本发明涉及食品加工技术领域,具体涉及一种小麦胚芽酱及其制备方法。
背景技术
酱是以豆类、小麦粉、水果、肉类或鱼虾等物为主要原料,加工而成的糊状调味品,它可以提高人们味口,但是绝大部分在食用过后都很难消化,由于目前酱在从配料上都比较单一,只考虑人们食用时的味口,但没有考虑到营养、健康等。小麦胚芽又称胚芽,金黄色颗粒状。麦芽是小麦发芽及生长的器官之一,约占整个麦粒的2.5%,但营养却占整个麦粒的97%,其中蕴藏着50多种人体所需丰富营养及一些还未被当今科学发现的微量生理活性成分,具有极高的营养和药用价值,小麦胚芽对人体健康的神奇作用,为世界所公认,长期食用,能够提高免疫力,抗不育,软化血管,润肠通便,美容护肤,保护心脏,防治心脑血管病,抗氧化,延缓衰老,抗癌。因此,为丰富人们食用酱时的口感,同时兼顾人体的营养和健康,提供一种小麦胚芽酱及其制备方法。
发明内容
本发明的主要目的在于提供一种味道独特、口感丰厚、清爽怡神且兼顾营养健康的小麦胚芽酱及其制备方法。
为实现上述目的,本发明提供一种小麦胚芽酱,由以下重量份的原料制成,香椿10~15份、十香菜5~10份、薄荷5~10份、榆叶5~10份、小麦胚芽粉50~70份、食盐和水若干。
优选的,所述小麦胚芽酱的制备方法,其制备步骤如下:
(1)将香椿、十香菜、薄荷以及榆叶用水分别清洗,然后进行灭菌处理,杀灭细菌后用水冲洗干净;
(2)将冲洗后的无菌香椿、十香菜、薄荷和榆叶进行去水处理;
(3)分别将香椿、十香菜、薄荷以及榆叶切碎混合,然后加水进行磨制粉碎,磨成浆糊状,成混合物A;
(4)将小麦胚芽炒制后磨成粉状,然后将食盐、小麦胚芽粉加入混合物A中,加水搅拌均匀即得所述小麦胚芽酱。
优选的,所述小麦胚芽酱里可加入蒜、辣椒油以及其他佐料。
优选的,所述灭菌处理为开水灭菌。
优选的,所述小麦胚芽炒制时间为15~20min。
本发明的有益效果在于:本发明中,香椿叶性凉味苦,具有清热解毒、健胃理气、润肤明目、杀虫、涩血止痢、止崩的功效;十香菜性温味辛,香醇浓郁,有健脾消食、利尿通便、强身健体、醒脑开智的功效;薄荷性凉味辛,具有疏风散热、清头目、利咽喉、透疹、解郁的功效;榆叶味甘性平,具有清热利尿、安神、祛痰止咳的功效;小麦胚芽营养丰富均衡。采用本发明中原料制成的酱具有口感丰厚、味道独特、清爽怡神、营养丰富均衡的优点,适宜人们经常使用。
具体实施方式
下面结合实施例对本发明做进一步的说明。
实施例1:
一种小麦胚芽酱,由以下重量份的原料制成,香椿叶10份、十香菜叶5份、薄荷叶5份、榆叶5份、小麦胚芽粉50份、食盐和水若干。
所述小麦胚芽酱的制备方法,其制备步骤如下:
(1)将香椿叶、十香菜叶、薄荷叶以及榆叶用水分别清洗,然后进行灭菌处理,杀灭细菌后用水冲洗干净;
(2)将冲洗后的无菌香椿叶、十香菜叶、薄荷叶和榆叶进行去水处理;
(3)分别将香椿叶、十香菜叶、薄荷叶以及榆叶切碎混合,然后加水进行磨制粉碎,磨成浆糊状,成混合物A;
(4)将小麦胚芽炒制后磨成粉状,然后将食盐、小麦胚芽粉加入混合物A中,加水搅拌均匀即得所述小麦胚芽酱。
实施例2:
一种小麦胚芽酱,由以下重量份的原料制成,香椿叶15份、十香菜叶10份、薄荷叶10份、榆叶10份、小麦胚芽粉70份、食盐和水若干。
实施例3:
一种小麦胚芽酱,由以下重量份的原料制成,香椿叶12份、十香菜叶8份、薄荷叶8份、榆叶6份、小麦胚芽粉60份、食盐和水若干。
实施例1、2和3制备方法相同,其主要区别在于所用原料份数不同。
根据个人不同口味和喜好,所述小麦胚芽酱里可加入蒜、辣椒油以及其他佐料,所述灭菌处理为开水灭菌,采用开水灭菌,容易实现且能达到所需的效果,所述小麦胚芽炒制时间为20min。
尽管已经示出和描述了本发明的实施例,对于本领域的普通技术人员而言,可以理解在不脱离本发明的原理和精神的情况下可以对这些实施例进行多种变化、修改、替换和变型,本发明的范围由所附权利要求及其等同物限定。
Claims (5)
1.一种小麦胚芽酱,其特征在于:由以下重量份的原料制成,香椿10~15份、十香菜5~10份、薄荷5~10份、榆叶5~10份、小麦胚芽粉50~70份、食盐和水若干。
2.根据权利要求1所述的一种小麦胚芽酱的制备方法,其特征在于:其制备步骤如下:
(1)将香椿、十香菜、薄荷以及榆叶用水分别清洗,然后进行灭菌处理,杀灭细菌后用水冲洗干净;
(2)将冲洗后的无菌香椿、十香菜、薄荷和榆叶进行去水处理;
(3)分别将香椿、十香菜、薄荷以及榆叶切碎混合,然后加水进行磨制粉碎,磨成浆糊状,成混合物A;
(4)将小麦胚芽炒制后磨成粉状,然后将食盐、小麦胚芽粉加入混合物A中,加水搅拌均匀即得所述小麦胚芽酱。
3.根据权利要求1或2所述的一种小麦胚芽酱,其特征在于:所述小麦胚芽酱里可加入蒜、辣椒油以及其他佐料。
4.根据权利要求2所述的一种小麦胚芽酱的制备方法,其特征在于:所述灭菌处理为开水灭菌。
5.根据权利要求2所述的一种小麦胚芽酱的制备方法,其特征在于:所述小麦胚芽炒制时间为15~20min。
