本发明提供一种马蹄甘蔗保健酒的制备工艺,涉及酒精饮料技术领域,该马蹄甘蔗保健酒制备工艺包括以下步骤:(1)制备马蹄酒原酒、(2)制备酵母菌种子液、(3)制备甘蔗酒原酒、(4)制备功能助剂、(5)制备马蹄甘蔗保健酒;本发明的马蹄甘蔗保健酒营养全面充分,通过特定的配方,加上秘制制法,各食材的功效、口感得到最好的发挥,采用两段式低温发酵,得到绵甜、清爽、口感好、具有甘蔗天然的清香的保健酒,同时,该保健酒的酒精度数低,营养适口,适于广大消费者开怀畅饮。

【技术领域】
本发明涉及酒精饮料技术领域,具体涉及一种马蹄甘蔗保健酒的制备工艺。
【背景技术】
甘蔗味甘、性寒,归肺、胃经;具有清热解毒、生津止渴、和胃止呕、滋阴润燥等功效;主治口干舌燥,津液不足,小便不利,大便燥结,消化不良,反胃呕吐,呃逆,高热烦渴等。甘蔗中含有丰富的糖分、水分,此外,还含有对人体新陈代谢非常有益的各种维生素、脂肪、蛋白质、有机酸、钙、铁等物质。甘蔗不但能给食物增添甜味,而且还可以提供人体所需的营养和热量。
马蹄即荸荠,是莎草科荸荠属一种。地下茎为扁圆形,表面呈深褐色或枣红色。肉白色,可果蔬两食。马蹄汁液丰富,口感甜脆,含有丰富的蛋白质、脂肪、粗纤维、胡萝卜素、维生素B、维生素C、钾、铁、钙、磷和碳水化合物,可以生吃,也可以用来烹调,可制淀粉,还可作中药。马蹄味甘、微寒,滑、无毒,具有凉血消毒、利尿通便、祛痰止咳、消食除胀,调理痔疮或痢疾便血等功效。其钾含量较高,对高血压患者有利,磷含量也较高,能促进人体生长发育。
甘蔗与马蹄搭配,不仅口感好,而且具有促进肠胃消化、美容瘦身等保健功效,当前关于马蹄、甘蔗的酒种类较多,加工方法有直接发酵甘蔗原汁的果酒,也有发酵原汁后进行蒸馏的水果白酒或朗姆酒,还有调制而成的露酒,这些酒普遍存在酒精度较高,辣口感强,适口性差,清爽度不足等缺点,不宜作为低度果酒饮料而适于广大消费者畅饮。
【发明内容】
有鉴于此,本发明的目的在于提供了一种马蹄甘蔗保健酒的制备工艺,本发明的马蹄甘蔗保健酒营养全面充分,通过特定的配方,加上秘制制法,各食材的功效、口感得到最好的发挥,采用两段式低温发酵,得到绵甜、清爽、口感好、具有甘蔗天然的清香的保健酒,同时,该保健酒的酒精度数低,营养适口,适于广大消费者开怀畅饮。
为了解决上述技术问题,本发明采用了如下的技术方案:
一种马蹄甘蔗保健酒的制备工艺,所述制备工艺包括如下步骤:
(1)制备马蹄酒原酒:将马蹄清洗干净,然后将马蹄整果隔水蒸30-40min,以新鲜马蹄与饮用水按照质量比为1-3:5的比例混合后破碎成浆,得到马蹄浆,按马蹄浆质量百分比加入1.0-2.0%的淀粉酶,在40-60℃下酶解2-5h,加入适量蔗糖调初始发酵糖度为18-22%,再用食品级乙酸调初始发酵pH为6-7,然后按新鲜马蹄的质量百分比接入0.1-0.2%的酒曲,于发酵罐内发酵至马蹄酒醪液的糖度为50-70g/L,发酵温度为18-20℃;发酵完成后,将马蹄酒醪液置于1-2℃下低温沉淀1-2天,然后进行压榨过滤至过200-400目的筛布,得到马蹄酒原酒备用;此时所得马蹄酒原酒的糖度、酒精度、总酸分别为45-47g/L、8-9%Vol、4.5-5.0g/L;
(2)制备酵母菌种子液:将甘蔗洗净,压榨得到甘蔗汁,用蔗糖调甘蔗汁糖度至18%,然后接入酵母菌种,置于25-30℃下培养12-20小时,当菌体密度达到106-108个/mL时,即可得到酵母菌种子液备用;
