技术领域
本发明涉及一种针对儿童所需营养素的咀嚼片及其制备方法,属于食品加工技术领域。
背景技术
人的身体健康状况从婴幼儿时期便开始有影响,特别是儿童时期担负着身体发育的重任,所以儿童时期的营养与饮食极其重要。而当前儿童食品中安全隐患最大的问题当属儿童零食,大部分零食含有较多的添加剂,营养价值较少,经常食用会影响儿童的生长发育。
藕粉、番茄、山楂,枸杞等都是营养素丰富的食物。对于儿童健康起很好的作用。莲藕的营养价值很高,富含铁、钙等微量元素,植物蛋白质、维生素以及淀粉含量也很丰富,可以明显的补益气血,增强人体免疫力。番茄是人们都认可的非常有营养的食物,它富含胡萝卜素以及维生素,除了抗氧化美容护肤等作用,番茄还可以降脂降压、利尿排钠。对于儿童来说,胃口很重要,胡萝卜汁含有是很高的β-胡萝卜素,而山楂具有很好的开胃效果,而且富含营养素,不仅能增强机体免疫力,而且抗衰老、抗癌。枸杞子含有丰富的胡萝卜素、维生素A、B1、B2、C和钙、铁等眼睛保健的必需营养。枸杞子中的甜菜碱,可抑制脂肪在肝细胞内沉积、促进肝细胞再生,因而具有保护肝脏作用。对于儿童来说,食量相对较小,咀嚼片就可以很好的解决营养素摄入不足的问题。
咀嚼片是指通过咀嚼或者吮服使片溶化后吞服的片制剂。与普通片剂相比具有分散状态好、崩解时间短、营养溶出迅速,吸收好、利用度高、服用方便等优势。与颗粒剂相比,咀嚼片具有体积小、携带方便、不用水冲等优势,尤其适用于婴幼儿、老人及吞服困难者服用,也能改善外出、旅行过程中开水冲服的不便,由于其能引起孩子的好奇心与关注,也可以当作孩子的日常零食。然而,现有技术在制备果蔬咀嚼片的过程中,维生素等营养元素特别是VC极易氧化流失,降低了咀嚼片的营养价值;同时在制备过程中,因原料粘着性差,在制粒、压片成型时易松散,往往需要再加入大量粘结剂等其他成分,进一步降低咀嚼片的营养价值。
发明内容
本发明的目的是提供一种具有儿童所需营养素的超微粉咀嚼片,采用山楂、枸杞、番茄、藕、南瓜的超微粉辅以儿童豆奶粉、胡萝卜汁及维生素C,该咀嚼片不仅保持了物料原有的生物活性和营养成分,包含儿童期所需要的糖类、蛋白质、脂肪、矿物质及维生素、膳食纤维等营养都具备,而且添加剂极少,健康天然,营养丰富,特别适合儿童期人群食用。
为实现上述目的,本发明采用下述技术方案:
一种儿童果蔬超微粉咀嚼片,是由下述重量配比的原料制成的:
山楂超微粉:1-5份,枸杞超微粉:1-5份,南瓜超微粉:10-30份,番茄超微粉:2-15份,藕超微粉:10-25份,儿童豆奶粉,28-40份,甘露醇:5-16份,维生素C:1-2份,冰糖粉1-5份,硬脂酸镁:0.5-1.5份,胡萝卜汁:1-3份。
所述山楂超微粉、番茄超微粉、藕超微粉、南瓜超微粉,为将原料烘干,常温粉碎后过300目筛制得。
所述枸杞超微粉,为将原料烘干,低温粉碎后过300目筛制得,所述低温为-10℃。
优选的,所述儿童果蔬超微粉咀嚼片是由下述重量配比的原料制成的:
山楂超微粉:1.8份,枸杞超微粉:1.8份,南瓜超微粉:24份,番茄超微粉:3.4份,藕超微粉:16份,儿童豆奶粉:32份,甘露醇:15.5份,维生素C:1.5份,冰糖粉:3份,硬脂酸镁:1.5份,胡萝卜汁1份。
