Abstract
本发明公开一种含复合发酵果汁的凉茶饮料及其制备方法,由下述重量份数的原料制成:蓝莓果汁20~25份,樱桃果汁15~20份,夏枯草5~10份,昆布5~10份,佛手5~10份,枇杷叶5~10份,黄精5~10份,枸杞子5~10份,桑椹5~10份,百合5~10份,玉竹5~10份,甘草1~5份。对比目前市场热销的凉茶饮料,味道单一,本发明的凉茶饮料以中草药为基础,配方合理,并添加复合发酵果汁,经现代生物技术加工制成,风味好,口感独特,适用于工业生产。
Description
技术领域
本发明涉及食品技术领域,具体而言,涉及一种含复合发酵果汁的凉茶饮料及其制备方法。
背景技术
凉茶是传统中草药植物性饮料的通称。广东凉茶是中国传统凉茶文化的代表。凉茶是将药性寒凉和能消解人体内热的中草药煎水做饮料喝,以消除夏季人体内的暑气,或治疗冬日干燥引起的喉咙疼痛等疾患。
目前市场上很多的凉茶,但是现有的凉茶只采用中草药制成,味道较苦,口感不受大众欢迎,并且原料配比不准确,不适合工业化的生产。
发明内容
本发明的目的在于克服现有技术存在的不足,提供一种含复合发酵果汁的凉茶饮料,以中草药为基础,配方合理,并添加复合发酵果汁,经现代生物技术加工制成,风味好,口感独特,适用于工业生产。
本发明是这样实现的,一种含复合发酵果汁的凉茶饮料,按照重量份数配比,包括以下原料:
蓝莓果汁20~25份,樱桃果汁15~20份,夏枯草5~10份,昆布5~10份,佛手5~10份,枇杷叶5~10份,黄精5~10份,枸杞子5~10份,桑椹5~10份,百合5~10份,玉竹5~10份,甘草1~5份。
作为优选,按照重量份数配比,包括以下原料:
蓝莓果汁25份,樱桃果汁20份,夏枯草10份,昆布10份,佛手10份,枇杷叶10份,黄精10份,枸杞子10份,桑椹10份,百合10份,玉竹10份,甘草5份。
作为优选,按照重量份数配比,包括以下原料:
蓝莓果汁20份,樱桃果汁15份,夏枯草5份,昆布5份,佛手5份,枇杷叶5份,黄精5份,枸杞子5份,桑椹5份,百合5份,玉竹5份,甘草3份。
作为优选,所述原料总计重量份数为400份,所述原料的余量为纯化水。
本发明还提供一种含复合发酵果汁的凉茶饮料的制备方法,包括如下步骤:
(1)将蓝莓果汁和樱桃果汁混合均匀后,加热灭菌,灭菌温度为80-90℃,灭菌时间为10-15分钟,得到混合果汁;
(2)将混合果汁自然冷却到40-50℃;
(3)在冷却的混合果汁中加入其占混合果汁重量0.05-0.1%的菌种,在37℃条件下恒温发酵60~72小时后,得到复合发酵果汁;
(4)原料清洗:将夏枯草、昆布、佛手、枇杷叶、黄精、枸杞子、桑椹、百合、玉竹和甘草分别清洗;
(5)原料浸泡:将清洗干净的中药材分别进行浸泡15-25分钟;
(6)原料煎煮:将浸泡后的中药材进行煎煮,大火煮沸后小火煮2小时,得到煎煮液;然后将煎煮液用150目筛网过滤,得到滤液;将滤液再煎煮浓缩至相对密度为1.1g/cm3的浸膏;
(7)原料调配:将浸膏转移至饮料调配罐中,添加步骤(3)中所得到的复合发酵果汁,并添加纯化水搅拌均匀得到凉茶饮料液;
(8)灌装:将凉茶饮料液灌入饮料罐中,凉茶饮料液中心温度不低于60℃~85℃,封口;
(9)灭菌:将灌封好的饮料罐,装入卧式高压灭菌器中进行蒸汽灭菌,灭菌温度115℃,时间30分钟;