(3)制备甘蔗酒原酒:将甘蔗洗净,压榨所得甘蔗汁进行酶解果胶预处理,将酶解处理后的甘蔗汁进行冷却,此时,测得甘蔗汁中的D-半乳糖醛酸含量达80-85mg/mL;按照其质量百分比加入10-15%酵母菌种子液,用食品级乙酸调节初始pH为4-5,用蔗糖调节初始糖度为20-24%,接着在12-17℃下发酵3-5天,然后过300-500目筛布,得到甘蔗酒原酒备用;此时,甘蔗酒原酒的糖度、酒精度、总酸分别为40-45g/L、7-9%Vol、2.5-3.0g/L的甘蔗酒原酒,为B品;
(4)制备功能助剂:将除杂洗净后的灵芝、黄柏、玉米须、玄参和百合按照质量比为4-6:3-5:1-2:1:1-3的比例混合,放入温度为80-100℃的烘干箱中干燥4-6h,然后再放入打粉机中粉碎为过30-40目的中草药粉,然后将中草药粉放入砂锅中,加入中草药粉总重量3-5倍,温度为50-60℃的水,浸泡5-10分钟,大火煮沸后用小火熬煮30-45分钟,过滤取滤液,得到的滤渣采用相同方法继续煎煮2次,最后合并3次煎煮所得滤液,得到功能助剂备用;
(5)制备马蹄甘蔗保健酒:将马蹄酒原酒、甘蔗酒原酒以及功能助剂以体积比2-3:2:0.3-0.5进行勾兑,得到复合酒液,接着按复合酒液的质量百分数加0.03-0.07%的酿酒酵母,然后置于8-12℃下后发酵3个月以上,其二氧化碳压力值可达到5-10×104Pa,实现清爽的口感,完成后发酵再置于1-2℃下冷却澄清,过500-800目筛,再经灭菌、灌装,即可得到成品;此时的马蹄甘蔗果酒的糖度、酒精度、总酸分别为20-35g/L、8-9%Vol、4.5-5.0g/L。
本发明中,进一步地,该马蹄甘蔗保健酒包括以下重量份的原料:所述步骤(3)中酶解果胶预处理的处理方法如下:按甘蔗汁质量百分比加入1-2%果胶酶,在55-65℃的温度下酶解2-3小时,酶解pH为2-3。
本发明中,进一步地,步骤(2)所述酵母菌为AS2.1190酵母菌种。
本发明中,进一步地,所述步骤(1)中的酒曲为自制酒曲,由以下重量份的原料制成:糯米粉200-300份、燕麦粉50-80份、山药30-50份、淡竹叶15-25份、银杏叶15-25份、辣蓼草10-20份、白术10-20份、芡实5-10份、香叶5-10份和水适量。
本发明中,进一步地,所述酒曲为自制酒曲,由以下重量份的原料制成:糯米粉250份、燕麦粉65份、山药40份、淡竹叶20份、银杏叶20份、辣蓼草15份、白术15份、芡实7份、香叶7份和水适量。
本发明中,进一步地,所述酒曲通过以下方法得到:
1)将称取的糯米粉和燕麦粉混合均匀后倒入干净的炒锅中,用文火翻炒至发出轻微糊味后,取出放在干燥处自然冷却至40-55℃,得到杂粮粉;将山药去皮,隔水蒸煮20-30分钟,取出捣烂成泥,然后将山药泥与杂粮粉混合,得到杂粮泥备用;
2)将称取的淡竹叶、银杏叶、辣蓼草、白术、芡实和香叶洗净晾干表面水分,放入温度为80-100℃的烘干箱中干燥4-6h,然后再放入打粉机中粉碎为过30-40目的中草药粉,然后将中草药粉放入砂锅中,加入中草药粉总重量3-5倍,温度为50-60℃的水,浸泡5-10分钟,大火煮沸后用小火熬煮30-45分钟,过滤取滤液,得到中草药液;
3)将步骤1)的杂粮泥和步骤2)的中草药液混合,加入适量水,反复揉捏得到能够用手搓成团且不散的混合物;
