Abstract
The invention discloses a fresh extract freeze-dried fruit and vegetable juice formula which comprises, by weight, 50-80 parts of fresh fruits and vegetables, 5-10 parts of white granulated sugar, 5-10 parts of honey, 0.01-0.2 part of sugar substitute and 2-5 parts of starch. The invention also discloses a preparation process of the fresh extract freeze-dried fruit and vegetable, which comprises the following steps: s1, processing fresh fruits and vegetables; s2, weighing and batching; s3, blending; s4, injection molding; s5, cold extraction; s6, freeze-drying; and S7, demolding and packaging. The fresh fruits and vegetables are processed by a fresh extraction freeze-drying technology to obtain fruit and vegetable juice in a freeze-dried state; the fruit and vegetable juice produced by the preparation process can better keep the original flavor and taste of fresh fruits; the loss of nutrient elements is reduced by fresh extraction and freeze drying; the product does not need to add any pigment and preservative, so that the product is safer to drink.
Description
Technical Field
The invention relates to the technical field of fruit and vegetable juice beverages, in particular to a fresh extract freeze-dried fruit and vegetable juice formula and a preparation process thereof.
Background
The beverage is a daily food, provides water required by human body, and can supplement various nutrient elements of various vitamins and mineral elements, and is an indispensable food. The beverage industry in China is relatively late in development, starts to rise in the 80 s, and has a very long history in foreign countries, so that the beverage production in China has great progress space from many aspects such as scale, process, equipment and the like. According to statistics, the average annual growth rate of the beverage market in China is more than 16% from less than 30 ten thousand tons in 1980 to 18345.24 ten thousand tons in 2016. But compared with developed countries such as Europe and America, the beverage industry in China has huge development prospect.
With the continuous improvement of living standard, people pay more and more attention to healthy diet, and fruit and vegetable juice beverages begin to enter people's daily life. The fruit and vegetable juice is juice squeezed from vegetables and fruits, is rich in antioxidant, and is generally understood as a product prepared by adding sugar, acid, essence, pigment and the like into fruit and vegetable juice which is used as a base material by an enterprise, so that the fruit and vegetable juice is called a fruit and vegetable juice beverage. According to the introduction of doctors, the fresh fruit and vegetable juice can effectively supplement vitamins and mineral substances such as calcium, phosphorus, potassium, magnesium and the like for human bodies, can regulate the function coordination of the human bodies, enhance the cell activity and the gastrointestinal function, promote the secretion of digestive juice and eliminate fatigue. From the viewpoint of food technology, the fruit and vegetable juice is generally considered as: fresh or refrigerated fruits and vegetables (some adopt dry fruits) are taken as raw materials, and after being cleaned and selected, the fruit and vegetable juice is obtained by physical methods such as squeezing, leaching, centrifuging and the like, and is called as fruit and vegetable juice. Therefore, the fruit and vegetable juice is also called "liquid fruit and vegetable".
The fruit and vegetable juice in the current market mainly comprises FC (fiber channel) juice, NFC (near field communication) juice and HPP (high performance liquid) juice, wherein the FC (from concentrate) juice is named as concentrated reducing juice in Chinese, and is a product obtained by adding water with the same amount as natural water lost in juice concentration into the concentrated juice; the NFC (not From concentrate) juice is called as non-concentrated original juice by the Chinese name, fresh original fruit is washed and squeezed to obtain juice, and the juice is directly filled after instant sterilization without concentration and restoration; HPP (high Pressure processing) juice is prepared by directly bottling and sealing cold-pressed juice by instant autoclaving technology, placing under liquid Pressure of 500-600 MPa, and killing harmful microorganisms such as Escherichia coli in the juice by Pressure conduction. FC juice is obtained by evaporating a considerable part of water through a concentration (usually vacuum concentration) process on the basis of fresh juice, a part of aroma components are lost in the water evaporation process, and a color fixative is generally added in the color fixative process in the production process for preventing the color change of the juice, so that the mouthfeel of the juice is influenced to a greater or lesser extent. Although the mouthfeel of the NFC juice and the HPP juice is close to the original taste, the NFC juice and the HPP juice have the problems of inconvenient cold chain transportation, high cost, short shelf life and the need of cold field storage. Therefore, in view of the defects of the above schemes in actual manufacturing and implementation and use, the fresh extract freeze-dried fruit and vegetable juice formula and the preparation process are created by the assistance of professional knowledge and experience and after various skillful thinking and experiments based on the acquired spirit and concept.

