Abstract
本发明公开了一种具有补肝肾、健脾胃、壮筋骨作用的方便食品、又称调理食品及其制备方法。它是选用东北地区生长的黑豆、豇豆、芸豆等豆类同大米、小米等谷类进行科学搭配而成。由于它们的组成是谷类、豆类进行科学搭配,实现蛋白质互补,提高生物价,丰富了食物的营养。由于组成该食品的植物性食物含有较多的人体必须的不饱和脂肪酸及优质蛋白质;由于黑豆和小米中含有较多的谷氨酸;这些不仅可以供养脑细胞及机体各组织器官,而且对心血管疾病的预防也有一定益处。由于豇豆含有易于消化吸收的蛋白质等物质,可促进消化吸收,健胃补肾;特别是豇豆所含磷脂可促进胰岛素分泌,故又能辅助治疗糖尿病。

技术领域
本发明属于食品领域,特别是涉及一种百谷东北黑豆糊(黑豆豇豆型)[包括:百谷东北五谷杂粮糊 (豇豆杂粮型)]的方便食品、又称调理食品。
背景技术
十几年来,针对如何研制、开发出符合营养科学要求和食品安全标准的方便食品,本人通过学习、调 查和实践,从2005年开始到2013年主要进行了方便食品的研究,取得一些成果;从2014年开始到现在 经过三年多时间的研究、开发、试制、生产及销售,终于研制出一种新的方便食品、又称调理食品:“一 种具有补肝肾、健脾胃、壮筋骨作用的方便食品”。该食品的研制是根据现代营养学的研究成果与中医食 疗的观点相结合,通过植物性食物的科学搭配而制造的既符合营养要求、又能调整人体生理功能的方便食 品、又称调理食品。现将本发明食品的研制过程从以下三个方面论述:
一、为增强国民素质,选择优质原料。
要生产出符合营养科学要求和食品安全标准的方便食品,选择原料是关键。因此,经过调查决定选择下列地区生产的原料:1、黑豆、黄豆是选用黑龙江黑土地及一带种植的黑豆和黄豆;2、黑芸豆、芸豆是选用黑龙江黑土地及一带种植的黑芸豆和芸豆;3、豇豆是选用吉林省松原地区和白城地区以及辽宁省部分地区种植的豇豆;4、大米是选用长白山一带:梅河、柳河、辉南等地栽培的水稻;5、小米是选用吉林省松花江一带:松原地区和辽宁省朝阳地区种植的谷子。在选用以上原料时,按国家规定对原料的质量进行把关,使选用的原料符合国家标准。通过以上选择,收购优质农产品,不但可以促进农民在生产中精耕细作,生产出符合国家标准的、营养价值较高的优质农产品;而且也是发展区域经济、促进了生态农业和现代农业的发展。本发明“百谷东北黑豆糊(黑豆豇豆型)[包括:百谷东北五谷杂粮糊(豇豆杂粮型)]”中的“东北”代表东北特色,“黑豆豇豆型”主要是指由黑豆、黑芸豆、豇豆同大米、小米搭配而成;“豇豆杂粮型”主要是指由黄豆、豇豆、芸豆同大米、小米搭配而成。由于组成上述食品原料中的黑豆和黄豆都属于大豆,黑芸豆和芸豆都属于芸豆;因此,上述两个类型的食品属于一种食品。本发明食品中的“百谷”为商标品牌。
二、按现代营养学的观点,对原料进行科学搭配。
按现代营养学的观点,选择谷类、豆类进行科学搭配,实现蛋白质互补,提高生物价;丰富食物中的营养及其他功能性物质以满足机体代谢需要。1、大米又称粳米,为禾本科稻属植物稻(粳稻)去壳的种仁。大米是补充营养素的基础食物,除富含碳水化合物外,还含有蛋白质、脂肪、维生素及11种矿物质,能为人体提供全面的营养。大米中的碳水化合物主要是淀粉,所含的蛋白质主要是米谷蛋白,其次是米胶蛋白和球蛋白。大米蛋白质具有优良的营养品质,主要有三点:第一,赖氨酸(第一限制性氨基酸)含量高的碱溶性谷蛋白占80%,其赖氨酸含量约占总蛋白的3.5%,比其他谷物籽粒高。第二,大米蛋白的氨基酸组成配比比较合理,仅赖氨酸和苏氨酸较欠缺。