4)将步骤3)的混合物捏成直径为1-3cm的曲料,整齐地排放在铺有桑叶的簸箕中,在放置好的饼团上覆盖一层干净的稻草,然后将簸箕移入通风曲池,调节温度在30-35℃,每隔10-15个小时翻一次饼团,发酵至曲料表面70%以上区域出现细小白绒毛后,将饼团放至通风透气处自然风干或晒干至含水量不高于12%,即得所需酒曲。
本发明的功能助剂是由几味中草药制备而成,现将部分原料的功效做一下简介:
灵芝:味甘,性平,归肝、肺、肾经。可养心安神、养肺益气、理气化淤、滋肝健脾;主治虚劳体弱、神疲乏力、心悸失眠、头目昏晕、久咳气喘、食欲不振、反应迟钝、呼吸短促等症。
黄柏:味苦,性寒,归经肾、膀胱经。有清热燥湿,泻火解毒之功效。治热痢,泄泻,消渴,黄疸;梦遗,淋浊,痔疮,便血,亦白带下,骨蒸劳热,目赤肿痛,口舌生疮,疮疡肿毒。
玉米须:味甘、淡,性平,归脾、胃经。有益肺宁心、健脾开胃、利水通淋之功效。主治脾胃气虚、营养不良、动脉硬化、高血压、高脂血症、冠心病、肥胖、脂肪肝、癌症、记忆力减退、便秘、肾炎等症。
玄参:味甘、苦、咸,性微寒,归肺、胃、肾经。功能主治:凉血滋阴、泻火解毒。用于热病伤阴,舌绛烦渴,温毒发斑,津伤便秘。
百合:味甘,性平,归心、肺经。功能:润肺止咳,清心安神,补中益气,清热利尿,清热解毒,凉血止血,健脾和胃。主治:肺痨久嗽,咳唾痰血,百合病,心悸怔忡,失眠多梦,烦燥不安,心痛,喉痹,胃阴不足之胃痛,二便不利,浮肿,痈肿疮毒,脚气,产后出血,腹胀,身痛。
本发明所述酒曲采用糯米粉为主要原料,糯米中含有蛋白质、脂肪、糖类、钙、磷、铁、维生素B1、维生素B2、烟酸及淀粉等,营养丰富,为温补强壮食品,具有补中益气,健脾养胃,止虚汗之功效,对食欲不佳,腹胀腹泻有一定缓解作用;采用燕麦粉和山药为辅料,其中,燕麦富含镁和维生素B1,也含有磷、钾、铁、泛酸、铜和纤维,可以降低胆固醇,对脂肪肝、糖尿病、便秘等也有辅助疗效;山药具有滋养强壮,健脾益胃,助消化,敛虚汗,止泻之功效;另外,本发明所述酒曲中添加由淡竹叶、银杏叶、辣蓼草、白术、芡实和香叶组成的中草药粉,可以将中草药粉中的有效成分带入酒中,使得以此酒饼酿出来的山楂酒具有清热解毒,健脾益气,祛风利湿,补脾止泄,降低血压,提高抵抗力等功效。
综上所述,由于采用了上述技术方案,本发明的有益效果是:
1、本发明的马蹄甘蔗保健酒通过特定的配方,加上秘制制法,将各食材的功效最好的发挥,以马蹄甘蔗为主要原料,使得本发明产品不仅有令人愉悦的酒的香味,还具有马蹄甘蔗的清香,在制备过程中,本发明采用两段式低温发酵,第一阶段甘蔗原汁和马蹄原汁分别在低温条件下15℃下发酵,有效保留了甘蔗清香,抑制微生物不良代谢物的产生,保证原酒良好的气味和滋味等感官性状;第二阶段混合原酒在添加酵母菌种和蔗糖后在5-10℃下发酵3-6个月,既抑制了杂菌和不良副产物发生的反应,又保证在缓慢代谢产气过程中产生丰富的二氧化碳,实现清爽的口感,既赋予了产品特有的发酵酒风味,又有效保留了水果的营养和药理价值,其酒精度数适中,营养适口,适于广大消费者开杯畅饮。
2、本发明的马蹄甘蔗保健酒中酒曲原料采用自制酒曲,用特殊方法制成,酒曲中添加中草药成分,将药性带入酒中,使得以此酒曲酿出来的保健酒具有清热解毒,健脾益气,祛风利湿,补脾止泄,降低血压,提高抵抗力等功效。
3、本发明的马蹄甘蔗保健酒从配方到生产过程均不添加任何有害物质,且其制备过程简单,不需要进行繁琐的加工,免除了加工过程的成本费用,同时不添加任何有害化学制剂,天然健康,绿色安全,保健功能好,值得推广。
【具体实施方式】