本发明制备得到儿童果蔬超微粉咀嚼片中,山楂能够消食去脂,枸杞能滋补肝胃,藕能增强免疫力,番茄利尿排钠,南瓜含有抵抗疾病的营养素,五者互为补充协同促进使得本发明咀嚼片具有保健之功效。
其中,山楂,又名山里红、胭脂果,是一种可食用植物。它质硬、果肉薄、味微酸涩,却含有多种营养物质,包含维生素C、胡萝卜素、黄酮、山楂酸、苹果酸、蛋白质、脂肪和钙、磷、铁等,其成分可以有效帮助人们舒张血管、降压强心、消食健胃、美容美体。山楂营养丰富,但是不宜储藏,鲜果食用期短约为每年2个月左右,所以亟需合理的加工方法,既有良好的食用价值也易于储藏和携带。目前国内常见的山楂加工产品有山楂片、山楂罐头、山楂糕等,但是这些食品往往含糖量很高,食用多会造成血糖升高、龋齿、血脂高、体重增加等影响,特别适合儿童期人群食用。
枸杞性甘、平,归肝肾经,含有胡萝卜素、甜菜碱、维生素A、维生素B1、维生素B2、维生素C和钙、磷、铁等成分,自古以来就是滋补养人的上品,对儿童来说有明目、提高免疫力、保护肝脏的作用。
番茄味甘、酸,性凉,微寒。能清热止渴,养阴,凉血,归肝、胃、肺经。具有生津止渴,健胃消食,清热解毒,凉血平肝,补血养血和增进食欲的功效。可治口渴,食欲不振等多种疾病。而且番茄含有大量番茄红素,番茄红素是植物中所含的一种天然色素,是迄今为止自然界中被发现的最强抗氧化剂之一。主要存在于茄科植物西红柿的成熟果实中。它是目前自然界中被发现的最强抗氧化剂。科学证明,人体内的单线态氧和氧自由基是侵害人体自身免疫系统的罪魁祸首。番茄红素清除自由基的功效远胜于其他类胡萝卜素和维生素E,其淬灭单线态氧速率常数是维生素E的100倍。它可以有效的防治因衰老,免疫力下降引起的各种疾病。
藕微甜而脆,富含淀粉,可生食也可做菜,而且药用价值相当高,它的根根叶叶,花须果实,无不为宝,都可滋补入药。用藕制成粉,能消食止泻,开胃清热,滋补养性,预防内出血,是妇孺童妪、体弱多病者上好的流质食品和滋补佳珍。
南瓜的纤维含量极高,卡路里低,充满了对抗疾病的营养素,南瓜含有丰富的维生素A、维生素E,可使儿童增强机体免疫力,对改善秋燥症状大有裨益。另外南瓜中的维生素E,还能帮助脑下垂体激素的正常分泌,使儿童生长发育维持正常的健康状态。多吃南瓜也可用于儿童驱虫、绦虫及糖尿病的治疗,并能减少麻疹的患病危险。从特性上看,南瓜有平喘、消肿的作用。常吃南瓜能够预防哮喘、支气管炎等秋季多发病。含有丰富的b胡萝卜素,由人体吸收后转化为维生素A,维生素A和蛋白质结合可形成视蛋白,这一物质在视觉上扮演重要角色。
儿童营养豆奶粉是根据儿童消费人群特殊的生理特点和饮食的特定要求研制的,调整蛋白质、脂肪、碳水化合物三大营养素的比例,强化维生素A、维生素D,牛磺酸,矿物质锌、钙等。大豆是高营养的植物性食品,含有近40%左右的优质蛋白质和人体必需的8种氨基酸。大豆中富含的不饱和脂肪酸,为人体生长、发育和代谢所需。在大豆的基础上再配以部分牛奶,动植物蛋白质互补,营养更加全面。儿童营养豆奶粉中的维生素A、维生素D在提高免疫能力,生长发育方面有较好的作用。另外在营养素的吸收方面,儿童最易缺少的矿物质是钙,一旦人体缺少钙,将影响儿童的发育成长。儿童营养豆奶粉中维生素与钙、锌协同补充,吸收效果更好。
