Abstract
The invention provides a central kitchen cleaning system and an operation method thereof, wherein the central kitchen cleaning system comprises an oxidation potential generated water cleaning system, which comprises an electrolyzed water generating device, a water storage tank, an ultrasonic cleaning device, a water washing device and a conveying device; the electrolyzed water generating device comprises an anode chamber and a cathode chamber, the anode chamber and the cathode chamber are separated by an ion selective permeable membrane, the water storage tank comprises an acidic water storage tank and an alkaline water storage tank, the anode chamber is connected with the acidic water storage tank, and the cathode chamber is connected with the alkaline water storage tank; the outlets of the acidic water storage tank and the alkaline water storage tank are respectively connected to the ultrasonic cleaning device through pipelines; the ultrasonic cleaning device is connected with the dish washing machine through a conveying device. The central kitchen cleaning system provided by the invention integrates the electrolyzed water generating device, the ultrasonic cleaning device, the dish washing machine and the ultraviolet sterilizing device, integrally realizes the production of cleaning, sterilizing and packaging, and saves manpower and material resources.
Description
Technical Field
The invention belongs to the technical field of disinfection, and particularly relates to a system and a method for cleaning and disinfecting tableware and vegetables.
Background
The central kitchen is an intensive catering manufacturing mode, and dishes are distributed by the central kitchen through a refrigerator car, so that uniform purchasing and distribution are carried out on straight shops. In the prior art, patent application No. ZL01246856.8 discloses a siphon-type electrolyte-added high-oxidation potential disinfectant water generator, which comprises a filter, a water flow sensor, a flowmeter, a power supply water cooling part, an electrical appliance control part, an activation tank with an electrode, a water inlet nozzle, two water outlet nozzles, a NaCl solution tank with a water outlet nozzle, and a siphon device with a water inlet nozzle. The method mixes tap water of a pipe network with a small amount of salt, and produces acidic ionized water and alkaline ionized water with special functions after being treated by a special diaphragm electrolysis device. The device provides high oxidation potential water for medical or household disinfection.
The ultraviolet sterilization and disinfection is to use ultraviolet with proper wavelength to destroy the molecular structure of DNA (deoxyribonucleic acid) or RNA (ribonucleic acid) in the cells of the microorganism body, so as to cause the death of growing cells and/or regenerative cells, thereby achieving the effect of sterilization and disinfection. Under the condition of long-time ultraviolet irradiation, oxygen in the air generates ozone, and the ozone can purify the air and simultaneously has the function of sterilizing and disinfecting the air.
In the manufacturing mode of the central kitchen, the requirements for cleaning tableware and vegetables also include disinfection, sterilization, packaging and the like, and the pollution caused by the discharge of cleaning wastewater is reduced as much as possible while food is produced in a large scale, which is a new problem in the technical field of the central kitchen.

Further, a water outlet is arranged at the lower part of the ultrasonic cleaning device and connected with a waste water storage tank.
Wherein, the bottom of the ultrasonic cleaning device is provided with an ultrasonic transducer.
One preferable technical scheme of the invention is that the central kitchen cleaning system further comprises one or more of a sterile production workshop, an ultraviolet light sterilization system and a sterile packaging system;
the ultraviolet sterilization system comprises an ultraviolet radiation lamp arranged at the top of the system;

A method of operating the central galley cleaning system, comprising the operations of:
adding water into the electrolyzed water generating device, adding trace electrolyte, electrolyzing with direct current to obtain acidic water and alkaline water in the anode chamber and the cathode chamber respectively,
firstly, acidic water is used for cleaning in an ultrasonic cleaning device, then alkaline water is used for cleaning in the ultrasonic cleaning device,
the cleaned tableware is washed by a dish washer (no detergent is put in the dish washer), and then the tableware is packaged after being sterilized by ultraviolet rays. Or washing the cleaned vegetables with bubble cleaning machine, and sterilizing with ultraviolet rays.

The power of the ultraviolet radiation lamp is 100W-150W. The time of ultraviolet irradiation is 15 min.

Claims (10)
1. A central kitchen cleaning system comprising an oxidation potential generating water cleaning system;
the oxidation potential generation water cleaning system comprises an electrolytic water generation device, a water storage tank, an ultrasonic cleaning device, water cleaning equipment and a conveying device;
the electrolyzed water generating device comprises an anode chamber and a cathode chamber, the anode chamber and the cathode chamber are separated by an ion selective permeable membrane, the water storage tank comprises an acidic water storage tank and an alkaline water storage tank, the anode chamber is connected with the acidic water storage tank, and the cathode chamber is connected with the alkaline water storage tank; the outlets of the acidic water storage tank and the alkaline water storage tank are respectively connected to the ultrasonic cleaning device through pipelines;
the ultrasonic cleaning device is connected with the water washing equipment through a conveying device, and the water washing equipment is a dish washing machine and/or a bubble cleaning machine.
2. The central galley cleaning system according to claim 1, wherein the ultrasonic cleaning device is provided with a drain port at a lower portion thereof, the drain port being connected to a waste water storage tank.
3. The central galley cleaning system of claim 1, wherein the ultrasonic cleaning device bottom is provided with an ultrasonic transducer.
4. The central galley cleaning system of any of claims 1-3, further comprising one or more of a sterile production plant, an ultraviolet light sterilization system, and a sterile packaging system;
the ultraviolet sterilization system comprises an ultraviolet radiation lamp arranged at the top of the system;
the aseptic packaging system is composed of an aseptic packaging machine.
5. A method of operating a central galley cleaning system according to any one of claims 1-4, comprising the acts of:
adding water into the electrolyzed water generating device, adding trace electrolyte, electrolyzing with direct current to obtain acidic water and alkaline water in the anode chamber and the cathode chamber respectively,
firstly, acidic water is used for cleaning in an ultrasonic cleaning device, then alkaline water is used for cleaning in the ultrasonic cleaning device,
washing the cleaned tableware by using a dish washer, sterilizing by ultraviolet rays and packaging; or washing the cleaned vegetables with bubble cleaning machine, and sterilizing with ultraviolet rays.
6. The operating method according to claim 5, characterized in that the electrolyte is NaCl, the added mass concentration being 0.05-0.2%; the electrolytic water generating device has a tank voltage of 18 v-24 v and an electrolysis time of 6-10 minutes.
7. The operation method according to claim 5, wherein the cleaning is performed by acidic water for 5 to 30 seconds, and then by alkaline water for 5 to 30 seconds.
8. The operating method according to claim 4, wherein the power of the ultrasonic transducer is 1-2 kw.
9. An ultraviolet light radiator lamp as defined in claim 4, wherein: the power of the ultraviolet radiation lamp is 100W-150W. The time of ultraviolet irradiation is 10 min-30 min.
10. The operation method according to any one of claims 4 to 9, wherein both acidic and alkaline washing water discharged from the ultrasonic cleaning apparatus are placed in a waste water storage tank.