下面的实施例可以帮助本领域的技术人员更全面地理解本发明,但不可以以任何方式限制本发明。
实施例1
本实施例所生产的马蹄甘蔗保健酒的制备工艺如下:
(1)制备马蹄酒原酒:将马蹄清洗干净,然后将马蹄整果隔水蒸30min,以新鲜马蹄与饮用水按照质量比为1:5的比例混合后破碎成浆,得到马蹄浆,按马蹄浆质量百分比加入1.0%的淀粉酶,在40℃下酶解2h,加入适量蔗糖调初始发酵糖度为18%,再用食品级乙酸调初始发酵pH为6,然后按新鲜马蹄的质量百分比接入0.1%的酒曲,于发酵罐内发酵至马蹄酒醪液的糖度为50g/L,发酵温度为18℃;发酵完成后,将马蹄酒醪液置于1℃下低温沉淀1天,然后进行压榨过滤至过200目的筛布,得到马蹄酒原酒备用;
其中,酒曲为自制酒曲,由以下重量份的原料制成:糯米粉200份、燕麦粉50份、山药30份、淡竹叶15份、银杏叶15份、辣蓼草10份、白术10份、芡实5份、香叶5份和水适量;酒曲通过以下方法得到:1)将称取的糯米粉和燕麦粉混合均匀后倒入干净的炒锅中,用文火翻炒至发出轻微糊味后,取出放在干燥处自然冷却至40℃,得到杂粮粉;将山药去皮,隔水蒸煮20分钟,取出捣烂成泥,然后将山药泥与杂粮粉混合,得到杂粮泥备用;2)将称取的淡竹叶、银杏叶、辣蓼草、白术、芡实和香叶洗净晾干表面水分,放入温度为80℃的烘干箱中干燥4h,然后再放入打粉机中粉碎为过30目的中草药粉,然后将中草药粉放入砂锅中,加入中草药粉总重量3倍,温度为50℃的水,浸泡5分钟,大火煮沸后用小火熬煮30分钟,过滤取滤液,得到中草药液;3)将步骤1)的杂粮泥和步骤2)的中草药液混合,加入适量水,反复揉捏得到能够用手搓成团且不散的混合物;4)将步骤3)的混合物捏成直径为1cm的曲料,整齐地排放在铺有桑叶的簸箕中,在放置好的饼团上覆盖一层干净的稻草,然后将簸箕移入通风曲池,调节温度在30℃,每隔10个小时翻一次饼团,发酵至曲料表面70%以上区域出现细小白绒毛后,将饼团放至通风透气处自然风干或晒干至含水量不高于12%,即得所需酒曲;
(2)制备酵母菌种子液:将甘蔗洗净,压榨得到甘蔗汁,用蔗糖调甘蔗汁糖度至18%,然后接入酵母菌种,置于25℃下培养12小时,当菌体密度达到106个/mL时,即可得到酵母菌种子液备用;其中,酵母菌为AS2.1190酵母菌种;
(3)制备甘蔗酒原酒:将甘蔗洗净,压榨所得甘蔗汁进行酶解果胶预处理,将酶解处理后的甘蔗汁进行冷却,酶解果胶预处理的处理方法如下:按甘蔗汁质量百分比加入1%果胶酶,在55℃的温度下酶解2小时,酶解pH为2;然后按照其质量百分比加入10%酵母菌种子液,用食品级乙酸调节初始pH为4,用蔗糖调节初始糖度为20%,接着在12℃下发酵3天,然后过300目筛布,得到甘蔗酒原酒备用;
(4)制备功能助剂:将除杂洗净后的灵芝、黄柏、玉米须、玄参和百合按照质量比为4:3:1:1:1的比例混合,放入温度为80℃的烘干箱中干燥4h,然后再放入打粉机中粉碎为过30目的中草药粉,然后将中草药粉放入砂锅中,加入中草药粉总重量3倍,温度为50℃的水,浸泡5分钟,大火煮沸后用小火熬煮30分钟,过滤取滤液,得到的滤渣采用相同方法继续煎煮2次,最后合并3次煎煮所得滤液,得到功能助剂备用;
(5)制备马蹄甘蔗保健酒:将马蹄酒原酒、甘蔗酒原酒以及功能助剂以体积比2:2:0.3进行勾兑,得到酒液,接着按酒液的质量百分数加0.03%的酿酒酵母,然后置于8℃下后发酵3个月以上,再置于1℃下冷却澄清,过500目筛,再经过灭菌、灌装,即可得到成品。