胡萝卜汁含有是很高的β-胡萝卜素,是一种抗癌剂。β-胡萝卜素是植物中的色素物质,往往形成维生素A。维生素A有利于改善视觉,防止眼睛和皮肤干燥,有利于维持消化系统、泌尿系统,以及提高抗细菌感染能力。从新鲜胡萝卜中获得的维生素A对儿童来说非常重要。
所述儿童果蔬超微粉咀嚼片采用以下方法制备:
(1)按照上述重量配比,称取原料;
(2)将山楂、枸杞、南瓜、藕、番茄进行超微粉制备;
(3)制粒:向制得的超微粉中,按照组分配比加入儿童豆奶粉、维生素C、甘露醇,并加入湿润剂和胡萝卜汁,充分搅拌制软材,过筛制得颗粒;
(4)干燥、整粒、压片:将整粒后的样品送入干燥箱中烘干过筛,加硬脂酸镁压片,灭菌,即得。
优选的,所述步骤(2)中,将山楂、枸杞、南瓜、藕、番茄进行超微粉制备的具体工艺为:将山楂70℃烘干6h后,常温粗粉碎60s,过80目筛后常温粉碎20min,过300目筛得山楂超微粉;将枸杞60℃烘干6h后,低温-10℃粗粉碎30s,过80目后低温-10℃粉碎10min,过300目筛得枸杞超微粉;将南瓜70℃烘干6h后,常温粗粉碎60s,过80目筛得南瓜粉;将藕60℃烘干6h后,常温粗粉碎30s,过80目筛得藕粉;将番茄于70℃烘干6h后,常温粉碎20s,过80目筛,出料,常温粉碎10min,过300目得番茄超微粉;
优选的,所述步骤(3)中,过筛目数为18-20目,进一步优选为20目;所述湿润剂为乙醇,所述乙醇体积分数为50%;
优选的,所述步骤(4)中干燥箱温度为60℃,烘干至水分小于3%,过筛目数为20目。
本发明还公开了所述儿童果蔬超微粉咀嚼片在增强机体免疫力、提供儿童期所需的营养素中的应用。
本发明的有益效果:
(1)原料粉均为超微粉,制成的咀嚼片具有口感好、天然性、营养高、易于吸收等特点,发明人意外发现,由于儿童豆奶粉含有丰富的植物蛋白,藕粉含有丰富淀粉,高蛋白和高淀粉特性赋予其二者的黏连性,能够对本发明中的其他组分起到良好的黏连作用,同时藕粉加水混合加热后成明胶状,具有粘稠缓和的性质,能够增加矫味剂作用,减少矫味剂的使用量;而且,儿童豆奶粉与藕粉还具有成膜性,能够有效包裹本发明其他组分,从而极大减少维生素等易氧化营养元素的流失。
(2)以山楂粉、枸杞粉、番茄粉、藕粉、南瓜粉、儿童豆奶粉为原料均为营养佳品,其中山楂粉、枸杞粉、番茄粉、南瓜粉、藕粉及儿童豆奶粉为原料,四者协调既能提供全面的营养,又能从口味上相互协调提高口感,辅料以甘露醇、冰糖粉、维生素C三种口感较好的辅料为主,又进一步减少矫味剂的使用,另外胡萝卜汁能够增加维生素的含量并且起到调整颜色的作用,符合营养、天然、健康的食品发展趋向。
(3)本发明制备得到的超微粉咀嚼片成型好,通过加入适量的藕粉和儿童豆奶粉,可以有效粘合本发明的原料组分,使原料在制粒、压片成型时不易松散,原料经软材、造粒后压片容易、硬度适中、质量稳定,光洁度好,平整,无沙砾感;其中使用甘露醇作为做为矫味剂,比白砂糖适口性更好,且不会给儿童造成龋齿和蛀牙,同时相比普通的蔗糖、山梨糖醇等,甘露醇没有吸湿性,所需湿润剂乙醇的体积分数达到50%即可满足要求,片剂化学稳定性更好;
(4)采用超微粉粹技术,最大程度保留原料的营养成分,并有利于吸收利用,同时,维生素等营养成分被藕粉和儿童豆奶粉包裹,避免因后期制备工艺及运输储存导致营养成分氧化丢失,携带及食用便捷。
