Abstract
本发明公开了一种适用于糖尿病患者的食品及其制备方法和应用。所述食品包括以下原料:鸡腿菇提取物、维生素混料和矿物质。本发明在鸡腿菇所含的营养成分的基础上,再适当添加维生素混料和矿物质,保证本发明的食品营养充分,能够为病人提供营养来源,还可辅助降低血糖,非常适合糖尿病患者食用,同时为今后糖尿病特定全营养配方食品的研发提供新思路。

技术领域
本发明涉及食品技术领域,具体是一种适用于糖尿病患者的食品及其制备方法和应用。
背景技术
糖尿病(DM)是一种由遗传和环境因素相互作用引起的胰岛素分泌绝对或相对不足及 (或)靶组织细胞对胰岛素生物学作用障碍(胰岛素敏感性降低)引起的糖、蛋白质、脂肪、水和电解质及多种激素调节紊乱的慢性代谢疾病,常导致各种器官、组织和各类血管功能不全和衰竭病变。随着医疗水平的提高,很多国家针对糖尿病采取预防措施,但是糖尿病的发病率仍然呈缓慢上升的趋势。中国糖尿病的患病率2010年全国流行学数据显示已经达到11.6%,中国成为全球糖尿病患病率和总患病人数位居前列的国家。
医学营养治疗(MNT)是治疗糖尿病的有效手段,MNT通过调整营养素结构、控制能量摄入,有利于血糖的控制以及改善胰岛素分泌、维持理想体重并预防营养不良的发生。人们对健康的重视程度随着生活水平的提高而逐步加强,为了满足人们的健康需求,特殊医学用途配方食品随之诞生。近几年来,国家相继出台了《特殊医学用途配方食品通则》、《特殊医学用途配方食品良好生产规范》、《特殊医学用途配方食品注册管理办法》、《特殊医学用途配方食品临床试验管理规范》等。特殊医学用途配方食品的研究、开发和利用,为糖尿病的营养治疗又提供了一种新的方法。
糖尿病特定全营养配方食品的能量和营养成分含量以全营养配方食品为基础,根据糖尿病患者对营养素的特殊要求适当调整,以满足糖尿病患者的营养需求。设计糖尿病特定全营养配方食品的原则和要求有:控制水化合物、脂肪、蛋白质三种营养素的功能比;适当添加膳食纤维、维生素和微量元素等。
目前国外上市的产品(瑞代、雅培安素、雀巢等)加入了能够延缓血糖释放的膳食纤维,但是不能从根本上降低血糖,在国内多以药品形式存在,以特医食品的形式上市还需要符合国家的相关规定。
发明内容
本发明的目的在于提供一种适用于糖尿病患者的食品及其制备方法和应用,以解决上述背景技术中提出的问题。
为实现上述目的,本发明提供如下技术方案:
一种适用于糖尿病患者的食品,包括以下原料:鸡腿菇提取物、维生素混料和矿物质。
作为本发明进一步的方案:包括以下重量份数的原料:鸡腿菇提取物90-95份,维生素混料0.05-0.5份,矿物质0.5-1份。
作为本发明进一步的方案:所述的维生素混料包括以下组分:维生素A、维生素D、维生素E、维生素K1、维生素B6、维生素B12、烟酸、叶酸、泛酸、生物素。
作为本发明进一步的方案:所述的维生素混料包括以下重量份数的组分:维生素A0.36 ×10-3-1.05×10-3份、维生素D 0.005×10-3-0.015×10-3份、维生素E 3×10-3-8×10-3份、维生素K1 0.02×10-3-0.07×10-3份、维生素B6 0.2×10-3-0.7×10-3份、维生素B120.0008 ×10-3-0.013×10-3份、烟酸2.2×10-3-2.7×10-3份、叶酸0.01×10-3-0.05×10-3份、泛酸 1.4×10-3-1.7×10-3份、生物素0.008×10-3-0.013×10-3份。
作为本发明进一步的方案:所述的矿物质包括以下组分:有钾、镁、钙。
作为本发明进一步的方案:所述的矿物质包括以下重量份数的组分:钾190×10-3-500 ×10-3份、镁9.7×10-3-10.2×10-3份、钙325×10-3-510×10-3份。
一种适用于糖尿病患者的食品的制备方法,包括以下步骤:
(1)将鸡腿菇子实体清洗干净后,加5倍重量的水煎煮1小时,浓缩得鸡腿菇提取物,备用;