实施例2
本实施例所生产的马蹄甘蔗保健酒的制备工艺如下:
(1)制备马蹄酒原酒:将马蹄清洗干净,然后将马蹄整果隔水蒸35min,以新鲜马蹄与饮用水按照质量比为2:5的比例混合后破碎成浆,得到马蹄浆,按马蹄浆质量百分比加入1.5%的淀粉酶,在50℃下酶解3h,加入适量蔗糖调初始发酵糖度为20%,再用食品级乙酸调初始发酵pH为6,然后按新鲜马蹄的质量百分比接入0.15%的酒曲,于发酵罐内发酵至马蹄酒醪液的糖度为55g/L,发酵温度为19℃;发酵完成后,将马蹄酒醪液置于1℃下低温沉淀2天,然后进行压榨过滤至过300目的筛布,得到马蹄酒原酒备用;
其中,酒曲为自制酒曲,由以下重量份的原料制成:糯米粉250份、燕麦粉65份、山药40份、淡竹叶20份、银杏叶20份、辣蓼草15份、白术15份、芡实7份、香叶7份和水适量;酒曲通过以下方法得到:1)将称取的糯米粉和燕麦粉混合均匀后倒入干净的炒锅中,用文火翻炒至发出轻微糊味后,取出放在干燥处自然冷却至48℃,得到杂粮粉;将山药去皮,隔水蒸煮25分钟,取出捣烂成泥,然后将山药泥与杂粮粉混合,得到杂粮泥备用;2)将称取的淡竹叶、银杏叶、辣蓼草、白术、芡实和香叶洗净晾干表面水分,放入温度为90℃的烘干箱中干燥5h,然后再放入打粉机中粉碎为过35目的中草药粉,然后将中草药粉放入砂锅中,加入中草药粉总重量4倍,温度为55℃的水,浸泡7分钟,大火煮沸后用小火熬煮38分钟,过滤取滤液,得到中草药液;3)将步骤1)的杂粮泥和步骤2)的中草药液混合,加入适量水,反复揉捏得到能够用手搓成团且不散的混合物;4)将步骤3)的混合物捏成直径为1-3cm的曲料,整齐地排放在铺有桑叶的簸箕中,在放置好的饼团上覆盖一层干净的稻草,然后将簸箕移入通风曲池,调节温度在32℃,每隔12个小时翻一次饼团,发酵至曲料表面70%以上区域出现细小白绒毛后,将饼团放至通风透气处自然风干或晒干至含水量不高于12%,即得所需酒曲;
(2)制备酵母菌种子液:将甘蔗洗净,压榨得到甘蔗汁,用蔗糖调甘蔗汁糖度至18%,然后接入酵母菌种,置于27℃下培养16小时,当菌体密度达到107个/mL时,即可得到酵母菌种子液备用;其中,酵母菌为AS2.1190酵母菌种;
(3)制备甘蔗酒原酒:将甘蔗洗净,压榨所得甘蔗汁进行酶解果胶预处理,将酶解处理后的甘蔗汁进行冷却,酶解果胶预处理的处理方法如下:按甘蔗汁质量百分比加入2%果胶酶,在60℃的温度下酶解2.5小时,酶解pH为2;然后按照其质量百分比加入12%酵母菌种子液,用食品级乙酸调节初始pH为4,用蔗糖调节初始糖度为22%,接着在15℃下发酵4天,然后过400目筛布,得到甘蔗酒原酒备用;
(4)制备功能助剂:将除杂洗净后的灵芝、黄柏、玉米须、玄参和百合按照质量比为5:4:1:1:2的比例混合,放入温度为90℃的烘干箱中干燥5h,然后再放入打粉机中粉碎为过35目的中草药粉,然后将中草药粉放入砂锅中,加入中草药粉总重量4倍,温度为55℃的水,浸泡7分钟,大火煮沸后用小火熬煮38分钟,过滤取滤液,得到的滤渣采用相同方法继续煎煮2次,最后合并3次煎煮所得滤液,得到功能助剂备用;
(5)制备马蹄甘蔗保健酒:将马蹄酒原酒、甘蔗酒原酒以及功能助剂以体积比3:2:0.4进行勾兑,得到酒液,接着按酒液的质量百分数加0.05%的酿酒酵母,然后置于10℃下后发酵3个月以上,再置于1℃下冷却澄清,过650目筛,再经过灭菌、灌装,即可得到成品。