(10)灭菌后的饮料罐冷却至45℃以下,吹干饮料罐表面,即可。
作为优选,所述步骤(3)中的菌种包括酵母菌种和乳酸菌种,所述菌种的初始活菌数为1.0×10 7cfu/mL,其中酵母菌数:乳酸菌数为1:2。
其中,蓝莓果汁的加入:风味独特,酸甜适度,又具有香爽宜人的香气。蓝莓中诸如花青素、有机酸等的常规营养成分含量十分丰富,矿物质和微量元素含量也相当可观。
樱桃果汁的加入:营养丰富,所含蛋白质、糖、磷、胡萝卜素、维生素C等均比苹果、梨高,尤其含铁量高。
夏枯草的加入:药性为辛、苦、寒;归肝、胆经;功效为清肝泻火,明目,散结消肿;主治为用于目赤肿痛,目珠夜痛,头痛眩晕,瘰疬,癭瘤,乳房胀痛。
昆布的加入:药性为咸、寒;归肝、胃、肾经;功效为消痰软坚散结,利水消肿;主治为用于瘿瘤,瘰疬,睾丸肿痛,痰饮水肿。
佛手的加入:药性为辛、苦、酸、温;归肝、脾、胃、肺经;功效为疏肝理气、和胃止痛、燥湿化痰;主治为用于肝胃气滞、胸胁胀痛、咳嗽痰多。
枇杷叶的加入:药性为苦、寒;归胃、肺经;功效为清肺止咳,降逆止呕;主治为用于肺热咳嗽,气逆喘急,胃热呕逆,烦热口渴。
黄精的加入:药性为甘、平;归脾、肺、肾经;功效为补气养阴,健脾,润肺,益肾;主治为用于脾胃气虚,体倦乏力,胃阴不足,口干食少,肺虚燥咳,劳嗽咳血,精血不足,腰膝酸软,须发早白,内热消渴。
枸杞子的加入:药性为甘、平;归肝、肾经;功效为滋补肝肾,益精明目;主治为用于虚劳精亏,腰膝酸痛,眩晕耳鸣,阳萎遗精,内热消渴,血虚萎黄,目昏不明。
桑椹的加入:药性为甘、咸、平;归肝、肾经;功效为固精缩尿,补肾助阳;主治为用于遗精滑精,遗尿尿频,小便白浊。
百合的加入:药性为甘、寒;归心、肺经;功效为养阴润肺,清心神;主治为用于阴虚燥咳,劳嗽咳血,虛烦惊悸,失眠多梦,精神恍惚。
玉竹的加入:药性为甘、寒;归肺、胃经;功效为养阴润燥,生津止渴;主治为用于肺胃阴伤,燥热咳嗽,咽干口渴,内热消渴。
甘草的加入:药性为甘、平;归心、肺、脾、胃经;功效为补脾益气,淸热解毒,祛痰止咳,缓急止痛,调和诸药;主治为用于脾胃虚弱,倦怠乏力,心悸气短,咳嗽痰多、四肢挛急疼痛,痈肿疮毒,缓解药物毒性、烈性。
本发明具有的有益效果:采用夏枯草、昆布、枇杷叶为君,治上焦热,清热祛湿。配佛手为臣,降气清上蒸之热。脾胃湿热久积,捐伤胃阴故用黄精、枸杞子、桑葚、百合、玉竹为佐益阴清热,配甘草为佐调和诸成分。另外,用蓝莓果汁和樱桃果汁补充丰富的营养,如花青素、维生素等,并调节产品口感。制备方法能够对原料成分进行有效发酵和提取,保证各组分充分发挥作用,获得性质均匀、质量稳定的产品,具有工艺简单,易于操作的优势,并且原料易得,成本较低,适于推广应用。
具体实施方式
实施例1
本发明所提供的一种含复合发酵果汁的凉茶饮料,按照重量份数配比,包括以下原料:蓝莓果汁25份,樱桃果汁20份,夏枯草10份,昆布10份,佛手10份,枇杷叶10份,黄精10份,枸杞子10份,桑椹10份,百合10份,玉竹10份,甘草5份和纯化水260份。
上述含复合发酵果汁的凉茶饮料的制作方法,步骤如下:
(1)将蓝莓果汁25份和樱桃果汁20份混合均匀后,加热灭菌,灭菌温度为90℃,灭菌时间为15分钟,得到混合果汁;
(2)将混合果汁自然冷却到50℃;
(3)在冷却的混合果汁中加入其占混合果汁重量0.1%的菌种,在37℃条件下恒温发酵72小时后,得到复合发酵果汁;
