技术领域
本发明属于豆制品卤制用卤油技术领域,更具体地说,涉及一种茶干及卤油的制作方法。
背景技术
卤,一种食品加工的方法,是指将经加工处理的大块或整形原料,放入卤汁中,加热煮熟,使卤汁的香鲜滋味渗透入原料内的食品加工方法。卤汁是选用八角、小茴香、甘草、山奈、老姜、桂皮、香果、草果、花椒等香料,按一定比例混合,入鲜汤熬制而成的一种汤汁。据考证,“卤”这种食品加工方法起源于夏商时期,人们将水、盐、香料和原料放入炊具中加热煮熟而食用,这是“卤”的雏形。随着时间的推移,卤制技术不断发展、成熟,经卤汁加工成熟的食品,不仅色泽美观,而且汁香味醇,深受消费者喜爱。
茶干,是一种高端豆制品,是名茶配食的佳品,故取名茶干,茶干的得名,源自南宋末年,文人雅士以之佐茶,闲暇时三五好友,各一杯清茶,配之六七块茶干,悠然自得,延续至今,仍受广大消费者喜爱。其中在茶干的制作工艺中,卤制即是影响其口感的关键步骤之一,因此,卤油的质量以及口感至关重要。但制作卤汁的技术含量相对较高,不易掌握,由于不同生产厂家生产所得卤汁的口感不同,从而导致其最终生产所得茶干等豆制品的口感与品质也就完全不同。目前,由于受卤汁生产工艺的限制,现有茶干生产用卤油的口感相对较差,从而影响最终生产所得茶干的口感。
经检索,中国专利号2011101314801,申请日为2011年5月19日,发明创造名称为:香辣卤油及其制备方法,该申请案涉及一种香辣卤油及其制备方法,其配方包括色拉油;调味料:鲜老姜,鲜大葱,糍粑辣椒,干花椒;香料:香果,草果,小茴香,砂仁,肉桂,三奈,八角,栀子,筚拨,白豆蔻,肉豆蔻,白芷,香茅草,香叶,排草,丁香,甘草,甘松,制备方法依次是:原料准备-熬制-油渣分离-冷却包装。
又如,中国专利号2017111815122,申请日2017年11月23号,发明创造名称为:一种卤油的制备方法,该申请案涉及一种卤油的制备方法,其包括以下制备步骤:取以下原料备用,八角、小茴香、山奈、香叶、白蔻、丁香、桂皮、甘草、草果、白芷、砂仁、洋葱、芹菜叶、香菜、大蒜、植物油、老姜、大葱、汉源花椒、郫县豆瓣、干辣椒、植物油,制备方法依次是:原料准备-加热-炒制-油渣分离-冷却。
上述两申请案在原料准备中均是直接将植物油或色拉油与各种香辛料混合后一起进行炒制,制得的卤油口感相对较差,难以满足人们对调味品口感的追求。
发明内容
1.发明要解决的技术问题
本发明的目的在于克服现有卤油口感不佳,从而影响所得茶干口感的不足,提供了一种茶干及卤油的制作方法。采用本发明的生产方法可以有效改善所得卤油的口感,其口感更加香醇,酱香味浓郁,从而可以有效保证生产所得茶干的香味更加浓郁醇正,更加符合现代人们对茶干产品的口感要求。
2.技术方案
为达到上述目的,本发明提供的技术方案为:
本发明的一种茶干及卤油的制作方法,其制作方法包括如下步骤:
步骤(1):原料准备,选取经过发酵的自制酱为原料;
步骤(2):熬制,向步骤(1)中加入水和香辛料,进行烧煮熬制;
步骤(3):榨干过滤,将步骤(2)中熬制好的酱打入榨干机进行榨干,待卤油充分榨干后将卤油和酱渣分别进行收集;
步骤(4):二次熬制,将步骤(3)中的收集的卤油放入酱渣中再次进行熬制,加入白糖、鸡精和盐;
步骤(5):沉淀过滤,将步骤(4)中熬制的卤油进行沉淀过滤并冷却,制得成品。
更进一步的,所述的步骤(2)中自制酱与水的加入量的比例为(1~2):(4~6)。
更进一步的,所述的步骤(2)中,将熬煮温度加热到100~120℃后,再继续熬煮30~35min。

