背景技术
[0002] 面条具有蒸、煮、炒、烩、炸、拌等多种食用方法,而且冷热皆可,风味多样、食用方 便,广受世界各地人们的喜爱。但是传统面条是以精制小麦粉为原料加工而成的面食品。谷 类中小麦与黑麦、大麦都含有麸质。麸质是一系列单一蛋白质的混合物,包括醇溶谷蛋白和 谷蛋白,醇溶谷蛋白又称为麸朊,对于大多数人来说麸质是很普通的蛋白质,容易被胃肠道 消化。然而少部分人却不能消化麸质蛋白,导致乳糜泻或麸质蛋白不适应症。患有这种疾病 的人食用含有麸质蛋白的食物时,自身免疫功能紊乱,小肠内层茸毛破坏,发生吸收障碍而 营养不良。无麸质饮食,指完全不含麸质的食品。可用于治疗乳糜泻与麸质过敏患者。如玉 米、荞麦、蔬菜、食用菌、马铃薯、豆类、肉类、海产品、坚果、米类等食物原料都是无麸质食 品。无麸质食品具有明显减轻体重、降低胆固醇、预防乳糜泻或麸质蛋白不适应症,而且还 使患有关节痛、自动免疫和神经失常的患者受益。发达国家无麸质食品备受推崇,但价格高 于普通含麸质食品。
[0003] 某些物质进入人体后能够导致部分人的免疫系统发生异常反应,这些物质称为过 敏原,是造成人体过敏的罪魁祸首。变应原大多是一些大分子物质,如某种蛋白质或多肽 等,常见的变应原有食物(小麦、花生、大豆、坚果类、牛奶、鸡蛋、鱼和甲壳类动物等,由食品 过敏引发的过敏疾病已占过敏总数的90%左右)、吸入物(花粉、屋尘、螨等)、微生物(霉菌、 细菌等)以及昆虫毒素、药物(如青霉素、磺胺等)、异种血清和物理因素等。上述物质可以通 过食入、吸入、接触及注射等途径进入体内。大分子物质直接作为抗原、小分子物质(半抗 原)可以与体内的某些物质结合,形成新的抗原(变应原)。变应原第一次进入体内后可造成 机体的致敏状态,当这些物质再次进入体内后便发生过敏反应。激发患者免疫系统的异常 活动,最终造成一系列过敏性伤害。
[0004] 由于玉米、马铃薯、银耳不含面筋蛋白,也不含致敏成分,是生产无麸质、无过敏食 品的良好原料。但是以未经特殊处理玉米、马铃薯、银耳为原料调制的面团有黏性、无弹性 及延伸性,不具有面条加工所需要的物性,无法用于面条的生产,目前几乎未被用于餐桌主 食面条的生产原料。采用玉米、马铃薯为主要原料,进行物性改良,经过科学合理的配伍并 采用先进的技术生产无过敏源、无麸质方便面条,是充分利用食物成分及性味互补原则生 产的无过敏无麸质食品,不但适合乳糜泻或麸质蛋白不适应症人群,也是其他消费人群的 健康食品。
发明内容
[0005] 本发明提供一种无麸质无过敏玉米马铃薯营养面条及其生产方法,以解决目前小 麦粉面条制品含麸质及其他过敏原成分所带来的营养缺陷,以及加工中食品添加剂添加种 类过多、添加量过大的问题,为消费者提供一种兼备粮蔬营养素健康安全的面条制品。
[0006]本发明采取的技术方案是,由下列步骤得到的: (一) 原辅料物性改良及面条预拌粉的制备 按质量份数取干燥洁净玉米籽粒100份、马铃薯全粉25〜35份,干燥洁净银耳1〜2份, 混合均匀,按总质量的8〜12倍加饮用水进行湿法研磨破碎,水中含〇. 2〜〇. 4%的维生素C, 研磨后得到可全部通过120〜160目孔径筛的浆料,于30〜45r常压螺杆挤出保温回流处 理,连续将挤出物料回流送入挤出机进料口,循环进行处理,处理时间6〇〜9〇min,然后将楽 料40〜45°C条件下低温薄层干燥、粉碎得到含水量24〜32%、粒度120〜160目的面条预拌 粉,备用; (二) 