(4)原料清洗:将夏枯草10份,昆布10份,佛手10份,枇杷叶10份,黄精10份,枸杞子10份,桑椹10份,百合10份,玉竹10份和甘草5份分别清洗;
(5)原料浸泡:将清洗干净的中药材分别进行浸泡25分钟;
(6)原料煎煮:将浸泡后的中药材进行煎煮,大火煮沸后小火煮2小时,得到煎煮液;然后将煎煮液用150目筛网过滤,得到滤液;将滤液再煎煮浓缩至相对密度为1.1g/cm3的浸膏;
(7)原料调配:将浸膏转移至饮料调配罐中,添加步骤(3)中所得到的复合发酵果汁,并添加纯化水260份搅拌均匀得到凉茶饮料液;
(8)灌装:将凉茶饮料液灌入饮料罐中,凉茶饮料液中心温度不低于85℃,封口;
(9)灭菌:将灌封好的饮料罐,装入卧式高压灭菌器中进行蒸汽灭菌,灭菌温度115℃,时间30分钟;
(10)灭菌后的饮料罐冷却至45℃以下,吹干饮料罐表面,即可。
其中,所述步骤(3)中的菌种包括酵母菌种和乳酸菌种,所述菌种的初始活菌数为1.0×10 7cfu/mL,其中酵母菌数:乳酸菌数为1:2。
实施例2
本发明所提供的一种含复合发酵果汁的凉茶饮料,按照重量份数配比,包括以下原料:蓝莓果汁20份,樱桃果汁15份,夏枯草5份,昆布5份,佛手5份,枇杷叶5份,黄精5份,枸杞子5份,桑椹5份,百合5份,玉竹5份,甘草3份和纯化水317份。
上述含复合发酵果汁的凉茶饮料的制作方法,步骤如下:
(1)将蓝莓果汁20份和樱桃果汁15份混合均匀后,加热灭菌,灭菌温度为90℃,灭菌时间为15分钟,得到混合果汁;
(2)将混合果汁自然冷却到50℃;
(3)在冷却的混合果汁中加入其占混合果汁重量0.1%的菌种,在37℃条件下恒温发酵72小时后,得到复合发酵果汁;
(4)原料清洗:将夏枯草5份,昆布5份,佛手5份,枇杷叶5份,黄精5份,枸杞子5份,桑椹5份,百合5份,玉竹5份和甘草3份分别清洗;
(5)原料浸泡:将清洗干净的中药材分别进行浸泡25分钟;
(6)原料煎煮:将浸泡后的中药材进行煎煮,大火煮沸后小火煮2小时,得到煎煮液;然后将煎煮液用150目筛网过滤,得到滤液;将滤液再煎煮浓缩至相对密度为1.1g/cm3的浸膏;
(7)原料调配:将浸膏转移至饮料调配罐中,添加步骤(3)中所得到的复合发酵果汁,并添加纯化水317份搅拌均匀得到凉茶饮料液;
(8)灌装:将凉茶饮料液灌入饮料罐中,凉茶饮料液中心温度不低于85℃,封口;
(9)灭菌:将灌封好的饮料罐,装入卧式高压灭菌器中进行蒸汽灭菌,灭菌温度115℃,时间30分钟;
(10)灭菌后的饮料罐冷却至45℃以下,吹干饮料罐表面,即可。
其中,所述步骤(3)中的菌种包括酵母菌种和乳酸菌种,所述菌种的初始活菌数为1.0×10 7cfu/mL,其中酵母菌数:乳酸菌数为1:2。
对比例
采用现有的五花凉茶,其原料为金银花3g、菊花4g、槐花3g、葛花4g和木棉花5g,冲泡成350ml的凉茶液。
实验例
将实施例1和实施例2所得复合发酵果汁的凉茶饮料,与对比例的五花凉茶在口味和解暑润喉效果上进行比较,通过选取10名凉茶品鉴者进行测试。
(1)使用方法:实施例1和实施例2为350ml易拉罐装饮料,开盖即饮,对比例为350ml冲泡凉茶液,每天服用一次,10天为一个周期;