第三,蛋白质利用率高。大米蛋白质与其他谷物蛋白质相比较,其生物效价和蛋白质功效比值都好。2、小米又称粟米,为禾本科狗尾草属植物梁或粟的种仁。粟米能供给人体丰富的营养,它的粟粒中含有较多的蛋白质、脂肪、糖类、维生素和矿物质。100克粟米含蛋白质9.7克,比大米高;含脂肪1.7克,碳水化合物76.1克。粟米除赖氨酸外,其余七种必须氨基酸的含量均高于大米、玉米和小麦,特别是粟米中含有较多的谷氨酸,这些谷氨酸都有健脑作用;粟米的脂肪含量也高于大米和小麦,约80%的脂肪酸为不饱和脂肪酸;粟米脂肪中的维生素E含量较高,有益于促进人体内分泌活动;粟米富含矿质元素包括:钙、磷、铁、镁、硒、锌等;粟米中含有的维生素B1的含量位居所有粮食之首;特别是在一般粮食中不含有的胡萝卜素而在粟米每100克含量达0.12毫克。因此,粟米是一种具有较高营养价值的食品,被营养专家誉为“保健米”。3、黑大豆为大豆的一种,又称黑豆,为豆科大豆属植物大豆的黑色种子。黑豆一般可分为乌皮青仁豆和乌皮黄仁豆。乌皮青仁豆,又叫绿心豆,种皮乌黑,仁肉青色而得名。本发明选用此豆为原料,即黑大豆(乌皮青仁豆)。黑豆营养丰富,含有蛋白质、脂肪、维生素、微量元素等多种营养成分,同时又具有多种生物活性物质,如黑豆色素、黑豆多糖和异黄酮等。黑豆具有高蛋白、低热量的特性,黑豆中蛋白质含量高达36%~40%,黑豆含有18 种氨基酸,特别是人体必须的8种氨基酸。黑豆含有19种油酸,其不饱和脂肪酸含量达80%,吸收率高达95%以上,除能满足人体对脂肪的需要外,还有降低血中胆固醇的作用;黑豆基本不含胆固醇,只含植物固醇,而植物固醇不被人体吸收利用,又有抑制人体吸收胆固醇、降低胆固醇在血液中含量的作用。黑豆中的异黄酮是一种植物雌激素,对降脂、抗动脉粥样硬化,抗肿瘤,抗氧化、抗衰老,防治骨质疏松,抗糖尿病及其并发症等都有一定的作用。黑豆中不饱和脂肪酸在人体内能转成卵磷脂,它是形成脑神经的主要成分;黑豆富含常量元素:钙、磷及微量元素:铁、锌、铜、镁、钼、硒、氟等含量都很高,其对防止大脑老化迟钝、健脑益智,延缓衰老,降低血液粘稠度等能发挥重要功效。黑豆中粗纤维含量高达4%,可以提供食物中粗纤维,能够帮助肠道蠕动,使肠内胀气与毒素顺利排除,改善便秘。黑豆皮提取物通过抑制人体内的“铁调素”,可以促进小肠、肝脏、脾脏铁动员,显著增加机体的血清铁水平、促进机体造血功能,改善贫血。黑豆含有丰富的维生素B群及维生素E,维生素E是一种相当重要的保持青春健美的物质,他能清除体内自由基,减少皮肤皱纹,与B族维生素配合共同发挥润肌肤、养颜美容的作用。黑豆中还含有多量的泛酸,对乌发也有帮助。4、黑芸豆为芸豆的一种、又称菜豆,是菜豆族菜豆属植物的一个栽培种。芸豆营养丰富,据测定,每百克芸豆含蛋白质23.1克、脂肪1.3克、碳水化合物56.9克、钙 76毫克及丰富的B族维生素,鲜豆还含丰富的维生素C。从所含营养成分看,蛋白质含量高于鸡肉,钙含量是鸡的7倍多,铁为4倍,B族维生素也高于鸡肉。芸豆中的皂苷类物质能降低脂肪的吸收功能,促进脂肪代谢,所含的膳食纤维还可减短食物通过肠道的时间起到减肥作用。芸豆是一种难得的高钾、高镁、低纳食品,每百克含钾1520毫克、镁193.5毫克、钠仅为0.8-0.9毫克,这个特点在营养治疗上大有用武之地。芸豆尤其适合心脏病、动脉硬化、高血脂、低血钾症和忌盐患者食用。现代医学分析认为,芸豆还含有皂苷、尿毒酶和多种球蛋白等独特成分,具有提高人体自身的免疫能力,增强抗病能力,激活淋巴 T细胞,促进脱氧核糖核酸的合成,对肿瘤细胞的发展有抑制作用,因而受到医学界的重视。