C.中药材预处理:按一定比例取中药材红绿草、神曲、款冬花,清洗干净,加入原料中药材重5-10倍的水,煎煮2-3小时,再用60-80目网筛的过滤设备进行过滤,取得中药汁,加入中药汁重0.5-1.5%的果酒酒母,密封静置发酵,待酒精度达到0.5-1%重量比,结束发酵;
D.酱汁预处理:取适量的黄豆酱、黄豆酱重25-50%的辣椒酱、5-10%的甜面酱,50-60%的红绿草浆,5-10%的中药汁,1-2倍的水,倒入不锈钢容器中搅拌均匀,调成红绿草中药混合酱汁;
E.熬煮:向不锈钢锅内加入橄榄油I O-15重量份,加热至100 °C -120 °C,放入耳鲍泥100-150重量份,翻炒5-10分钟,加入红绿草中药混合酱汁100-150重量份、醋1-3重量份、蒜蓉泥5-10重量份、白芝麻6-8重量份,大火烧开,小火熬煮1-2小时,最后加入2-5重量份的核桃仁,翻炒至汁水收干即可;
F.罐装,冷却:将红绿草风味耳鲍肉酱趁热称量,分装入已灭菌的容器中,迅速封口,装罐温度控制在75-80 °C;
G.杀菌,冷却:将装罐好的红绿草风味耳鲍肉酱,放入沸水中用蒸汽加热10-15分钟,进行杀菌,然后置入冷却室冷却;
H.检验、贮存:将检验合格的红绿草风味耳鲍肉酱置于阴凉、干燥、通风的库房中存放。

具体实施方式
[0015] 实施例1,一种红绿草风味耳鲍肉酱的制作方法,采用以下步骤:
A.红绿草预处理:取新鲜的红绿草,清洗干净,加入红绿草重5倍的水,放入装有60目网筛的制浆机中打浆,制得红绿草浆;
B.耳鲍预处理:取新鲜的耳鲍,剥壳取出耳鲍肉,放入清水中浸泡60分钟,再放入绞肉机,制得耳鲍肉,加入耳鲍肉重5%的料酒、2%的姜末,放入调味机调味腌制30分钟,制得耳鲍泥;
C.中药材预处理:按重量比例取中药材神曲52%、款冬花48%,清洗干净,加入原料中药材重5倍的水,煎煮2小时,再用60目网筛的过滤设备进行过滤,取得中药汁,加入中药汁重
0.5%的果酒酒母,密封静置发酵,待酒精度达到0.5%重量比,结束发酵;
D.酱汁预处理:取适量的黄豆酱、黄豆酱重25%的辣椒酱、5%的甜面酱,50%的红绿草浆,5%的中药汁,I倍的水,倒入不锈钢容器中搅拌均匀,调成红绿草中药混合酱汁;
E.熬煮:向不锈钢锅内加入橄榄油1kg,加热至100 0C,放入耳鲍泥10kg,翻炒5分钟,加入红绿草中药混合酱汁40kg、醋lkg、蒜蓉泥5kg、白芝麻6kg,大火烧开,小火熬煮1-2小时,最后加入2kg的核桃仁,翻炒至汁水收干即可;
F.罐装,冷却:将红绿草风味耳鲍肉酱趁热称量,分装入已灭菌的容器中,迅速封口,装罐温度控制在75 °C;
G.杀菌,冷却:将装罐好的红绿草风味耳鲍肉酱,放入沸水中用蒸汽加热10分钟,进行杀菌,然后置入冷却室冷却;
H.检验、贮存:将检验合格的红绿草风味耳鲍肉酱置于阴凉、干燥、通风的库房中存放。

