[0002] 桄榔,属初生目,棕榈科乔木,茎较粗壮,叶簇生于茎顶,叶鞘具黑色强壮的网状纤维和针刺状纤维。果实近球形,果实约在开花后2-3年时间成熟。桄榔味甘,性平,具有祛瘀破积、止痛的功效,对小儿疳积、发热、痢疾、咽喉炎症等有辅助治疗的功效。
[0003] 鎊鮍,鲤形目鲤科鰌亚科的通称,又称四方皮、镜鱼、彩圆儿。为小型淡水鱼类,成体可达6cm左右;体呈卵圆形或菱形;头短,口小;须I对或无;臀鳍始于背鳍基下方,背、臀鳍颇长,有或无硬刺;腹鳍腹位;尾鳍叉状;侧线鳞完全或不完全。鎊鮍味甘,性平,具有补气健脾、解毒的功效,主治久病体虚、痘毒。
[0004] 石斛,茎直立,肉质状肥厚,稍扁的圆柱形,上部多少回折状弯曲,基部明显收狭,不分枝,具多节,节有时稍肿大;节间多少呈倒圆锥形,干后金黄色。叶革质,长圆形。石斛味甘、淡、微咸,性寒,归胃、肾、肺经,具有明目强腰、益胃生津、润肺益肾、滋阴清热的功效,常用于病后虚热、目暗不明、阴伤津亏、口干烦渴、食少干呕。
[0005] 地血香果,为木兰科植物异型南五味子的果实。叶互生,纸质,叶片卵状椭圆形或宽椭圆形,先端渐尖或急尖,基部宽楔形或近圆形,上部边缘有疏齿或全缘,网脉明显。聚合果近球形,小浆果倒卵形,种子长圆形或肾形。地血香果具有强心补肾、止咳祛痰的功效,主治肾虚腰痛、气管、支气管炎、神经衰弱。
[0006]鱼卷,是将斩拌后的鱼糊放在黄铜或不锈钢管上焙烘而成,成品具有色泽金黄,香鲜可口,富有弹性等特色。可直接食用,也可切成片状,调菜食用,还可切成片状,丝状经油炸或烹调加工制成各种花色品种,是生活中的一道名菜,深受人们喜爱。以桄榔、鎊鮍为主要原料,石斛、地血香果为保健原料,生产出一种营养保健型鱼卷,目前还未见报道和产品上市。
发明内容
[0007] 本发明以桄榔、鎊鮍为原料,同时添加石斛、地血香果开发出一种桄榔风味鎊鮍鱼卷。填补了国内使用这类原料制作鱼卷的一项空白。
[0008] —种桄榔风味鎊鮍鱼卷,其特征在于,采用以下步骤:
A.桄榔预处理:取桄榔的肉质茎髓心,通过斩切机切成片状,入容器中,加入桄榔片重
2-5倍的水、0.4-0.6%的纤维素酶、0.2-0.4%的半纤维素酶、0.1-0.3%的果胶酶,搅拌均匀,加热至38-42 V,保持30-40分钟,后倒入打浆机进行打浆,再通过离心机进行浆渣分离,分离出上清液,制得湿桄榔粉;
B.鎊鮍预处理:取新鲜的鎊鮍鱼,去除杂质,清洗干净,放入绞肉机进行绞制,制得鎊鮍鱼泥,入容器中,加入鎊鮍鱼泥重0.5-1.5%的姜末、5-15%的淀粉、2-4%的料酒、1-2%的食盐,后通过斩拌机斩至鱼浆细腻,制得鎊鮍鱼泥;
C.中药材预处理:按一定比例取石斛、地血香果,加入原料中药材重5-20倍的水,浸泡
2-3小时,再煎煮0.5-1小时,后连同煎煮液一起,用打浆机制成中药浆,加入中药浆重1-3%的果醋酵母,密封静置发酵,待酒精度达到0.5-1.5%体积比,结束发酵;
D.成型:取湿桄榔粉10-30重量份,鎊鮍鱼泥80-120重量份,发酵的中药浆2_5重量份,混合搅拌均匀,放入自动成型机成型;