2)在制曲池中放入温度计,使温度控制在35~40℃待曲菌长成微黄色时,进行翻曲;

采用本发明提供的技术方案,与现有技术相比,具有如下显著效果:
(1)本发明的一种茶干及卤油的制作方法,经过原料准备、熬制、榨干过滤、二次熬制、沉淀过滤的工艺过程,其中,将自制酱进行两次熬制,同时对其具体制作工艺参数,如自制酱与水的比例等进行优化设计,从而使得制出的卤油口感香醇,同时,还保留有酱中的豆香味,在满足香醇口感的同时还具有很好的营养价值,口味独特,用本发明的卤油制作的茶干香味浓郁,口感香醇,深受广大消费者喜欢。
(2)本发明的一种茶干及卤油的制作方法,自制酱在第一次熬制过程中,向其中加入香辛料,使制得的卤油中的香味能够更好地呈现出来,同时,还能促进食欲,具有防腐杀菌的功效;在第二次熬制过程中放入食盐、鸡精、白糖等调味料,通过对第二次熬制的温度和时间进行优化控制,从而既可以使得调味料充分融入到卤料中,同时又能够有效防止调味料挥发损失太多,进而可以保证卤油中味道的鲜美度。
(3)本发明的一种茶干及卤油的制作方法,对自制酱进行两次熬制,一方面,可以使得熬制出的卤油口味更加香醇,酱香味充分与辅料进行融合,另一方面,进行两次熬制可以使自制酱的利用率达到最高,且经过两次卤油的融合熬制,其纯度也达到了进一步提高,对于口感的提升发挥了巨大作用,同时,该制作过程中未添加任何防腐剂,均采用健康食材以及辅料,制得的卤油健康、安全、卫生,可放心食用。

为进一步了解本发明的内容,下面结合实施例对本发明作进一步的描述。
本发明的卤油的制作方法包括如下步骤:
步骤(1):原料准备,选取经过发酵的自制酱为原料;
步骤(2):熬制,向步骤(1)中加入水和香辛料,其中,自制酱与水的加入量的比例为(1~2):(4~6),进行烧煮熬制,将熬煮温度加热到100~120℃后,再继续熬煮30~35min;
步骤(3):榨干过滤,将步骤(2)中熬制好的酱打入榨干机进行榨干,待卤油充分榨干后将卤油和酱渣分别进行收集;
步骤(4):二次熬制,将步骤(3)中的收集的卤油放入酱渣中再次进行熬制,每550~560kg卤油中加入白糖、鸡精、盐的量分别为25~30kg、3~5kg、2~3kg,熬制温度控制在100~110℃,熬制10~15min;
步骤(5):沉淀过滤,将步骤(4)中熬制的卤油进行沉淀过滤并冷却制得成品,将卤油冷却至70~80℃,进行封装。