成型、冷却、复蒸软化与成熟 将步骤(一)所得面条预拌粉按其质量加入0 • 2〜0 • 5%的碳酸氢钠,混合均匀,于80〜90 °〇条件下短程单螺杆挤出成型得到厚度1〜2mm、宽度3〜5mm的湿面条,螺杆长度25〜40cm、 直径16〜20cm,螺纹高度2〜3cm,螺纹间隙lcm,将湿面条平铺自然冷却20〜40min,然后通 过隧道式蒸汽炉,120 °C蒸汽复蒸软化处理3〜8min,然后送入成熟隧道,50〜75 °C、相对湿 度75〜80%,保温保湿成熟处理3〜6h,备用; (三) 保湿干燥 将步骤(二)所得湿面条在30〜45°C、相对湿度5〇〜60%的条件保湿干燥至含水量12〜 I3%,然后包装,即为无麸质无过敏玉米马铃薯营养面条。产品蒸煮性好,不混汤不断条,口 感柔润、细腻、劲道。

[0008] 本发明优点是:采用玉米及马铃薯为主要原料,而少量银耳的使用,不但增加产品 中银耳蛋白、银耳多糖及银耳胶质等特殊食用菌营养成分,赋予制品更高营养价值,同时改 善面条结合力;另外在加工过程中尽量采用中低温操作,最大限度保留原料中天然营养成 分,发^军玉米、马铃薯、银耳之间营养成分互补优势,赋予制品较高的营养保健作用。按本发 明生产的玉米马铃薯面条复水性好,蒸煮性好,柔韧性适当,弹性足,面条无断头、无破碎, 本发明产品不含麸质,不含致敏性原料,产品适应面广,满足过敏体质人群的健康需求,本 发明不添加任何增筋剂、增稠胶质、酶制剂及防腐剂,不使用任何化学试剂,保证产品食用 安全,产品生产中无污染,无废渣、废汽及有害物质产生。
具体实施方式
[0009] 本发明玉米原料为普通粮食及工业用玉米的成熟籽粒,马铃薯任何品种均可。 [0010] 实施例1 (一)原辅料物性改良及面条预拌粉的制备 按质量份数取干燥洁净玉米籽粒1〇〇份、马铃薯全粉25份,干燥洁净银耳丨份,混合均 匀,按总质量的8倍加饮用水进行湿法研磨破碎,水中含〇. 2%的维生素C,研磨后得到可全部 通过120目孔径筛的浆料,于3(TC常压螺杆挤出保温回流处理,连续将挤出物料回流送入挤 出机进料口,循环进行处理,处理时间60min,进一步提高物料体系均匀度及细腻度,同时使 物料中蛋白质、淀粉、纤维素等天然成分的空间组织结构得到软化、梳理、混合,形成稳定的 交织结构,增强物料的结合力,赋予面条面团所需要的物性。常压挤出回流处理操作为单双 混合螺杆挤出回流操作,首先物料流经短程单螺杆挤出机,螺杆长度25cm,直径56mm;然后 直接进入长轴双螺杆,螺杆长度120cm,螺杆直径60mm,如此循环进行达到处理时间为止。然 后将浆料40°C条件下低温薄层干燥、粉碎得到含水量24%、粒度120目的面条预拌粉,备用; (二) 成型、冷却、复蒸软化与成熟 ^将步骤(一)所得面条预拌粉按其质量加入0.2%的碳酸氢钠,混合均匀,于8(TC条件下 短fe单螺杆挤出成型得到厚度lmm、宽度3mm的湿面条,螺杆长度25cm、直径16 cm,螺纹高度 2cm,螺纹间隙lcm,将湿面条平铺自然冷却2〇min,然后通过隧道式蒸汽炉,12〇。(:蒸汽复蒸 软化处理3min,然后送入成熟隧道,5(TC、相对湿度75%,保温保湿成熟处理3h,备用; (三) 保湿干燥 将步骤(二)所得湿面条在3〇°C、相对湿度5〇%的条件保湿干燥至含水量12%,然后包装, 即为无麸质无过敏玉米马铃薯营养面条。产品蒸煮性好,不混汤不断条,口感柔润、细腻、劲 道。