A.红绿草预处理:取新鲜的红绿草,清洗干净,加入红绿草重6倍的水,放入装有80目网筛的制浆机中打浆,制得红绿草浆;
B.耳鲍预处理:取新鲜的耳鲍,剥壳取出耳鲍肉,放入清水中浸泡90分钟,再放入绞肉机,制得耳鲍肉,加入耳鲍肉重7%的料酒、3%的姜末,放入调味机调味腌制40分钟,制得耳鲍泥;
C.中药材预处理:按重量比例取中药材神曲19%、款冬花21 %、凤尾七19%、算盘七17%、结尾草24%,清洗干净,加入原料中药材重7倍的水,煎煮2.5小时,再用70目网筛的过滤设备进行过滤,取得中药汁,加入中药汁重0.5-1.5%的果酒酒母,密封静置发酵,待酒精度达到
0.7%重量比,结束发酵;
D.酱汁预处理:取适量的黄豆酱、黄豆酱重32%的辣椒酱、6%的甜面酱,55%的红绿草浆,7%的中药汁,2倍的水,倒入不锈钢容器中搅拌均匀,调成红绿草中药混合酱汁;
E.熬煮:向不锈钢锅内加入橄榄油13kg,加热至110°C,放入耳鲍泥120kg,翻炒5-10分钟,加入红绿草中药混合酱汁45kg、醋2kg、蒜蓉泥9kg、白芝麻7kg,大火烧开,小火熬煮2小时,最后加入3kg的核桃仁,翻炒至汁水收干即可;
F.罐装,冷却:将红绿草风味耳鲍肉酱趁热称量,分装入已灭菌的容器中,迅速封口,装罐温度控制在75-80 °C;
G.杀菌,冷却:将装罐好的红绿草风味耳鲍肉酱,放入沸水中用蒸汽加热12分钟,进行杀菌,然后置入冷却室冷却;
H.检验、贮存:将检验合格的红绿草风味耳鲍肉酱置于阴凉、干燥、通风的库房中存放。
[0018] 凤尾七,为景天科植物小丛红景天的根。根头部粗大,其上残存多数丛生的茎基部,断面中空,茎基有芽。根部纺锤形,长6-10厘米,径约1-1.5厘米,表面凹凸不平,被灰棕色栓皮,片状脱落,脱落处颜色较深,暗棕色至紫棕色。凤尾七味甘,性温。具有补肾、养心安神、调经活血、明目的功效,主治虚劳、骨蒸劳热、干血劳、月经不调、头晕目眩。
[0019] 算盘七,为百合科植物腋花扭柄花的根。腋花扭柄花,多年生草本,植株高20-50cm。根茎粗1.5-2mm。茎不分枝或中部以上分枝,光滑。叶互生,7-9枚,无柄;叶片披针形或卵状披针形,长2.5-8cm,宽1.5-3cm,先端渐尖,基都圆形或心形,抱茎,全缘,叶背灰白色。算盘七味甘,性微寒。具有清肺止咳、健脾和胃的功效,主治肺热咳嗽、阴虚劳嗽、脾胃不和之少食、欲呕。
[0020] 节节草,又名土木贼、锁眉草、笔杆、土麻黄,草麻黄、木草。多年生,根茎细长入土深,黑褐色。茎细弱,绿色,基部多分枝,上部少分支或部分枝,粗糙具条棱,叶鳞片状,轮生,基部联合成鞘状。孢子囊长圆形,有小尖头;孢子叶6角形,中央凹入。节节草味甘,性平。具有明目退翳、祛痰止咳、清热、利尿的功效,常用于目赤肿痛、角膜云翳、肝炎,咳嗽、支气管炎、泌尿系感染。

B.耳鲍预处理:取新鲜的耳鲍,剥壳取出耳鲍肉,放入清水中浸泡120分钟,再放入绞肉机,制得耳鲍肉,加入耳鲍肉重10%的料酒、4%的姜末,放入调味机调味腌制60分钟,制得耳鲍泥;
C.中药材预处理:按重量比例取中药材神曲14%、款冬花13%、凤尾七16%、算盘七13%、结尾草14%、土木香14%、天麻16%,清洗干净,加入原料中药材重1倍的水,煎煮3小时,再用70目网筛的过滤设备进行过滤,取得中药汁,加入中药汁重1.5%的果酒酒母,密封静置发酵,待酒精度达到1%重量比,结束发酵;
D.酱汁预处理:取适量的黄豆酱、黄豆酱重50%的辣椒酱、10%的甜面酱,60%的红绿草浆,10%的中药汁,2倍的水,倒入不锈钢容器中搅拌均匀,调成红绿草中药混合酱汁;
E.熬煮:向不锈钢锅内加入橄榄油15kg,加热至120 °C,放入耳鲍泥150kg,翻炒1分钟,加入红绿草中药混合酱汁60kg、醋3kg、蒜蓉泥10kg、白芝麻8kg,大火烧开,小火熬煮2小时,最后加入5kg的核桃仁,翻炒至汁水收干即可;
F.罐装,冷却:将红绿草风味耳鲍肉酱趁热称量,分装入已灭菌的容器中,迅速封口,装罐温度控制在80 °C ;
G.杀菌,冷却:将装罐好的红绿草风味耳鲍肉酱,放入沸水中用蒸汽加热15分钟,进行杀菌,然后置入冷却室冷却;
H.检验、贮存:将检验合格的红绿草风味耳鲍肉酱置于阴凉、干燥、通风的库房中存放。
[0024] 土木香,为菊科植物土木香I或藏木香I的干燥根。呈圆锥形,略弯曲,长5-20cm。表面黄棕色或暗棕色,有纵皱纹及须根痕。根头粗大,顶端有凹陷的茎痕及叶鞘残基,周围有圆柱形支根。质坚硬,不易折断,断面略平坦,黄白色至浅灰黄色,有凹点状油室。土木香味辛,性温,归肝、脾二经。具有健脾和胃、调气解郁、止痛安胎的功效,常用于胸胁、脘腹胀痛、呕吐泻痢、胸胁挫伤、岔气作痛、胎动不安。
[0025] 天麻,又名赤箭、木浦、明天麻、定风草根、白龙皮,本品呈椭圆形或长条形,略扁,皱缩而稍弯曲,长3-15cm,宽1.5-6cm,厚0.5-2cm。表面黄白色至淡黄棕色,有纵皱纹及由潜伏芽排列而成的横环纹多轮,有时可见棕褐色菌索。顶端有红棕色至深棕色鹦嘴状的芽或残留茎基;另端有圆脐形疤痕。质坚硬,不易折断,断面较平坦,黄白色至淡棕色,角质样。天麻味甘,性平。归肝经。具有平肝息风、止痉的功效,常用于头痛眩晕、肢体麻木、小儿惊风、癫痫抽搐、破伤风。
