step 4) holding the handle 1 by hand, inserting the guide blade 7 into a gap between a first blade and a second blade from the outer side of a blade shaft of the meat mincing slicer, enabling the arc-shaped contact surface 11 of the guide blade 7 to be in contact with the outer side of the blade shaft of the meat mincing slicer, clamping two grinding wheels 5 with gaps on the first blade, enabling the sand sheet on the grinding wheels 5 to be lightly pressed on the first blade, enabling the two grinding wheels 5 and the ground first blade to be arranged on the same straight line, and enabling the bottom end of the guide blade 7 to be lower than the axis of the blade shaft of the meat mincing slicer by 10-15 cm by adjusting the position of the pin shaft 9;

Referring to fig. 1 to 5, the invention relates to a universal knife grinder of a meat mincing slicer, which comprises a connecting rod 2 with a handle 1 at the end part and a bracket arranged at the outer side of the meat mincing slicer, wherein a spraying device is arranged on the bracket in a sliding manner, the other end of the connecting rod 2 is provided with a rotating shaft 3, the rotating shaft 3 is provided with a shaft sleeve 4, the shaft sleeve 4 is sleeved with grinding wheels 5 with sand blades, the grinding wheels 5 are two pieces symmetrically arranged through rivets, a gap is reserved between the two grinding wheels 5, the inner side edges of the two grinding wheels 5 are arc-shaped, the side wall of each grinding wheel 5 is provided with an observation hole 12, one end of the connecting rod 2 adjacent to the rotating shaft 3 is provided with a plurality of pin holes 6, the connecting rod 2 is provided with positioning holes 10 at the left lower side of the pin holes 6, the pin holes 6 and the positioning holes 10 on the connecting rod 2 are respectively connected with a plurality of through, an arc-shaped contact surface 11 is arranged at one side of the lower part of the guide vane 7, which is adjacent to the grinding wheel 5.

step 1) removing oil stains between blades of a meat grinder and slicer by using a cleaner, and scalding the oil stains between the blades by using edible alkaline water with the temperature of 60-95 ℃ and the concentration of 10-30%;
step 2), preparing enough clear water into a container for later use, and placing a waste water collecting container at the lower part of a blade of the meat mincing and slicing machine;
step 3) taking down the iron bar of the meat mincing and slicing machine, and temporarily fixing the upper cover of the meat mincing and slicing machine by using an adhesive tape or a binding belt;
step 4) holding the handle 1 by hand, inserting the guide blade 7 into a gap between a first blade and a second blade from the outer side of a blade shaft of the meat mincing slicer, enabling the arc-shaped contact surface 11 of the guide blade 7 to be in contact with the outer side of the blade shaft of the meat mincing slicer, clamping two grinding wheels 5 with gaps on the first blade, enabling the sand sheet on the grinding wheels 5 to be lightly pressed on the first blade, enabling the two grinding wheels 5 and the ground first blade to be arranged on the same straight line, and enabling the bottom end of the guide blade 7 to be lower than the axis of the blade shaft of the meat mincing slicer by 10-15 cm by adjusting the position of the pin shaft 9;
step 5) pressing the handle 1 downwards by external force and enabling the connecting rod 2 to be in contact with the outer wall of the meat grinding slicer, wherein a sand sheet on the grinding wheel 5 is in contact with the first blade, the first blade on the meat grinding slicer is started to rotate, the grinding wheel 5 rotates along with the first blade, clean water in the container in the step 2) is sprayed to the front end of the upper part of the grinding wheel 5 while rotating, the temperature of the blade is reduced, the first blade is ground by the grinding wheel 5 for 30 seconds, the work is stopped, the meat grinding slicer is continuously started and stopped for 4-6 times to remove burrs on the blade edge, and the second blade, the third blade and the last blade in a group of blades are ground in a circulating operation mode;

and 7) after the blades are ground, putting the iron bars, putting sufficient potato slices with the thickness of 2-3 mm into a meat mincing slicer for repeated mincing and cutting, taking out impurities on the blades and a blade shaft, repeatedly washing the potato slices with sufficient edible alkaline water with the temperature of 60-95 ℃ and the concentration of 10-30% until clear water flows out in a starting state, uniformly spraying soybean oil for maintenance after the blades are dried, and then standing for use.