Claims (6)
1. 一种无麸质无过敏玉米马铃薯营养面条,其特征在于,由下列步骤得到的: (一) 原辅料物性改良及面条预拌粉的制备 按质量份数取干燥洁净玉米籽粒100份、马铃薯全粉25〜35份,干燥洁净银耳1〜2份, 混合均勾,按总质量的8〜12倍加饮用水进行湿法研磨破碎,水中含〇.2〜〇.4%的维生素C, 研磨后得到可全部通过120〜160目孔径筛的浆料,于30〜45-C常压螺杆挤出保温回流处 理,连续将挤出物料回流送入挤出机进料口,循环进行处理,处理时间60〜90min,然后将浆 料40〜45°C条件下低温薄层干燥、粉碎得到含水量24〜32%、粒度120〜160目的面条预拌 粉,备用; (二) 成型、冷却、复蒸软化与成熟 将步骤(一)所得面条预拌粉按其质量加入〇. 2〜〇 • 5%的碳酸氢钠,混合均匀,于80〜90 °C条件下短程单螺杆挤出成型得到厚度1〜2瞧、宽度3〜5mm的湿面条,螺杆长度25〜40cm、 直径16〜2〇 cm,螺纹高度2〜3 cm,螺纹间隙1 cm,将湿面条平铺自然冷却2〇〜4〇min,然后通 过隧道式蒸汽炉,120°C蒸汽复蒸软化处理3〜8min,然后送入成熟隧道,50〜75。(:、相对湿 度75〜80%,保温保湿成熟处理3〜6h,备用; (三) 保湿干燥 将步骤(二)所得湿面条在3〇〜45°C、相对湿度50〜60%的条件保湿干燥至含水量12〜 13%,然后包装,即为无麸质无过敏玉米马铃薯营养面条。
2.产品蒸煮性好,不混汤不断条,口感柔润、细腻、劲道。
3.根据权利要求1所述的一种无麸质无过敏玉米马铃薯营养面条,其特征在于,所述常 压螺杆挤出回流处理操作为:单、双混合螺杆挤出回流操作,首先物料流经短程单螺杆挤出 机,螺杆长度25cm,直径56臟;然后直接进入长轴双螺杆,螺杆长度i2〇cm,螺杆直径60mm,如 此循环进行达到处理时间为止。
4.一种无麸质无过敏玉米马铃薯营养面条的生产方法,其特征在于,包括下列步骤: (一) 原辅料物性改良及面条预拌粉的制备 按质量份数取干燥洁净玉米籽粒100份、马铃薯全粉25〜35份,干燥洁净银耳1〜2份, 混合均匀,按总质量的8〜12倍加饮用水进行湿法研磨破碎,水中含〇.2〜0.4%的维生素C, 研磨后得到可全部通过12〇〜160目孔径筛的浆料,于30〜45。(:常压螺杆挤出保温回流处 理,连续将挤出物料回流送入挤出机进料口,循环进行处理,处理时间60〜90min,然后将浆 料40〜45°c条件下低温薄层干燥、粉碎得到含水量24〜32%、粒度120〜160目的面条预拌 粉,备用; (二) 成型、冷却、复蒸软化与成熟 将步骤(一)所得面条预拌粉按其质量加入0 • 2〜0.5%的碳酸氢钠,混合均匀,于80〜90 1条件下短程单螺杆挤出成型得到厚度1〜2臟、宽度3〜5mm的湿面条,螺杆长度25〜40cm、 直径16〜20cm,螺纹高度2〜3cm,螺纹间隙lcm,将湿面条平铺自然冷却20〜4〇min,然后通 过隧道式蒸汽炉,120°C蒸汽复蒸软化处理3〜8min,然后送入成熟隧道,50〜75。(:、相对湿 度75〜S0%,保温保湿成熟处理3〜6h,备用; (三) 保湿干燥 将步骤(二)所得湿面条在3〇〜45°C、相对湿度50〜60%的条件保湿干燥至含水量12〜 13%,然后包装,g卩为无麸质无过敏玉米马铃薯营养面条。 b •广iffi黑須;饪奸,个混汤小断条,口感柔润、细腻、劲道。
