Abstract
本发明公开了一种白草莓刺李风味樱饼,以白草莓、刺李为原料,同时添加龙珠果、山莲藕、苦苣,制作出一种白草莓刺李风味樱饼。其充分利用白草莓、刺李的营养价值,与中药相互配伍,协同增效,具有清肺止咳、清热消肿的功效。制得的成品甜而不腻,入口爽滑,且保健功能突出,长期食用可明显改善肺热咳嗽人群的不适。其制作工艺简单,易于实现,市场情景广阔,需求量大,可以进行机械化生产。

[0005] 山莲藕,又名大力牛、大口唇、扮山虎、牛大力、扒山虎、坡莲藕、地藕、血藤、大莲 藕、大力薯、倒吊金钟,是豆科植物美丽崖豆藤的根。根系横伸颇长,中部或尾端有膨大、月巴 厚的块根,外皮土黄色。有润肺滋肾、清热止咳之功效,主治肺虚咳嗽。
[0006] 苦苣,别名野苣、褊苣、东北苦菜、兔仔菜,为菊科植物苦苣的全草或根。多年生草 本,高l5_3〇Cm。全株无毛。根茎柔弱,平生。叶大部分基生,具柄;叶片线形或线状长圆形,长 7-10cm,全缘或间有疏离的锯齿;茎叶少,无柄,有时略抱茎。头状花序小,组成一疏松、柔 弱、伞房花序式的圆锥花序。味苦,性寒,归肝、肺经,用于黄疸、胃炎、痢疾、肺热咳嗽、肠痈、 睾丸炎、疔疮、痈肿、黄水疮。
[0007] 樱饼,就是用粉红色的糯米类外皮,包上豆馅,最外层围上一枚樱叶子的小点心; 外观可爱,与粉红色樱花很接近,外面的樱花叶子还具有樱花特有的香气,口感清爽。樱叶 糕甜而不腻,入口爽滑,淡淡的樱花香气和甜甜的豆沙味,是一大美食。以白草莓、刺李为主 要原料,龙珠果、山莲藕、苦苣为保健原料,生产出一种白草莓刺李风味樱饼,目前还未见报 道和产品上市。
发明内容

[0009] —种白草莓刺李风味樱饼,采用以下步骤制作: A •白草莓预处理:取新鲜的白草莓,清洗干净,沥干体表水,倒入装有80-100目网筛的 打浆机中,再加入白草莓重10-15倍的牛奶进行打浆,制得白草莓浆,后加入白草莓汁重1-2%的酒曲,密封静置发酵,待酒精度达到〇. 5-1%体积比,结束发酵; B •刺李预处理:取表皮完整、新鲜的刺李,去核洗净,沥干体表水,倒入装有100-120网 筛的连续螺旋压榨机进行压榨,制得刺李果汁; C.中药材预处理:按一定比例取龙珠果、山莲藕、苦苣,加入中药材重8-13倍的水,入中 药煎煮机中,煎煮60-90分钟,制得中药浆; D•樱叶、樱花预处理:取适量盐渍樱叶、盐溃樱花,用清水洗净,后分别用温水浸泡备 用; E•糯米预处理:取糯米160-180重量份,入容器中,加入刺李果汁10-15重量份、水适量 浸没糯米,浸泡2-3小时,后捞出晾至半干,再倒入研磨机中研磨成粉,加入细砂糖20-25重 量份、楼花粉3-4重量份、中药浆3-5重量份、水适量,搅拌均匀,后入蒸锅中,蒸煮至熟备用; F•豆沙的制作:取红豆40-50重量份,凉水浸泡2-5小时后,入夹层锅中,加入水适量,蒸 煮至红豆软烂开花,倒入胶体磨磨碎,再入锅中,加入酶解白草莓浆10-15重量份、红糖10— 12重量份、黄油5-6重量份,翻炒至粘稠,冷却备用; G •成型:将煮熟的糯米分成大小一致的糯米团,取适量豆沙馅包入糯米团中,捏合成 团,放置于泡好的樱花叶上,后在表面点缀上樱花; H•包装、贮藏:将成品白草莓刺李风味樱饼用食品级包装物包装,经检验合格后,贮存 于阴凉、避光处。