(5)入缸发酵:将制曲好的曲料按每缸190~200kg的曲料、285~290kg盐水混合均匀加入用清水洗好的酱缸中;
(6)翻缸:加入盐水的曲料间隔48小时翻缸一次,每隔18~20天进行感官检测,约180~220天时,经感官检验成熟的原酱,按批次抽样送化验室进行理化检验,合格后方可使用。需注意的是,下雨、天晴时及时盖盖、开盖,并做好防尘防杂物工作,其中,感官检验成熟的原酱是指通过观察待原酱发酵至金黄色时即可,理化检验即是对原酱中氨基酸态氮的含量以及盐分的含量进行检验,合格指标为氨基酸态氮含量大于1.2%,盐分在12~13%。
一种茶干的制作工艺,采用上述实施例中任一项所述的卤油对白干胚料进行卤煮,其中,茶干的添加量为660kg/550~560kg卤油。需要说明的是,本实施例中茶干制作过程中所涉及到的工艺为现有技术中的生产工艺,本发明对此不做要求,且本申请案中所用到的原酱除过上述方法也可用现有的黄豆原酱制备方法得到,但当采用本发明的原酱制备工艺时,可以进一步保证所得卤油的口感与品质。
目前,市场上的茶干种类较多,但由于受卤油生产工艺的限制,从而导致茶干口感相对较差,有待进一步改善。基于上述存在的问题,本申请的发明人经过了大量的实验研发,对其加工方法以及工艺配方,工艺参数进行不断优化设计,最终,通过将自制酱进行两次熬制以及通过对制作过程中的具体工艺参数,如两次熬制的温度、时间以及自制酱与水的比例等进行优化设计,从而使得制出的卤油口感香醇,同时还保留有酱中的豆香味,使豆香味、酱香味以及辅料香味有效融合在一起,因此在满足香醇口感的同时还具有很好的营养价值,口味独特,用其制出的茶干香味也是非常浓郁醇正,符合现代人们对茶干的口感要求,深受广大消费者喜欢。
最初发明人在研发过程中只对自制酱进行一次熬制,效果并不太理想,一次熬制出来的卤油口感略带豆腥味,其卤油本身的香味没有完全发挥出来,发明人通过大量实验研究发现,通过将一次熬制后的酱料进行压榨处理,然后将得到的卤油与酱渣混合再进行二次熬制处理,从而一方面,使得熬制出的卤油口味更加香醇,另一方面,对自制酱的利用率达到最高,并使酱香味及香料的香味充分融合到所得卤油中,且经过两次卤油的融合熬制,其纯度也达到了进一步提高,对于口感的提升发挥了巨大作用。尤其通过对两次熬制时的熬制温度和时间进行严格控制,从而可以进一步保证所得卤油的香味与口感,既实现酱香味、香辛料香味及调味剂味道的充分融合,同时又可以有效去除大豆本身的豆腥味,并防止调味料挥发过多对口感的影响。
实施例1
本实施例的一种茶干及卤油的制作方法,其具体制备方法如下:
步骤(1):原料准备,选取经过发酵的自制酱为原料;
步骤(2):熬制,向步骤(1)中加入水和香辛料,其中,自制酱与水的加入量的比例为1:4,进行烧煮熬制,将熬煮温度加热到100℃后,再继续熬煮30min;
步骤(3):榨干过滤,将步骤(2)中熬制好的酱打入榨干机进行榨干,待卤油充分榨干后将卤油和酱渣分别进行收集;
步骤(4):二次熬制,将步骤(3)中的收集的卤油放入酱渣中再次进行熬制,每550kg卤油中加入白糖、鸡精、盐的量分别为25kg、3kg、2kg,熬制温度控制在100℃,熬制10min;
步骤(5):沉淀过滤,将步骤(4)中熬制的卤油进行沉淀过滤并冷却制得成品,将卤油冷却至70℃,进行封装。

步骤(2):熬制,向步骤(1)中加入水和香辛料,其中,自制酱与水的加入量的比例为1.5:5,进行烧煮熬制,将熬煮温度加热到110℃后,再继续熬煮33min;
步骤(3):榨干过滤,将步骤(2)中熬制好的酱打入榨干机进行榨干,待卤油充分榨干后将卤油和酱渣分别进行收集;
步骤(4):二次熬制,将步骤(3)中的收集的卤油放入酱渣中再次进行熬制,每557kg卤油中加入白糖、鸡精、盐的量分别为27kg、4kg、2.5kg,熬制温度控制在110℃,熬制13min;
步骤(5):沉淀过滤,将步骤(4)中熬制的卤油进行沉淀过滤并冷却制得成品,将卤油冷却至75℃,进行封装。

(3)冷却拌料:将(2)中蒸煮好的黄豆冷却至34℃倒入搅拌机中,按比例加入面粉、麦麸和菌粉并搅拌均匀,其中面粉占酱总量的13%,麦麸占酱总量的24%,菌粉占酱总量的0.33‰,其余占比为黄豆的量;
(4)制曲:
1)将(3)搅拌好的黄豆倒入制曲池中,搪均匀,使得黄豆酱厚17cm,麦麸酱厚26cm;
2)在制曲池中放入温度计,使温度控制在36℃待曲菌长成微黄色时,进行翻曲;将温度控制好待曲菌长成黄绿色即可出料;
(5)入缸发酵:将制曲好的曲料按每缸195kg的曲料、287kg盐水混合均匀加入用清水洗好的酱缸中;
(6)翻缸:加入盐水的曲料间隔48小时翻缸一次,每隔19天进行感官检测,约200天时,经感官检验成熟的原酱,按批次抽样送化验室进行理化检验,合格后方可使用。

