本发明公开了一种营养保健面条,该面条以藜麦粉、球茎茴香、菠菜、牛奶、鸡蛋全液、色拉油、食盐、酵母、牡蛎、云木香、白胡椒、香附为原料。通过原材料预处理、和面、熟化、轧片、切条、干燥、包装加以制备而成。本发明的一种营养保健面条,劲道爽滑、营养均衡、颜色诱人,添加的菠菜采用独特的工艺,不需要经过开水淖烫就可去除其所含的草酸,保留了其他营养成分,食用时营养更丰富,本发明制得的面条老少皆宜,添加了多味中草药药材,使其具有潜阳补阴、软坚散结、疏肝解郁、健胃消胀等保健功效。

本发明涉及食品技术领域,具体涉及一种营养保健面条。
背景技术
面条是人们日常食用的一种速食品,可以代替主食食用,这是传统的面条,但是如今随着人们生活水平的提高,人们对食品的要求也提高了很多,特别注重食品的保健功能。
藜麦粉:藜麦原产于南美洲安第斯山区,是印加土著居民的主要传统食物,有5000-7000多年的种植历史,由于其具有独特的丰富、全面的营养价值,养育了印加民族,古代印加人称之为“粮食之母”,藜麦植物分类属藜科,双子叶植物。
藜麦是全谷全营养完全蛋白碱性食物,胚芽占种子的30%,且具有营养活性,蛋白质含量高达16%-22%(牛肉20%),品质与奶粉及肉类相当,富含多种氨基酸,其中有人体必需的全部9种必需氨基酸,比例适当且易于吸收,尤其富含植物中缺乏的赖氨酸,钙、镁、磷、钾、铁、锌、硒、锰、铜等矿物质营养含量高,富含不饱和脂肪酸、类黄酮、B族维生素和E族维生素、胆碱、甜菜碱、叶酸、α-亚麻酸、β-葡聚糖等多种有益化合物,膳食纤维素含量高达7.1%,胆固醇为0,不含麸质,低脂,低热量(305kcal/100g),低升糖(GI升糖值35,低升糖标准为55),几乎都是常见食物里最优秀的。能提供鱼类生长所必须的蛋白质。
球茎茴香:别名意大利茴香、甜茴香,为伞形花科茴香属茴香种的一个变种,原产意大利南部,现主要分布在地中海沿岸地区。球茎茴香含有较为全面的营养物质,每百克鲜食部分中含有蛋白质1.1克,脂肪0.4克,糖类3.2克,纤维素0.3克,维生素C12.4毫克,钾654.8毫克,钙70.7毫克,此外茎叶中还含有90毫克/千克的茴香脑(C10H12O)有健胃促进食欲、驱风邪等食疗作用。球茎茴香性味甘温、辛,含高钾低钠盐,并含有黄酮甙、茴香苷;果实含丰富的芳香挥发油,其主要成份为茴香醚、右旋小茴香酮、右旋和左旋柠檬烯、蒎烯、二戊烯、茴香醛等成份,健胃散寒。
菠菜:又名波斯菜、赤根菜、鹦鹉菜等,属藜科菠菜属,一年生草本植物。其味甘、性凉,入大肠、胃经;功能主治:养血,止血,敛阴,润燥。治衄血,便血,坏血病,消渴引饮,大便涩滞。菠菜有“营养模范生”之称,它富含类胡萝卜素、维生素C、维生素K、矿物质(钙质、铁质等)、辅酶Q10等多种营养素。
然而菠菜中富含草酸,草酸能够与人体中的钙直接作用,形成草酸钙沉淀,影响了人体对钙的吸收,甚至会引发急性肾衰竭,因此传统的食用方法是预先用开水淖烫,高温烫会使草酸溶解出来,但是用开水烫会破坏维生素C和其他易氧化的营养物质,造成营养缺失。
牡蛎:为牡蛎科软体动物。其味咸,性微寒;归肝、胆、肾经。功能主治:具有重镇安神,潜阳补阴,软坚散结的功效。
云木香:是菊目、菊科、风毛菊属的多年生草本。其味辛、苦,性温;归脾、胃、肝、大肠经。功能主治:行气止痛,健脾消食。用于胸脘胀痛,泻痢后重,食积不消,不思饮食。
白胡椒:为胡椒科植物胡椒的干燥近成熟的果实。气味芳香,是人们喜爱的调味品之一。其味辛,性温。入胃经、大肠经。功能主治:温中散寒,下气,消痰。治寒痰食积,脘腹冷痛,反胃,呕吐清水,泄泻,冷痢,并解食物毒。
香附:为莎草科植物莎草的干燥根茎。其味辛、微苦、微甘,性平。归肝、脾、三焦经。功能主治:疏肝解郁,理气宽中,调经止痛。用于肝郁气滞,胸胁胀痛,疝气疼痛,乳房胀痛,脾胃气滞,脘腹痞闷,胀满疼痛,月经不调,经闭痛经。
发明内容
本发明的目的在于提供一种具有潜阳补阴、软坚散结、疏肝解郁、健胃消胀等保健功效的老少皆宜的一种营养保健面条。
一种营养保健面条其技术方案是:包括以下重量份的原料:藜麦粉40-60份、球茎茴香4-8份、菠菜汁10-15份、牛奶20-25份、鸡蛋全液10-20份、色拉油6-10份、食盐0.8-2份、酵母0.4-0.6份、牡蛎5-8份、云木香3-5份、白胡椒4-7份、香附3-6份。其制备方法包括以下步骤:
(1)原材料预处理:
球茎茴香,球茎部洗干净、切丝,备用;
菠菜,洗净、切碎、放入榨汁机中加入少量水榨汁,再用滤布过滤残渣,得到菠菜汁,往菠菜汁中倒入牛奶,充分搅拌均匀,静置30-40分钟,用超滤膜进行过滤、除去白色沉淀物,即可;
牡蛎,洗净牡蛎壳表面的污物,放在清水中浸泡一段时间,取出牡蛎肉,备用;
云木香、白胡椒、香附,洗净、烘干、切碎;
然后将切好的球茎茴香丝、牡蛎肉、以及烘干切碎的云木香、白胡椒、香附放在锅内加水煎煮,先用大火煮沸,再用文火煎煮3-5小时,然后用滤布过滤残渣,得到混合药液;
(2)和面:将藜麦粉中加入鸡蛋全液、酵母、色拉油、菠菜汁、混合药液、食盐,充分混合均匀,反复揉制后,放在保温箱内进行醒面,温度设定为15-20℃,时间20-30分钟;
(3)熟化:将醒好的面团送入熟化机中熟化,时间为15-20分钟;
(4)轧片:熟化后的面团用轧片机压成薄片;
(5)切条、剪齐:用面刀将面片纵切成一定的宽度和长度,然后用挂杆挑起;
(6)干燥:用鼓风机对挂杆上的面条进行冷风干燥,空气湿度控制在60-70%,温度30-40℃;
(7)包装。
本发明的有益效果:

具体实施方式:
实施例1,一种营养保健面条,按重量份称取以下原料:藜麦粉40公斤、球茎茴香4公斤、菠菜汁10公斤、牛奶20公斤、鸡蛋全液10公斤、色拉油6公斤、食盐1公斤、酵母0.4公斤、牡蛎5公斤、云木香3公斤、白胡椒4公斤、香附3公斤。其制备工艺为:
(1)原材料预处理:
球茎茴香,取4公斤球茎茴香,将其球茎部洗干净、切丝,备用;

(2)和面:将藜麦粉中加入10公斤鸡蛋全液、0.4公斤酵母、6公斤色拉油、10公斤菠菜汁、混合药液、1公斤食盐,充分混合均匀,反复揉制后,放在保温箱内进行醒面,温度设定为15℃,时间20分钟;
(3)熟化:将醒好的面团送入熟化机中熟化,时间为15分钟;
(4)轧片:熟化后的面团用轧片机压成薄片;
(5)切条、剪齐:用面刀将面片纵切成一定的宽度和长度,然后用挂杆挑起;
(6)干燥:用鼓风机对挂杆上的面条进行冷风干燥,空气湿度控制在60%,温度30℃;
(7)包装。

(1)原材料预处理:
球茎茴香,取5公斤球茎茴香,将其球茎部洗干净、切丝,备用;
菠菜,洗净、切碎、放入榨汁机中加入少量水榨汁,再用滤布过滤残渣,得到菠菜汁,往菠菜汁中倒入23公斤牛奶,充分搅拌均匀,静置40分钟,用超滤膜进行过滤、除去白色沉淀物,即可;
牡蛎,选取5公斤牡蛎,洗净牡蛎壳表面的污物,放在清水中浸泡一段时间,取出牡蛎肉,备用;
云木香、白胡椒、香附、甘草、黄连,取云木香3公斤、白胡椒4公斤、香附3公斤、甘草1公斤、黄连0.5公斤洗净、烘干、切碎;
然后将切好的5公斤球茎茴香丝、5公斤牡蛎肉、以及烘干切碎的3公斤云木香、4公斤白胡椒、3公斤香附、1公斤甘草、0.5公斤黄连放在锅内加水煎煮,先用大火煮沸,再用文火煎煮3.5小时,然后用滤布过滤残渣,得到混合药液;