E.焙烤:将成型的鱼卷通过链条输送带输送至烤鱼卷机,进行滚动式焙烤,先用文火预热,后用强火进行加热,烤得鱼卷表面产生细小的焦斑,呈金黄色或深黄色,焙烤过程中需在鱼卷表面涂上蜂蜜,焙烤后的制品表面涂上植物油;
F.冷却:取出烤熟桄榔风味鎊鮍鱼卷,放入冷却设备进行冷却;

[0014] 本发明以桄榔、鎊鮍为原料,同时添加石斛、地血香果,制作出一种桄榔风味鎊鮍鱼卷。其充分利用桄榔、鎊鮍的营养价值,与中药相互配伍,协同增效,具有行消食化积、行气止痛的功效。发明中,采用纤维素酶、半纤维素酶、果胶酶对桄榔进行联合酶解,对中药材进行果醋酵母初发酵,为产品增添了醇香味,制得的成品柔润清脆,味道鲜美,且保健功能突出,长期食用可明显改善饮食积滞人群的不适。其制作工艺简单,易于实现,经济价值、社会价值显著。

具体实施方式
[0016] 实施例1,一种桄榔风味鎊鮍鱼卷,采用以下步骤制作:
A.桄榔预处理:取桄榔的肉质茎髓心,通过斩切机切成片状,入容器中,加入桄榔片重4倍的水、0.5%的纤维素酶、0.2%的半纤维素酶、0.2%的果胶酶,搅拌均匀,加热至40°C,保持35分钟,后倒入装有80目网筛的打浆机进行打浆,再通过离心机进行浆渣分离,分离出上清液,制得湿恍榔粉;
B.鎊鮍预处理:取新鲜的鎊鮍鱼,去除杂质,清洗干净,放入绞肉机进行绞制,制得鎊鮍鱼泥,入容器中,加入鎊鮍鱼泥重0.8%的姜末、10%的淀粉、3%的料酒、1.5%的食盐,后通过斩拌机斩至鱼浆细腻,制得鎊鮍鱼泥; C.中药材预处理:按重量比例取石斛55%、地血香果45%,加入原料中药材重10倍的水,浸泡2小时,再煎煮0.5,后连同煎煮液一起,用装有80目网筛的打浆机制成中药浆,加入中药浆重2%的果醋酵母,密封静置发酵,待酒精度达到1%体积比,结束发酵;
D.成型:取湿桄榔粉13kg,鎊鮍鱼泥10kg,发酵的中药浆5kg,混合搅拌均匀,放入自动成型机成型;
E.焙烤:将成型的鱼卷通过链条输送带输送至烤鱼卷机,进行滚动式焙烤,先用文火预热,后用160°C的强火进行加热,烤得鱼卷表面产生细小的焦斑,呈金黄色或深黄色,焙烤过程中需在鱼卷表面涂上蜂蜜,焙烤后的制品表面涂上植物油;
F.冷却:取出烤熟桄榔风味鎊鮍鱼卷,放入冷却设备进行冷却;
G.包装、杀菌:将冷却的桄榔风味鎊鮍鱼卷用食品级包装物进行真空包装,后进行微波杀菌;
H.检验、贮存:将检验合格的桄榔风味鎊鮍鱼卷贮存于3 0C的冷藏设备。
[0017] 本发明实施例1经15位饮食积滞的人群,连续食用7天,每日50克,症状明显缓解人数为9人,有效率为60%;连续食用15天,每日50克以上,症状明显缓解人数为11人,有效率为73.33%o
[0018] 实施例2,一种桄榔风味鎊鮍鱼卷,采用以下步骤制作:
A.桄榔预处理:取桄榔的肉质茎髓心,通过斩切机切成片状,入容器中,加入桄榔片重3倍的水、0.4%的纤维素酶、0.4%的半纤维素酶、0.1%的果胶酶,搅拌均匀,加热至39°C,保持38分钟,后倒入装有100目网筛的打浆机进行打浆,再通过离心机进行浆渣分离,分离出上清液,制得湿恍榔粉;