实施例3
本实施例所生产的马蹄甘蔗保健酒的制备工艺如下:
(1)制备马蹄酒原酒:将马蹄清洗干净,然后将马蹄整果隔水蒸40min,以新鲜马蹄与饮用水按照质量比为3:5的比例混合后破碎成浆,得到马蹄浆,按马蹄浆质量百分比加入2.0%的淀粉酶,在60℃下酶解5h,加入适量蔗糖调初始发酵糖度为22%,再用食品级乙酸调初始发酵pH为7,然后按新鲜马蹄的质量百分比接入0.2%的酒曲,于发酵罐内发酵至马蹄酒醪液的糖度为70g/L,发酵温度为20℃;发酵完成后,将马蹄酒醪液置于2℃下低温沉淀2天,然后进行压榨过滤至过400目的筛布,得到马蹄酒原酒备用;
其中,酒曲为自制酒曲,由以下重量份的原料制成:糯米粉300份、燕麦粉80份、山药50份、淡竹叶25份、银杏叶25份、辣蓼草20份、白术20份、芡实10份、香叶10份和水适量;酒曲通过以下方法得到:1)将称取的糯米粉和燕麦粉混合均匀后倒入干净的炒锅中,用文火翻炒至发出轻微糊味后,取出放在干燥处自然冷却至55℃,得到杂粮粉;将山药去皮,隔水蒸煮30分钟,取出捣烂成泥,然后将山药泥与杂粮粉混合,得到杂粮泥备用;2)将称取的淡竹叶、银杏叶、辣蓼草、白术、芡实和香叶洗净晾干表面水分,放入温度为100℃的烘干箱中干燥6h,然后再放入打粉机中粉碎为过40目的中草药粉,然后将中草药粉放入砂锅中,加入中草药粉总重量5倍,温度为60℃的水,浸泡10分钟,大火煮沸后用小火熬煮45分钟,过滤取滤液,得到中草药液;3)将步骤1)的杂粮泥和步骤2)的中草药液混合,加入适量水,反复揉捏得到能够用手搓成团且不散的混合物;4)将步骤3)的混合物捏成直径为3cm的曲料,整齐地排放在铺有桑叶的簸箕中,在放置好的饼团上覆盖一层干净的稻草,然后将簸箕移入通风曲池,调节温度在35℃,每隔15个小时翻一次饼团,发酵至曲料表面70%以上区域出现细小白绒毛后,将饼团放至通风透气处自然风干或晒干至含水量不高于12%,即得所需酒曲;
(2)制备酵母菌种子液:将甘蔗洗净,压榨得到甘蔗汁,用蔗糖调甘蔗汁糖度至18%,然后接入酵母菌种,置于30℃下培养20小时,当菌体密度达到108个/mL时,即可得到酵母菌种子液备用;其中,酵母菌为AS2.1190酵母菌种;
(3)制备甘蔗酒原酒:将甘蔗洗净,压榨所得甘蔗汁进行酶解果胶预处理,将酶解处理后的甘蔗汁进行冷却,酶解果胶预处理的处理方法如下:按甘蔗汁质量百分比加入2%果胶酶,在65℃的温度下酶解3小时,酶解pH为3;然后按照其质量百分比加入15%酵母菌种子液,用食品级乙酸调节初始pH为5,用蔗糖调节初始糖度为24%,接着在17℃下发酵5天,然后过500目筛布,得到甘蔗酒原酒备用;
(4)制备功能助剂:将除杂洗净后的灵芝、黄柏、玉米须、玄参和百合按照质量比为6:5:2:1:3的比例混合,放入温度为100℃的烘干箱中干燥6h,然后再放入打粉机中粉碎为过40目的中草药粉,然后将中草药粉放入砂锅中,加入中草药粉总重量5倍,温度为60℃的水,浸泡10分钟,大火煮沸后用小火熬煮45分钟,过滤取滤液,得到的滤渣采用相同方法继续煎煮2次,最后合并3次煎煮所得滤液,得到功能助剂备用;
(5)制备马蹄甘蔗保健酒:将马蹄酒原酒、甘蔗酒原酒以及功能助剂以体积比3:2:0.5进行勾兑,得到酒液,接着按酒液的质量百分数加0.07%的酿酒酵母,然后置于12℃下后发酵3个月以上,再置于2℃下冷却澄清,过800目筛,再经过灭菌、灌装,即可得到成品。