(2)在鸡腿菇提取物中加入维生素混料和矿物质,混合均匀,得鸡腿菇混合物;
(3)将步骤(2)所得的鸡腿菇混合物干燥后制成粉状,过100目筛,再将灭菌、包装,即得成品。
一种食品用于制备糖尿病患者服用的食品。
与现有技术相比,本发明的有益效果是:

具体实施方式
下面结合具体实施方式对本专利的技术方案作进一步详细地说明。
实施例1
一、将100份鸡腿菇子实体清洗干净后,加5倍重量的水煎煮1小时,浓缩得鸡腿菇提取物90份,备用;
二、维生素混料的制备方法:将维生素A、维生素D、维生素E、维生素K1、维生素 B6、维生素B12份、烟酸、叶酸、泛酸和生物素混合均匀,并过100目筛,即得;所述维生素A、维生素D、维生素E、维生素K1、维生素B6、维生素B12、烟酸、叶酸、泛酸和生物素的重量比为0.36×10-3∶0.005×10-3∶3×10-3∶0.02×10-3∶0.2×10-3∶0.0008×10-3∶ 2.2×10-3∶0.01×10-3∶1.4×10-3∶0.008×10-3;
三、在鸡腿菇提取物中加入0.05份维生素混料;
四、矿物质的制备方法:将钾、镁和钙混合均匀,并过100目筛,即得;所述钾、镁和钙的重量比为190×10-3∶9.7×10-3∶325×10-3;
五、向步骤三所得物中加入矿物质0.5份,得鸡腿菇混合物;
六、将上步所得的鸡腿菇混合物置于60℃下干燥后,粉碎,过100目筛,再将灭菌、包装,按30g/袋封装,即得成品。
实施例2
一、将100份鸡腿菇子实体清洗干净后,加5倍重量的水煎煮1小时,浓缩得鸡腿菇提取物90份,备用;
二、维生素混料的制备方法:将维生素A、维生素D、维生素E、维生素K1、维生素 B6、维生素B12份、烟酸、叶酸、泛酸和生物素混合均匀,并过100目筛,即得;所述维生素A、维生素D、维生素E、维生素K1、维生素B6、维生素B12份、烟酸、叶酸、泛酸和生物素的重量比为1.05×10-3∶0.015×10-3∶8×10-3∶0.07×10-3∶0.7×10-3∶0.013× 10-3∶2.7×10-3∶0.05×10-3∶1.7×10-3∶0.013×10-3:
三、在鸡腿菇提取物中加入0.5份维生素混料;
四、矿物质的制备方法:将钾、镁和钙混合均匀,并过100目筛,即得;所述钾、镁和钙的重量比为500×10-3∶10.2×10-3∶510×10-3;
五、向步骤三所得物中加入矿物质1份,得鸡腿菇混合物;
六、将上步所得的鸡腿菇混合物置于60℃下干燥后,粉碎,过100目筛,再将灭菌、包装,按30g/袋封装,即得成品。
实施例3
一、将100份鸡腿菇子实体清洗干净后,加5倍重量的水煎煮1小时,浓缩得鸡腿菇提取物92份,备用;
二、维生素混料的制备方法:将维生素A、维生素D、维生素E、维生素K1、维生素 B6、维生素B12份、烟酸、叶酸、泛酸和生物素混合均匀,并过100目筛,即得;所述维生素A、维生素D、维生素E、维生素K1、维生素B6、维生素B12份、烟酸、叶酸、泛酸和生物素的重量比为0.85×10-3∶0.01×10-3∶5×10-3∶0.05×10-3∶0.5×10-3∶0.01×10-3∶ 2.4×10-3∶0.03×10-3∶1.5×10-3∶0.01×10-3;
三、在鸡腿菇提取物中加入0.2份维生素混料;
四、矿物质的制备方法:将钾、镁和钙混合均匀,并过100目筛,即得;所述钾、镁和钙的重量比为300×10-3∶10×10-3∶400×10-3;
五、向步骤三所得物中加入矿物质0.8份,得鸡腿菇混合物;
六、将上步所得的鸡腿菇混合物置于60℃下干燥后,粉碎,过100目筛,再将灭菌、包装,按30g/袋封装,即得成品。
本发明的理论依据:
鸡腿菇,又称毛头鬼伞、鸡腿蘑,是一种营养价值很高的真菌,根据研究发现,鸡腿菇能够降低血糖,是糖尿病病人的理想食物来源。鸡腿菇含有的营养非常丰富:1)糖含量57%,其中还原糖占53.5%;2)蛋白质含量高,含有17种氨基酸,其中人体不能合成的8种必需氨基酸占氨基酸总量的46.8%,有利于控制糖尿病患者的血脂;3)脂肪含量低,含有一些游离的脂肪酸,如亚油酸、亚麻酸、硬脂酸等;4)含有人体必需的宏量元素和微量元素,钠、钾、钙、镁、磷、铁、锰、铜、铬、钼、硒等,铬对人体许多生理功能的完成,特别是碳水化合物的代谢起着重要作用,三价铬可与烟酸形成具有生物活性的有机复合物,成为葡萄糖耐量因子;锰是多种酶的激活剂,能维持胰腺的正常功能;硒能明显促进细胞摄取糖的功能,具有与胰岛相同的调节糖代谢的生理活性,具有相似胰岛素的作用,可调节体内的糖分;锌是胰岛素的组成成分,协助葡萄糖在细胞膜上转运;糖尿病的一些并发症的发生和血清镁降低有关,如镁离子缺乏可造成眼和心脏的损伤,故糖尿病患者补充镁是有益的;人体胰岛β细胞需要在钙离子作用下才能分泌胰岛素,缺钙就势必促使糖尿病患者病情加重;5)VB 1、VB2、VC的含量也较高。VB1是构成脱羧辅酶的主要成分,为糖类代谢所必需,维持神经、心肌的活动机能,调节胃肠蠕动;VB2是辅黄酶主要成分,为体内氧化过程所必需,维持皮肤、粘膜和神经的健康,促进消化系统的功能,维持皮肤、口腔、和眼的健康,防止其病变;VC参与人体的羟化和还原过程,对细胞间粘合质、神经递质的合成,氨基酸代谢,抗体及红细胞的生产有重要作用;6)还含有一些粗纤维,能够延缓碳水化合物和脂类的吸收、改善脂代谢、提高机体对胰岛素的敏感性、增加饱腹感等。
鸡腿菇提取物按照份B 29922-2013《特殊医学用途配方食品通则》中适用于10岁以上人群的全营养配方食品的能量和营养成分的检验方法进行测定;若检验结果显示鸡腿菇提取物中缺乏某种(些)营养素或者营养素含量不够,则根据《特殊医学用途配方食品通则》的要求,在鸡腿菇提取物中添加适量营养素,使其符合标准;本发明再额外添加鸡腿菇中不含有的(或含量不够的)营养素和矿物质:维生素A、D、E、K1、B6、B12、烟酸、叶酸、泛酸、生物素、钾、镁、钙;其中,维生素A:能够促进生长发育和维持上皮组织的完整,增加皮肤黏膜的抵抗力,增强免疫,降低糖尿病患者眼睛病变的风险;维生素 D:促进肠道对钙、磷的吸收;维生素E:人体缺少维生素E容易患糖尿病,维生素E与β- 胡萝卜素有协同作用,抗氧化,清楚体内自由基,预防并发症;维生素K1:合成凝血酶原;维生素B6:参与神经、氨基酸、脂肪代谢;维生素B12:促进细胞的成熟,对神经的代谢有重要的作用;烟酸:烟酸在人体内转化为烟酰胺,烟酰胺是辅酶I和辅酶II的组成部分,参与体内脂质代谢,组织呼吸的氧化过程和糖类无氧分解的过程;叶酸:合成核苷酸;泛酸:是大脑和神经必须的物质,控制脂肪的代谢,维持肾上腺的机能,加强皮肤的水合功能;10)生物素:可作为多种羧化酶的辅酶,在脂肪合成、糖质新生等生化反应途径中扮演重要角色。
本发明在鸡腿菇所含的营养成分的基础上,根据规定,再适当添加维生素混料和矿物质,保证本发明的食品营养充分,能够为病人提供营养来源,还可辅助降低血糖,非常适合糖尿病患者食用,同时为今后糖尿病特定全营养配方食品的研发提供新思路。
上面对本专利的较佳实施方式作了详细说明,但是本专利并不限于上述实施方式,在本领域的普通技术人员所具备的知识范围内,还可以在不脱离本专利宗旨的前提下作出各种变化。

1.一种适用于糖尿病患者的食品,其特征在于,包括以下原料:鸡腿菇提取物、维生素混料和矿物质。
2.根据权利要求1所述的适用于糖尿病患者的食品,其特征在于,包括以下重量份数的原料:鸡腿菇提取物90-95份,维生素混料0.05-0.5份,矿物质0.5-1份。
3.根据权利要求1所述的适用于糖尿病患者的食品,其特征在于,所述的维生素混料包括以下组分:维生素A、维生素D、维生素E、维生素K1、维生素B6、维生素B12、烟酸、叶酸、泛酸、生物素。