B.鎊鮍预处理:取新鲜的鎊鮍鱼,去除杂质,清洗干净,放入绞肉机进行绞制,制得鎊鮍鱼泥,入容器中,加入鎊鮍鱼泥重1%的姜末、8%的淀粉、2.5%的料酒、1.2%的食盐,后通过斩拌机斩至鱼浆细腻,制得鎊鮍鱼泥;
C.中药材预处理:按重量比例取石斛25%、地血香果18%、山皮条23%、芭茅果17%、芸香草17%,加入原料中药材重14倍的水,浸泡2.5小时,再煎煮0.7小时,后连同煎煮液一起,用装有100目网筛的打浆机制成中药浆,加入中药浆重1.5%的果醋酵母,密封静置发酵,待酒精度达到0.8%体积比,结束发酵;
D.成型:取湿桄榔粉25kg,鎊鮍鱼泥200kg,发酵的中药浆6kg,混合搅拌均匀,放入自动成型机成型;
E.焙烤:将成型的鱼卷通过链条输送带输送至烤鱼卷机,进行滚动式焙烤,先用文火预热,后用155°C强火进行加热,烤得鱼卷表面产生细小的焦斑,呈金黄色或深黄色,焙烤过程中需在鱼卷表面涂上蜂蜜,焙烤后的制品表面涂上植物油;
F.冷却:取出烤熟桄榔风味鎊鮍鱼卷,放入冷却设备进行冷却;
G.包装、杀菌:将冷却的桄榔风味鎊鮍鱼卷用食品级包装物进行真空包装,后进行微波杀菌;
H.检验、贮存:将检验合格的桄榔风味鎊鮍鱼卷贮存于3 0C的冷藏设备。
[0019]山皮条,为豆科植物四川木蓝的根或全株。小灌木,高I米。幼枝密生白色伏贴毛,后即无毛。单数羽状复叶,互生,小叶对生,椭圆形至倒卵形,先端钝圆或凹入,有小突尖,基部钝圆或楔形,全缘,两面具白色伏贴毛;小叶柄甚短。总状花序腋生,花蝶形,红色。荚果细长。山皮条味辛、苦、涩,性微温,具有宽中理气、解郁除毒的功效,主治肚腹冷痛、胸膈气胀、癀热、疮毒。

A.桄榔预处理:取桄榔的肉质茎髓心,通过破碎机进行破碎,入容器中,加入破碎桄榔重3倍的水、0.5%的纤维素酶、0.3%的半纤维素酶、0.3%的果胶酶,搅拌均匀,加热至41°C,保持33分钟,后倒入装有80目网筛的打浆机进行打浆,再通过离心机进行浆渣分离,分离出上清液,制得湿恍榔粉;
B.鎊鮍预处理:取新鲜的鎊鮍鱼,去除杂质,清洗干净,放入绞肉机进行绞制,制得鎊鮍鱼泥,入容器中,加入鎊鮍鱼泥重1.2%的姜末、12%的淀粉、3%的料酒、1.6%的食盐,后通过斩拌机斩至鱼浆细腻,制得鎊鮍鱼泥;
C.中药材预处理:按重量比例取石斛20%、地血香果13%、山皮条15%、芭茅果12%、芸香草13%、草豆蔻15%、凹朴皮12%,加入原料中药材重17倍的水,浸泡3小时,再煎煮I小时,后连同煎煮液一起,用装有80目网筛的打浆机制成中药浆,加入中药浆重2.5%的果醋酵母,密封静置发酵,待酒精度达到1.2%体积比,结束发酵;
D.成型:取湿桄榔粉50kg,鎊鮍鱼泥300kg,发酵的中药楽I Okg,混合搅拌均勾,放入自动成型机成型;
E.焙烤:将成型的鱼卷通过链条输送带输送至烤鱼卷机,进行滚动式焙烤,先用文火预热,后用160°C强火进行加热,烤得鱼卷表面产生细小的焦斑,呈金黄色或深黄色,焙烤过程中需在鱼卷表面涂上蜂蜜,焙烤后的制品表面涂上植物油;
F.冷却:取出烤熟桄榔风味鎊鮍鱼卷,放入冷却设备进行冷却;
G.包装、杀菌:将冷却的桄榔风味鎊鮍鱼卷用食品级包装物进行真空包装,后进行微波杀菌;