实验例
为了更清楚地说明本发明的特色,分4组做进行以下效果验证:
第一组:实施例1制作的马蹄甘蔗保健酒;
第二组:实施例2制作的马蹄甘蔗保健酒;
第三组:实施例3制作的马蹄甘蔗保健酒;
第四组:市售保健酒;
实验对象:120名身体健康的人员,平均分为4组,每组30人;
实验方法与时间:六组人食用上述四组饮品,每天食用一次,实验时间为一个月,实验完成后对实验人员进行问卷调查,其中,很好为“酒性温和,口感清爽,强身健体,健脾益气,增加食欲”,好为“香醇浓郁,补气养血”,一般为“温中益气,增加食欲”,差为“味道及口感无法接受或其他”。
实验结果如下表:

有上述实验结果得出:本发明的马蹄甘蔗保健酒适合所有人群食用,且具有酒性温和,口感清爽,强身健体,健脾益气,增加食欲的特点。
典型案例
(1)苏先生,42岁,广西南宁人,公司老总,经常熬夜,常年应酬,血脂含量高,身型肥胖,经常感到头晕、神疲乏力、失眠健忘、肢体麻木、胸闷、心悸等,经饮用本发明马蹄甘蔗保健酒两个月,这些症状消失,并且血脂也恢复到正常值。
(2)黄女士,43岁,广西贺州人,企业高管。平时工作忙,不注意保养,导致脸色发黄,面部褐斑增多,容易出油长痘,尝试很多高档护肤品都得不到很好的改善,后经饮用本发明马蹄甘蔗保健酒2个月后,气色慢慢恢复红润光彩,继续饮用2个月后面部褐斑也明显淡化。
(3)王先生,53岁,广西博白人,退休人员。由于以前在工厂上班,经常倒班熬夜,不按时休息,退休后经常出现有心悸、胸痛、胸闷、头痛、头晕、四肢凉麻、四肢酸懒等症状,经诊断患有轻度脑血栓,冠状动脉供血不足,吃了不少西药都无法根治,后经饮用本发明的马蹄甘蔗保健酒半个月后,头痛,胸闷等症状得到明显改善,手足麻木次数也减少了,继续饮用1个月,症状基本消除,精力变得更充沛了。
(2)王先生,50岁,广西桂林人,退休人员。由于以前在工厂上班,经常倒班熬夜,不按时休息,吃饭也不正常,退休后经常出现有胃痛,胃胀,消化不良等症状,后经饮用本发明的马蹄甘蔗保健酒半个月后,消化不良得到改善,胃口也比以前好很多。
虽然,上文中已经用一般性说明及具体实施方案对本发明作了详尽的描述,但在本发明基础上,可以对之作一些修改或改进,这对本领域技术人员而言是显而易见的。因此,在不偏离本发明精神的基础上所做的这些修改或改进,均属于本发明要求保护的范围。
Claims (6)
1.一种马蹄甘蔗保健酒的制备工艺,其特征在于,所述制备工艺包括如下步骤:
(1)制备马蹄酒原酒:将马蹄清洗干净,然后将马蹄整果隔水蒸30-40min,以新鲜马蹄与饮用水按照质量比为1-3:5的比例混合后破碎成浆,得到马蹄浆,按马蹄浆质量百分比加入1.0-2.0%的淀粉酶,在40-60℃下酶解2-5h,加入适量蔗糖调初始发酵糖度为18-22%,再用食品级乙酸调初始发酵pH为6-7,然后按新鲜马蹄的质量百分比接入0.1-0.2%的酒曲,于发酵罐内发酵至马蹄酒醪液的糖度为50-70g/L,发酵温度为18-20℃;发酵完成后,将马蹄酒醪液置于1-2℃下低温沉淀1-2天,然后进行压榨通过200-400目的筛布,得到马蹄酒原酒备用;
(2)制备酵母菌种子液:将甘蔗洗净,压榨得到甘蔗汁,用蔗糖调甘蔗汁糖度至18%,然后接入酵母菌种,置于25-30℃下培养12-20小时,当菌体密度达到106-108个/mL时,即可得到酵母菌种子液备用;