[0017]实施例2,一种白草莓刺李风味樱饼,采用以下步骤制作: A •白草莓预处理:取新鲜的白草莓,清洗干净,沥千体表水,倒入装有80目网筛的打浆 机中,再加入白草莓重13倍的牛奶进行打浆,制得白草莓浆,后加入白草莓汁重1.5%的酒 曲,密封静置发酵,待酒精度达到0.9%体积比,结束发酵; B •刺李预处理:取表皮完整、新鲜的刺李,去核洗净,沥干体表水,倒入装有120网筛的 连续螺旋压榨机进行压榨,制得刺李果汁; C.中药材预处理:按重量比例取龙珠果19%、山莲藕17%、苦苣25%、金背枇杷果17%、石串 莲22%,加入中药材重1〇倍的水,入中药煎煮机中,煎煮70分钟,制得中药浆; D •樱叶、樱花预处理:取适量盐溃樱叶、盐渍樱花,用清水洗净,后分别用温水浸泡备 用; E. 糯米预处理:取糯米180kg,入容器中,加入刺李果汁15kg、水适量浸没糯米,浸泡2.5 小时,后捞出晾至半干,再倒入研磨机中研磨成粉,加入细砂糖22重量份、樱花粉4kg、中药 浆5kg、水适量,搅拌均匀,后入蒸锅中,蒸煮至熟备用; F. 豆沙的制作:取红豆50kg,凉水浸泡4小时后,入夹层锅中,加入水适量,蒸煮至红豆 软火二开花,倒入I父体磨磨碎,再入锅中,加入酶解白草每衆15kg、红糖12kg、黄油6kg,翻炒至 粘稠,冷却备用; G. 成型:将煮熟的糯米分成大小一致的糯米团,取适量豆沙馅包入糯米团中,捏合成 团,放置于泡好的樱花叶上,后在表面点缀上樱花; H. 包装、贮藏:将成品白草莓刺李风味樱饼用食品级包装物包装,经检验合格后,贮存 于阴凉、避光处。
[0018]金背枇杷果,为杜鹃花科植物陇蜀杜鹃的果实。陇蜀杜鹃,常绿灌木,高1-3米;幼 枝淡褐色,无毛;老枝黑灰色。叶革质,常集生于枝端,叶片卵状椭圆形至椭圆形,长6-10厘 米,宽3-4厘米,先端钝,具小尖头,基部圆形或略呈心形,上面深绿色,无毛,微皱,中脉凹 入,侧脉11-12对,微凹,下面初被薄层灰白色、黄棕色至锈黄色,多少粘结的毛被,由具长芒 的分枝毛组成,以后毛陆续脱落,变为无毛,中脉凸起,侧脉略凸。蒴果圆柱形,长1.2- 1.5cm,具6个槽,花柱宿存。味苦,性平,具有镇咳祛痰、清肺和胃、降气消暑的功效,主治肺 热咳嗽、呕吐、口渴。
[0019] 石串莲,别名小绿芨、美网石豆兰、小果上叶、石链子、石寸连、小石斛,为兰科植物 小绿石豆兰的假鳞茎。小绿石豆兰,附生植物。根茎匍匐,横生,多分枝,节多,节处丛生细而 长的须根,上面密生假鳞茎。假鳞茎绿色,肉质肥厚,长卵状圆柱形,顶端稍窄。叶单生于假 鳞茎的顶端,先端微凹或钝尖,基部楔形,全缘,中脉明显;无柄。具有润肺止咳、解毒消肿之 功效。用于肺痨咳嗽、气管炎、咽喉肿痛、乳痈、疮肿、跌打损伤。
