[0002] 环草,是兰科植物细茎石斛的全草,茎圆形,表面有光泽,黄色或黄褐色;节间一般 长约2厘米,被膜质叶鞘,不易脱落。单叶互生,线状披针形,近于无柄,长4〜4.5厘米,宽1厘 米左右;两面均深绿色,光秃,基出平行脉。环草味甘,性平,无毒,具有健脾益胃、养阴清热 的功效,常用于热病伤阴、痨伤咳血等症状。

发明内容
[0007]本发明以环草、勒鱼为原料,同时添加无尾果、不灰木开发出一种环草风味勒鱼甜 酱,填补了国内使用这类原料制作鱼酱的一项空白。
[0008] 一种环草风味勒鱼甜酱,其特征在于,采用以下步骤: A •环草预处理:取晒干的环草,除去杂质,清洗干净,用35_5〇〇c的温水浸泡9〇_ 15〇分 钟,捞起沥干体表水,切成〇. 5—丨厘米长的碎段,后倒入装有8〇_1〇〇目网筛的打浆机进行打 楽,制得环草衆; 、B•勒鱼预处理:取新鲜的勒鱼,刮鱗,除去头及内脏,清洗干净,后入鱼肉采肉机去刺, 再放入绞肉机,制得勒鱼泥,加入勒鱼泥重3-6%的料酒、3-6%的蒜蓉、1-3%的食盐,放入调味 机,调味腌制50-80分钟; c•中药材预处理:按一定比例取中药材无尾果、不灰木,加入原料中药材重1〇_2〇倍的 水,浸泡1-2个小时,再煎煮30-60分钟,用80-100目的网筛过滤,制得中药汁; D •酱汁预处理:取适量的橙皮酱、加入橙皮酱重10_2〇%的猕猴桃酱、5_1〇%的樱桃酱放 入容器,加入混合酱重2_3倍的水、40-60%的中药汁,搅拌均匀,调成混合中药酱汁; E •熬煮:向不锈钢锅内加入玉米油10-2〇重量份,加热至丨20-MO°C,倒入腌制好的勒鱼 泥80-100重量份,葱花1-3重量份、姜末3-6重量份、大火爆炒3-5分钟,后加入混合中药酱汁 100-120重量份、陈醋2-4重量份,大火烧开,再加入环草浆30—50重量份,搅拌均匀,小火熬 煮至汁水收干即可; … F•冷却、罐装:待环草风味勒鱼酱冷却至常温,在无菌环境中,装入干净且灭菌的玻璃 瓶中; G•密封、杀菌:将环草风味勒鱼酱置于真空封罐机进行密封,后采用巴氏杀菌法进行杀 菌; H.检验、贮存:对杀菌的环草风味勒鱼酱进行检验,检验合格贮存于阴凉、千燥、通风的 库房中。

[0014] 实施例1,一种环草风味勒鱼甜酱,采用以下步骤: A.环草预处理:取晒干的环草,除去杂质,清洗干净,用35r的温水浸泡90分钟,捞起沥 干体表水,切成〇 •5厘米长的碎段,后倒入装有80目网筛的打浆机进行打浆,制得环草浆; B•勒鱼预处理:取新鲜的勒鱼,刮鳞,除去头及内脏,清洗干净,后入鱼肉采肉机去刺, 再放入绞肉机,制得勒鱼泥,加入勒鱼泥重3%的料酒、3%的蒜蓉、1%的食盐,放入调味机,调 味腌制50分钟; c.中药材预处理:按重量比取中药材无尾果45%、不灰木55%,加入原料中药材重10倍的 水,浸泡1个小时,再煎煮3〇分钟,用80目的网筛过滤,制得中药汁; D•酱汁预处理:取适量的橙皮酱、加入橙皮酱重10%的猕猴桃酱、5%的樱桃酱放入容器, 加入混合酱重2倍的水、40%的中药汁,搅拌均匀,调成混合中药酱汁; E.熬煮:向不锈钢锅内加入玉米油l〇kg,加热至125°C,倒入腌制好的勒鱼泥80kg,葱花 lkg、姜末3kg、大火爆炒5分钟,后加入混合中药酱汁l〇〇kg、陈醋2kg,大火烧开,再加入环草 浆30kg,搅拌均匀,小火熬煮至汁水收干即可; F•冷却、罐装:待环草风味勒鱼酱冷却至常温,在无菌环境中,装入干净且灭菌的玻璃 瓶中; G •密封、杀菌:将环草风味勒鱼酱置于真空封罐机进行密封,后采用巴氏杀菌法进行杀 菌; H •检验、贮存:对杀菌的环草风味勒鱼酱进行检验,检验合格贮存于阴凉、千燥、通风的 库房中。 _5]本发明实施例1经17位长期饮食不规律引起的消化不良、不思饮食的人群,连续食 用7天,每日15克,症状明显缓解人数为1〇人,有效率为58.82%;连续食用15天,每日15克以 上,症状明显缓解人数为11人,有效率为64.71%。

[0019] 瑞苓草,为菊科植物黑紫风毛菊的全草,高15-45cm。通常全株有长毛。根状茎细。 茎直立,簇生或单生,上部紫色,基部为残存的叶柄包围,被白色疏长柔毛或几无毛。基生叶 有短或长柄,叶片条状披针形或条状长圆形,长达15cm;中部叶和上部叶渐小,无柄。瑞苓草 味苦、辛,性凉,归肝、肾经,具有清热明目、活血调经的功效,常用于月经不调、骨蒸劳热、肝 热目赤等症状。