(5)本发明提供的咀嚼片通过科学配伍,具有增强机体免疫力、提供儿童期所需的各种营养素等功效。特别适合儿童期人群食用。
具体实施方式
下面通过具体实例对本发明进行进一步的阐述,应该说明的是,下述说明仅是为了解释本发明,并不对其内容进行限定。
实施例1
山楂超微粉:1.8份,枸杞超微粉:1.8份,南瓜超微粉:24份,番茄超微粉:3.4份,藕超微粉:16份,儿童豆奶粉:32份,甘露醇:15.5份,维生素C:1.5份,冰糖粉:3份,硬脂酸镁:1.5份,胡萝卜汁1份。
(1)按照上述重量配比,称取原料;
(2)超微粉制备
将山楂70℃烘干6h后,常温粗粉碎60s,过80目筛后常温粉碎20min,过300目筛得山楂超微粉;将枸杞60℃烘干6h后,低温-10℃粗粉碎30s,过80目后低温-10℃粉碎10min,过300目筛得枸杞超微粉;将南瓜70℃烘干6h后,常温粗粉碎60s,过80目筛得南瓜粉;将藕60℃烘干6h后,常温粗粉碎30s,过80目筛得藕粉;将番茄于70℃烘干6h后,常温粉碎20s,过80目筛,出料,常温粉碎10min,过300目得番茄超微粉。
(3)制粒
向制得的超微粉中,按照组分配比加入儿童豆奶粉、维生素C、甘露醇,并加入湿润剂即50%体积分数乙醇及胡萝卜汁,制软材,过20目筛制得颗粒。
(4)干燥、整粒、压片
将整粒后的样品送入干燥箱中于60℃烘干至水分小于3%,过20目筛整粒,后加1.5%硬脂酸镁压片,灭菌,即得。
对比例1
对比例1制备方法同实施例1,唯一区别在于不加入藕超微粉;
通过实施例1与对比例1对比,加入藕超微粉所制取得到的咀嚼片成型效果更好,口感更佳,对比例1得到的咀嚼片易粉粹,口感差。
对比例2
对比例2制备方法同实施例1,区别在于藕超微粉加入量为25份,儿童豆奶粉加入量为15份。
通过实施例1与对比例2对比,对比例2制备片剂粘合过于紧密,口味差,咀嚼片嚼碎困难,崩解时间延长。
实施例2正交试验优选辅料的配比
以原料与辅料的比例、南瓜粉用量、冰糖粉用量、乙醇的浓度作为考察因素,进行正交试验设计,其中咀嚼片评分标准如下

通过正交试验可以看出,在试验设计范围内,因素主次为C>A>B>D,最优水平为A3B2C1D3,即湿润剂乙醇浓度对产品品质影响最大,其次是南瓜粉,再次是原辅料比,最后是冰糖粉用量。果蔬超微粉咀嚼片的最佳配比为南瓜粉为30%,原辅料比为8:2,乙醇的体积分数为50%,冰糖粉用量为15%,其余配方为

1.一种儿童果蔬超微粉咀嚼片,其特征在于,是由下述重量配比的原料制成的:
山楂超微粉:1.8份,枸杞超微粉:1.8份,南瓜超微粉:24份,番茄超微粉:3.4份,藕超微粉:16份,儿童豆奶粉:32份,甘露醇:15.5份,维生素C:1.5份,冰糖粉:3份,硬脂酸镁:1.5份,胡萝卜汁1份;
所述山楂超微粉、番茄超微粉、藕超微粉、南瓜超微粉,为将原料烘干,常温粉碎后过300目筛制得;
所述枸杞超微粉,为将原料烘干,低温-10℃粉碎后过300目筛制得;
制备方法为:
(1)按照各原料重量配比,称取原料;
(2)将山楂、枸杞、南瓜、藕、番茄进行超微粉制备;
(3)制粒:向制得的超微粉中,按照组分配比加入儿童豆奶粉、维生素C、甘露醇,并加入湿润剂和胡萝卜汁充分搅拌制软材,过筛制得颗粒;
