With the continuous improvement of living standard of people, more and higher requirements are put on meat products, which not only require more varieties, sufficient quantity and high quality, but also pay more attention to the safety and sanitation of meat products. The problem to be solved in the industrial production of the traditional meat product enterprises is how to effectively prolong the shelf life of the sauced marinated products and ensure the safety and sanitary quality of the sauced marinated products.
The traditional sauce braised meat products are all prepared by adopting a vacuum packaging method and a high-temperature high-pressure sterilization method to prolong the shelf life of the products. Although the sterilization mode can effectively kill all microorganisms and partial spores, the flavor and the taste of the meat product are greatly influenced after the meat product is sterilized at high temperature and high pressure. Meanwhile, the sauce braised meat product packaged in vacuum is extruded by the package, so that the appearance quality of the sauce braised meat product is influenced.
Modified Atmosphere Packaging (MAP) technology is a preservation technology which uses one or more mixed gases to replace the air in food packaging bags, inhibits the putrefaction of products and prolongs the food preservation period.
