甲酸甲酯改为0.6kg,相应更改酒精的重量,使成分的重量之和仍为100kg。其余等同于实施例1。
对比例1-3将实施例1中乙基麦芽酚的用量改为3.5kg,将2-甲基戊基乙酯的用量由0.3kg,相应更改酒精的重量,使成分的重量之和仍为100kg。其余等同于实施例1。
对比例1-4将实施例1中乙酸苏合香酯的用量改为0.5kg,将乙酰乙酸乙酯的用量由0.8kg,相应更改酒精的重量,使成分的重量之和仍为100kg。其余等同于实施例1。
依据GBT14454.2-2008《香料香气评定方法》,对产品进行感官评价。
感官评价的方法具体为:选择专家评价人员,让感官评价人员根据实例样品的香气与对照样品红提香气接近程度进行1-10打分(10分为十分接近)。
最后对评价员给出的相同实施例或对比例样品评价分数进行统计。
统计结果见表2,根据统计结果,实施例1具有明显的天然红提的香气风味特征,感官评价值最高,对实施例1中的成分稍做改变,其风味就会丧失严重,感官评价值降低。
产品具有葡萄鲜果的香气,并且具有红提的特征香气,有明显果实中的果肉感和果皮感,应用在产品中表现自然且真实感强。

将以原料搅拌均匀,即得17.0kg香基,然后向该香基中加入10kg二氧化硅混合均匀,最后加入73kg麦芽糊精进行混合至均匀,即获得100kg粉末葡萄香精。
对比例2-1将实施例2中将麦芽糊精替换为玉米淀粉,其余等同于实施例2。
对比例2-2将实施例2中将二氧化硅用量改为8kg,相应更改麦芽糊精的重量,使成分的重量之和仍为100kg。其余等同于实施例2。
对比例2-3将实施例2中将麦芽糊精替换为变性淀粉,其余等同于实施例2。
依据GBT14454.2-2008《香料香气评定方法》,对产品进行感官评价。
感官评价的方法具体为:在室温(25-35℃)、不避光条件下,贮藏180天后,对其香气进行感官评价,对比原产品确定香精品质稳定性试验。让感官评价人员对于样品稳定性风味进行1-10分的感官评价(10分为于对照样接近,无变化),结果统计见表4。
感官评价结果表明,实施例2的香气特征感和风味的稳定性最佳,对比例则风味就会丧失严重,感官评价值降低。
产品具有葡萄鲜果的香气,并且具有红提的特征香气,有明显果实中的果肉感和果皮感,应用在产品中表现自然且真实感强,耐温性较好,香气损失少。

实施例3
称取原料如表5所示:

将以原料搅拌均匀,即得24.0kg香基,然后向该香基中加入1kg单硬脂酸甘油脂和0.5kg蔗糖酯搅拌至完全溶解,然后缓慢加入到74.5kg的20%阿拉伯胶水溶液中,高剪切10分钟后进行均质,即获得100kg乳化葡萄香精。
对比例3-1将实施例3中将单硬脂酸甘油酯的用量改为0.9kg,相应更改水溶液的重量,使成分的重量之和仍为100kg。其余等同于实施例3。
对比例3-2将实施例3中将单硬脂酸甘油酯替换为卵磷脂,再添加0.5kg松香甘油酯,相应更改水溶液的重量,使成分的重量之和仍为100kg。其余等同于实施例3。
对比例3-3将实施例3中将蔗糖酯去除,再添加0.5kg松香甘油酯,相应更改水溶液的重量使成分的重量之和仍为100kg。其余等同于实施例3。
依据GBT14454.2-2008《香料香气评定方法》,对产品进行感官评价。

2.根据权利要求1所述的葡萄香精,其特征在于,所述溶剂为酒精、丙二醇、动植物油、辛酸癸酸甘油酯、三醋酸甘油酯、水、柠檬酸三乙酯、甘油、苧烯中的一种或几种的混合物。
3.根据权利要求1所述的葡萄香精,其特征在于,所述表面活性剂为卵磷脂、大豆卵磷脂、单硬脂酸甘油脂、蔗糖酯中的一种或几种的混合物。
4.根据权利要求1所述的葡萄香精,其特征在于,所述助表面活性剂为阿拉伯胶、果胶、明胶、西黄鳍胶、黄原胶、羧甲基纤维素、琼脂、辛烯基琥珀酸淀粉钠、松香酸甘油脂中的一种或几种的混合物。
5.根据权利要求1所述的葡萄香精,其特征在于,所述载体为二氧化硅、玉米淀粉、麦芽糊精、变性淀粉、葡萄糖粉、环状糊精、乳糖粉、蔗糖粉中的一种或几种的混合物。
6.根据权利要求1-5任一项所述的葡萄香精,其特征在于,所述葡萄香精配方为液体、固体或乳状物。