(3)制备甘蔗酒原酒:将甘蔗洗净,压榨所得甘蔗汁进行酶解果胶预处理,将酶解处理后的甘蔗汁进行冷却,按照其质量百分比加入10-15%酵母菌种子液,用食品级乙酸调节初始pH为4-5,用蔗糖调节初始糖度为20-24%,接着在12-17℃下发酵3-5天,然后过300-500目筛布,得到甘蔗酒原酒备用;
(4)制备功能助剂:将除杂洗净后的灵芝、黄柏、玉米须、玄参和百合按照质量比为4-6:3-5:1-2:1:1-3的比例混合,放入温度为80-100℃的烘干箱中干燥4-6h,然后再放入打粉机中粉碎为过30-40目的中草药粉,然后将中草药粉放入砂锅中,加入中草药粉总重量3-5倍,温度为50-60℃的水,浸泡5-10分钟,大火煮沸后用小火熬煮30-45分钟,过滤取滤液,得到的滤渣采用相同方法继续煎煮2次,最后合并3次煎煮所得滤液,得到功能助剂备用;
(5)制备马蹄甘蔗保健酒:将马蹄酒原酒、甘蔗酒原酒以及功能助剂以体积比2-3:2:0.3-0.5进行勾兑,得到复合酒液,接着按复合酒液的质量百分数加0.03-0.07%的酿酒酵母,然后置于8-12℃下后发酵3个月以上,再置于1-2℃下冷却澄清,过500-800目筛,再经过灭菌、灌装,即可得到成品。
2.根据权利要求1所述的一种马蹄甘蔗保健酒的制备工艺,其特征在于,所述步骤(3)中酶解果胶预处理的处理方法如下:按甘蔗汁质量百分比加入1-2%果胶酶,在55-65℃的温度下酶解2-3小时,酶解pH为2-3。
3.根据权利要求1所述的一种马蹄甘蔗保健酒的制备工艺,其特征在于,步骤(2)所述酵母菌为AS2.1190酵母菌种。
4.根据权利要求1所述的一种马蹄甘蔗保健酒的制备工艺,其特征在于,所述步骤(1)中的酒曲为自制酒曲,由以下重量份的原料制成:糯米粉200-300份、燕麦粉50-80份、山药30-50份、淡竹叶15-25份、银杏叶15-25份、辣蓼草10-20份、白术10-20份、芡实5-10份、香叶5-10份和水适量。
5.根据权利要求4所述的一种马蹄甘蔗保健酒的制备工艺,其特征在于,所述酒曲为自制酒曲,由以下重量份的原料制成:糯米粉250份、燕麦粉65份、山药40份、淡竹叶20份、银杏叶20份、辣蓼草15份、白术15份、芡实7份、香叶7份和水适量。
6.根据权利要求4-5任一项所述的一种马蹄甘蔗保健酒的制备工艺,其特征在于,所述酒曲通过以下方法得到:
1)将称取的糯米粉和燕麦粉混合均匀后倒入干净的炒锅中,用文火翻炒至发出轻微糊味后,取出放在干燥处自然冷却至40-55℃,得到杂粮粉;将山药去皮,隔水蒸煮20-30分钟,取出捣烂成泥,然后将山药泥与杂粮粉混合,得到杂粮泥备用;
2)将称取的淡竹叶、银杏叶、辣蓼草、白术、芡实和香叶洗净晾干表面水分,放入温度为80-100℃的烘干箱中干燥4-6h,然后再放入打粉机中粉碎为过30-40目的中草药粉,然后将中草药粉放入砂锅中,加入中草药粉总重量3-5倍,温度为50-60℃的水,浸泡5-10分钟,大火煮沸后用小火熬煮30-45分钟,过滤取滤液,得到中草药液;
3)将步骤1)的杂粮泥和步骤2)的中草药液混合,加入适量水,反复揉捏得到能够用手搓成团且不散的混合物;
4)将步骤3)的混合物捏成直径为1-3cm的曲料,整齐地排放在铺有桑叶的簸箕中,在放置好的饼团上覆盖一层干净的稻草,然后将簸箕移入通风曲池,调节温度在30-35℃,每隔10-15个小时翻一次饼团,发酵至曲料表面70%以上区域出现细小白绒毛后,将饼团放至通风透气处自然风干或晒干至含水量不高于12%,即得所需酒曲。