(3)熟化:将醒好的面团送入熟化机中熟化,时间为18分钟;
(4)轧片:熟化后的面团用轧片机压成薄片;
(5)切条、剪齐:用面刀将面片纵切成一定的宽度和长度,然后用挂杆挑起;
(6)干燥:用鼓风机对挂杆上的面条进行冷风干燥,空气湿度控制在65%,温度30℃;
(7)包装。
实施例2中添加的2味中草药:甘草和黄连。
甘草:别名国老、甜草、乌拉尔甘草、甜根子。豆科、甘草属多年生草本。其味甘,性平。入脾、胃、肺经。功能主治:益气补中;缓急止痛;润肺止咳;泻火解毒;调和诸药。主倦怠食少;肌瘦面黄;心悸气短;腹痛便溏;四肢挛急疼痛;脏躁;咳嗽气喘;咽喉肿痛;痈疮肿痛;小儿胎毒;及药物、食物中毒。
黄连:别名味连、川连、鸡爪连,属毛茛科、黄连属多年生草本植物。其味苦,性寒。归心、脾、胃、肝、胆、大肠经。功能主治:清热燥湿,泻火解毒。用于湿热痞满,呕吐吞酸,泻痢,黄疸,高热神昏,心火亢盛,心烦不寐,血热吐衄,目赤,牙痛,消渴,痈肿疔疮;外治湿疹,湿疮,耳道流脓。
实施例3,一种营养保健面条,按重量份称取以下原料:藜麦粉60公斤、球茎茴香6公斤、菠菜汁15公斤、牛奶25公斤、鸡蛋全液20公斤、色拉油10公斤、食盐1.8公斤、酵母0.6公斤、牡蛎7公斤、云木香3公斤、白胡椒4公斤、香附3公斤、甘草1公斤、黄连0.5公斤、延胡索2公斤、肉桂0.8公斤。其制备工艺为:
(1)原材料预处理:
球茎茴香,取6公斤球茎茴香,将其球茎部洗干净、切丝,备用;
菠菜,洗净、切碎、放入榨汁机中加入少量水榨汁,再用滤布过滤残渣,得到菠菜汁,往菠菜汁中倒入25公斤牛奶,充分搅拌均匀,静置40分钟,用超滤膜进行过滤、除去白色沉淀物,即可;

(2)和面:将藜麦粉中加入20公斤鸡蛋全液、0.6公斤酵母、10公斤色拉油、15公斤菠菜汁、混合药液、1.8公斤食盐,充分混合均匀,反复揉制后,放在保温箱内进行醒面,温度设定为18℃,时间25分钟;
(3)熟化:将醒好的面团送入熟化机中熟化,时间为18分钟;
(4)轧片:熟化后的面团用轧片机压成薄片;
(5)切条、剪齐:用面刀将面片纵切成一定的宽度和长度,然后用挂杆挑起;
(6)干燥:用鼓风机对挂杆上的面条进行冷风干燥,空气湿度控制在65%,温度30℃;
(7)包装。
实施例3中添加的2味中草药:延胡索和肉桂。
延胡索:又名延胡、玄胡索、元胡索、元胡等。是罂粟科、紫堇属多年生草本植物。其味辛;苦;性温;无毒。归肝;胃;心;肺;脾经。功能主治:活血;散瘀;理气;止痛。主心腹腰膝诸痛;月经不调;症瘕;崩中;产后血晕;恶露不尽;跌打损伤。
肉桂:又名玉桂、牡桂、玉树、大桂、辣桂、平安树、中国桂皮,为樟科植物肉桂的干燥树皮。性大热;味辛、甘;归心、肝、脾、肾经。功能主治:补火助阳,引火归源,散寒止痛,活血通经。用于:阳痿,宫冷,腰膝冷痛,肾虚作喘,阳虚眩晕,目赤咽痛,心腹冷痛,虚寒吐泻,寒疝,奔豚,经闭,痛经。