(2)判断标准:品鉴者对凉茶风味、色泽、润喉效果进行评定;风味按照有无异味、有无苦味,有无香味综合进行评判,按照1-10分从低到高排列;色泽观察凉茶有无杂质,色泽是否均匀进行综合进行评判,按照1-10分从低到高排列;润喉按照饮用后喉咙是否润滑,是否具有清凉感觉综合进行评判(如果具有解暑效果能够加分),按照1-10分从低到高排列。
通过10名凉茶品鉴者测试打分平均值,得到下表数据:
通过对比可知,实施例1和实施例2的凉茶在风味、色泽、润喉效果均优于对照组的五花凉茶,具有显著技术进步,并且在实施例1和实施例2对比中,由于实施例1采用的果汁和中药材重量比例更高,能够达到更好的润喉效果。
尽管已用具体实施例来说明和描述了本发明,然而应意识到,在不背离本发明的精神和范围的情况下,可以做出许多其它的更改和修改。因此,这意味着在所附权利要求中包括属于本发明范围内的所有这些变化和修改。
Claims (6)
1.一种含复合发酵果汁的凉茶饮料,其特征在于,按照重量份数配比,包括以下原料:
蓝莓果汁20~25份,樱桃果汁15~20份,夏枯草5~10份,昆布5~10份,佛手5~10份,枇杷叶5~10份,黄精5~10份,枸杞子5~10份,桑椹5~10份,百合5~10份,玉竹5~10份,甘草1~5份。
2.根据权利要求1所述的一种含复合发酵果汁的凉茶饮料,其特征在于,按照重量份数配比,包括以下原料:
蓝莓果汁25份,樱桃果汁20份,夏枯草10份,昆布10份,佛手10份,枇杷叶10份,黄精10份,枸杞子10份,桑椹10份,百合10份,玉竹10份,甘草5份。
3.根据权利要求1所述的一种含复合发酵果汁的凉茶饮料,其特征在于,按照重量份数配比,包括以下原料:
蓝莓果汁20份,樱桃果汁15份,夏枯草5份,昆布5份,佛手5份,枇杷叶5份,黄精5份,枸杞子5份,桑椹5份,百合5份,玉竹5份,甘草3份。
4.根据权利要求1-3任一项所述的一种含复合发酵果汁的凉茶饮料,其特征在于,所述原料总计重量份数为400份,所述原料的余量为纯化水。
5.根据权利要求4所述的一种含复合发酵果汁的凉茶饮料,其特征在于,所述原料的制备方法,包括如下步骤:
(1)将蓝莓果汁和樱桃果汁混合均匀后,加热灭菌,灭菌温度为80-90℃,灭菌时间为10-15分钟,得到混合果汁;
(2)将混合果汁自然冷却到40-50℃;
(3)在冷却的混合果汁中加入其占混合果汁重量0.05-0.1%的菌种,在37℃条件下恒温发酵60~72小时后,得到复合发酵果汁;
(4)原料清洗:将夏枯草、昆布、佛手、枇杷叶、黄精、枸杞子、桑椹、百合、玉竹和甘草分别清洗;
(5)原料浸泡:将清洗干净的中药材分别进行浸泡15-25分钟;
(6)原料煎煮:将浸泡后的中药材进行煎煮,大火煮沸后小火煮2小时,得到煎煮液;然后将煎煮液用150目筛网过滤,得到滤液;将滤液再煎煮浓缩至相对密度为1.1g/cm3的浸膏;
(7)原料调配:将浸膏转移至饮料调配罐中,添加步骤(3)中所得到的复合发酵果汁,并添加纯化水搅拌均匀得到凉茶饮料液;
(8)灌装:将凉茶饮料液灌入饮料罐中,凉茶饮料液中心温度不低于60℃~85℃,封口;
(9)灭菌:将灌封好的饮料罐,装入卧式高压灭菌器中进行蒸汽灭菌,灭菌温度115℃,时间30分钟;
(10)灭菌后的饮料罐冷却至45℃以下,吹干饮料罐表面,即可。
6.根据权利要求5所述的一种复合发酵果汁的凉茶饮料的制备方法,其特征在于:所述步骤(3)中的菌种包括酵母菌种和乳酸菌种,所述菌种的初始活菌数为1.0×107cfu/mL,其中酵母菌数:乳酸菌数为1:2。