2)在制曲池中放入温度计,使温度控制在40℃待曲菌长成微黄色时,进行翻曲;将温度控制好待曲菌长成黄绿色即可出料;
(5)入缸发酵:将制曲好的曲料按每缸200kg的曲料、290kg盐水混合均匀加入用清水洗好的酱缸中;
(6)翻缸:加入盐水的曲料间隔48小时翻缸一次,每隔20天进行感官检测,约220天时,经感官检验成熟的原酱,按批次抽样送化验室进行理化检验,合格后方可使用。
一种茶干的制作工艺,采用上述实施例中任一项所述的卤油对白干胚料进行卤煮,其中,茶干的添加量为660kg/560kg卤油。
Claims (8)
1.一种茶干及卤油的制作方法,其特征在于:其制作方法包括如下步骤:
步骤(1):原料准备,选取经过发酵的自制酱为原料;
步骤(2):熬制,向步骤(1)中的自制酱中加入水和香辛料,进行烧煮熬制;
步骤(3):榨干过滤,将步骤(2)中熬制好的酱打入榨干机进行榨干,待卤油充分榨干后将卤油和酱渣分别进行收集;
步骤(4):二次熬制,将步骤(3)中收集的卤油放入酱渣中再次进行熬制,加入白糖、鸡精和盐;
步骤(5):沉淀过滤,将步骤(4)中熬制的卤油进行沉淀过滤并冷却,制得成品。
2.根据权利要求1所述的一种茶干及卤油的制作方法,其特征在于:所述的步骤(2)中自制酱与水的加入量的比例为(1~2):(4~6)。
3.根据权利要求2所述的一种茶干及卤油的制作方法,其特征在于:所述的步骤(2)中,当熬制温度加热到100~120℃后,再继续熬煮30~35min。
4.根据权利要求1所述的一种茶干及卤油的制作方法,其特征在于:所述的步骤(4)中,每550~560kg卤油中加入白糖、鸡精、盐的量分别为25~30kg、3~5kg、2~3kg。
5.根据权利要求4所述的一种茶干及卤油的制作方法,其特征在于:所述的步骤(4)中,二次熬制时,将混合料加热至100~110℃后继续熬制10~15min。
6.根据权利要求1-5中任一项所述的一种茶干及卤油的制作方法,其特征在于:所述自制酱的制作方法如下:
(1)浸泡清洗:将筛选好的黄豆倒入浸泡桶内,用水浸泡2~3小时,放入过滤池中将杂质过滤掉;
(2)蒸煮:将(1)中滤好的黄豆打入蒸锅中蒸煮,蒸锅不停的转动至蒸熟;
(3)冷却拌料:将(2)中蒸煮好的黄豆冷却至30~35℃后倒入搅拌机中,按比例加入面粉、麦麸和菌粉并搅拌均匀,其中面粉占酱总量的10~15%,麦麸占酱总量的20~25%,菌粉占酱总量的0.30~0.35‰,其余占比为黄豆的量;
(4)制曲:
1)将步骤(3)中搅拌好的黄豆倒入制曲池中,搪均匀,使得黄豆酱厚15~20cm,麦麸酱厚25~30cm;
2)在制曲池中放入温度计,使温度控制在35~40℃,待曲菌长成微黄色时,进行翻曲;将温度控制好待曲菌长成黄绿色即可出料;
(5)入缸发酵:将制曲好的曲料按每缸190~200kg的曲料、285~290kg盐水混合均匀加入用清水洗好的酱缸中;
(6)翻缸:加入盐水的曲料间隔48小时翻缸一次,每隔18~20天进行感官检测,约180~220天时,经感官检验成熟的原酱,按批次抽样送化验室进行理化检验,合格后方可使用。
7.一种茶干的制作工艺,其特征在于:采用权利要求1-6中任一项所述的卤油对白干胚料进行卤煮。
8.根据权利要求7所述的一种茶干的制作工艺,其特征在于:所述茶干的添加量为660kg/550~560kg卤油。