In one embodiment, the fresh extract freeze-dried fruit and vegetable juice formula further comprises a nutrition enhancing substance, wherein the nutrition enhancing substance can be at least one of calcium, iron, dietary fiber and vitamins.
In one embodiment, the fresh extract freeze-dried fruit and vegetable juice formula further comprises a functional raw material, wherein the functional raw material is gamma-aminobutyric acid or milk mineral salt.
In one embodiment, the starch may be a normal starch or a modified starch.
In one embodiment, the beverage further comprises soda water, lactobacillus beverage, coffee or tea beverage.

In one embodiment, a heat sterilization process is added between step S3 and step S4, the uniformly stirred mixed liquid in step S3 is heated to 85 ℃, the heating is maintained for 5min to 15min to sterilize the microorganisms, and the sterilized mixed liquid is injected into the mold in step S4.

3. The formulation of claim 1, wherein the fresh fruit or vegetable is at least one of cumquat, lemon, passion fruit, and pineapple.

The fresh extract freeze-dried fruit and vegetable juice formulation according to claim 1, wherein the fresh fruit and vegetable can be processed into any one of fruit and vegetable juice, fruit and vegetable blocks, fruit and vegetable pieces, fruit and vegetable grains, or fruit and vegetable puree.
5. The fresh extracted lyophilized juice formulation of claim 1, further comprising a nutrient enrichment material, wherein the nutrient enrichment material is at least one of calcium, iron, dietary fiber, and vitamins.
6. The fresh extract freeze-dried fruit and vegetable juice formulation according to claim 1, further comprising a functional material, wherein the functional material is gamma-aminobutyric acid or milk mineral salt.
7. The fresh extracted lyophilized juice formulation according to claim 1, wherein the starch is selected from the group consisting of normal starch and modified starch.
8. The fresh extract freeze-dried fruit and vegetable juice formulation according to claim 1, further comprising soda water, lactic acid bacteria beverage, coffee or tea beverage.

The process according to any one of claims 1 to 7, wherein the process comprises the following steps: s1, processing fresh fruits and vegetables, cleaning the fresh fruits and vegetables, and juicing, slicing, dicing or dicing the cleaned fresh fruits and vegetables by a full-automatic cutting machine; s2, weighing the ingredients, namely weighing the fresh fruits and vegetables processed in the step S1 and various ingredients according to the set weight percentage; s3, blending the ingredients, namely putting the ingredients weighed in the step S2 into a stirrer, pouring clear water, starting the stirrer to fully stir and dissolve the ingredients for 20-30 min; s4, injection molding, namely injecting the mixed liquid stirred in the step S3 into a mold, and then placing the weighed fresh fruits and vegetables into the mold; s5, cold extraction, namely pushing the mould filled in the step S4 into a quick freezing room for 10H-12H within 30 minutes, wherein the temperature of the quick freezing room is maintained at minus 20 ℃ to minus 40 ℃; s6, freeze-drying, namely pushing the fruit and vegetable juice blocks which are well extracted in the step S5 into a freeze-drying bin, and maintaining the freeze-drying for 30-50H; and S7, demolding and packaging, namely packaging and demolding the product obtained in the step S6 through a high-barrier rolling film, controlling the humidity of a production place to be 25% -30% and the temperature to be 15-25 ℃, boxing and packaging the demolded product through a high-barrier bag, carrying out metal detection and inspection on the product through X-rays, and warehousing the finished product, wherein the finished product is stored in a dark place at normal temperature.
10. The process of claim 9, wherein a heat sterilization process is added between step S3 and step S4, the mixture stirred uniformly in step S3 is heated at 85 ℃ for 5-15min to sterilize the microorganisms, and the sterilized mixture is injected into the mold of step S4.