其所含量尿素酶应用于肝昏迷患者效果很好。5、豇豆又称饭豆,是菜豆族豇豆属的一个栽培品种.豇豆种子营养价值较高,具有丰富的蛋白质、淀粉、各种矿物质和维生素,其蛋白质含有人体所需各种氨基酸。豇豆还是多种矿物元素和维生素的重要来源之一,特别是B族维生素及Ca、P等矿物质,高于谷类和某些动物食品,对补充膳食中微量营养素的不足有重要作用。豇豆所含磷脂可促进胰岛素分泌,是糖尿病人的理想食品;豇豆还含有易于消化吸收的蛋白质,对胃肠的消化吸收有帮助;豇豆含丰富维生素B、C和植物蛋白质,能使人头脑宁静、调理消化系统,消除胸膈胀满。可防治急性胃炎,呕吐腹泻。
三、按中医食疗的观点,对原料进行合理搭配
按中医食疗的观点,根据原料的性味、归经及作用功效进行合理搭配,使之能有选择地对人体某器官或组织发挥调整作用。调整人体的生理功能、促进人体的新陈代谢,以达到健身、强身、壮身和提高人体综合素质的目的。肾为人体的综合性功能单位,其生理功能范围较广,包括主管生长发育、主管生殖、主管水液代谢、主管纳气和濡养温煦脏腑五个方面。因此,要使人体健康并提高综合素质补肾是关键。本发明食品就是一种通过以补肾为主,调整人体各组织器官以达到增进健康的调理食品,因食用方便,又称方便食品。从组成本食品的原料看:第一,大米又称粳米,性味:甘,平。归脾、胃、肺经。具有补气健脾,除烦渴,止泻痢之功效。第二,小米又称粟米,性味:甘、咸,凉。归肾、脾、胃经。具有和中,益肾,除热,解毒之功效。第三,黑大豆为大豆的一种,又称黑豆,性味:甘,平。归脾、肾经。具有活血利水,祛风解毒,健脾益肾之功效。第四,黑芸豆为芸豆的一种,又称菜豆,性味:甘、淡,平。具有滋养,利尿消肿之功效。第五,豇豆又称饭豆,性味:甘、咸,平。归脾、肾经。具有健脾利湿,补肾涩精之功效。通过以上大米、小米、黑大豆、黑芸豆和豇豆这五种原料搭配后,使该食品具有益气,补肝肾,健脾胃,壮筋骨之功效。
综上所述,本发明食品通过选择优质原料,根据现代营养学和中医食疗的观点进行科学搭配,使该食品既符合营养要求、又能调整人体的生理功能。通过这两方面的调整,使之在人体内更好地发挥作用。首先,将组成本发明食品原料的谷类、豆类进行科学搭配后,实现蛋白质互补,提高生物价;丰富食物的营养及其他功能性物质;同时,食物中的营养素和其他功能性物质在体内还会发挥协同的调整作用,合理地调整机体的血管、神经、内分泌代谢的功能。其次,按中医食疗的观点,根据原料的性味、归经和作用功效进行合理搭配,使之有选择地作用于人体某器官或组织。通过以上两方面相互调节、调整,共同发挥作用;使之达到更好的效果。把方便食品的营养价值提高到一个新的水平!故此,本发明食品又称调理食品。本发明食品具有益气,补肝肾,健脾胃,壮筋骨之功效。有促进人体生长发育、增强活力,调理消化系统、消除胸膈胀满,美容护发,除烦渴,抗氧化,抗衰老,降血脂和辅助治疗糖尿病的作用。由于组成本食品原料中含有较多的人体必需的不饱和脂肪酸及优质蛋白质;由于黑豆、黄豆和小米中含有较多的谷氨酸;这不仅可以供养脑细胞及机体各组织器官,而且对心血管疾病的预防也有一定的益处。本发明食品是通过谷类、豆类进行科学搭配的具有较高营养价值的方便食品,又称调理食品;可供人们长期用膳。逐渐调整人体的生理功能,促进人体的新陈代谢;以达到健身、强身、壮身和延缓衰老的目的。

本发明的目的就是要公开一种“百谷东北黑豆糊(黑豆豇豆型)[包括:百谷东北五谷杂粮糊(豇豆杂粮型)]”的方便食品、又称调理食品及其制备方法,以达到增强人体综合素质的目的。
