[0002] 蝴蛄,又名大头虾,现在,中国共有4种蝴蛄,有3种生活在东北地区的山地溪流或山地附近的河川、湖泊里,肉质细腻,味道鲜美,仅在深山中还有少数。蝴蛄生活在河中,夕卜形像海里的龙虾,只是尾巴很长,头尾比例相当,头前部有一对大大的钳子,雄性蝴蛄的鳌足粗壮非常威武,雌性稍小。喇蛄活着的时候是青色的外表光滑。喇蛄营养丰富,且其肉质松软,易消化,对身体虚弱以及病后需要调养的人是极好的食物。蝴蛄味甘,性温,归肝、肾二经。具有补肾壮阳、养血固精、化瘀解毒、益气滋阳、通络止痛、开胃化痰的功效,常用于肾虚阳痿、遗精早泄、乳汁不通、筋骨疼痛、手足抽搐、全身瘙痒、皮肤溃疡、身体虚弱等。

[0005] 果上叶,为兰科植物密花石豆兰的全草。石豆兰多年生常绿草本,高6-10厘米。根茎匍匐横走,有节。假鳞茎肉质,绿色有棱,圆柱状长卵形,长1.5-3厘米,每一假鳞茎上生I叶。叶革质,厚而脆,长椭圆形,长4-6厘米,宽0.6-1.5厘米,先端凹入,基部楔形,全缘,中脉明显。果上叶味甘、淡,性平。具有润肺化痰、舒筋活络、消炎的功效,常用于肺结核咯血、慢性气管炎、慢性咽炎、风湿筋骨疼痛。
[0006] 酱是以豆类、小麦粉、水果、肉类或鱼虾等物为主要原料,加工而成的糊状调味品,它起源于中国,有着悠久的历史。现在,中国人常见的调味酱分为以小麦粉为主要原料的甜面酱,和以豆类为主要原料的豆瓣酱两大类;肉酱、鱼酱和果酱作为调味酱已经不常见。以手参、蝴蛄为主要原料,仙掌子、果上叶为保健原料,生产出一种营养保健型肉酱,目前还未见报道和产品上市。
发明内容
[0007] 本发明以蝴蛄为原料,同时添加仙掌子、果上叶开发出一种手参风味蝴蛄肉酱,填补了国内使用这类原料制作肉酱的一项空白。
[0008] —种手参风味蝴蛄肉酱的制作方法,其特征在于,采用以下步骤:
A.手参预处理:取新鲜的手参,去除杂质,清洗干净,放入60-80目的打浆机打浆,制得手参楽
B.蝴蛄预处理:取新鲜的蝴蛄,清洗干净,剥壳取出蝴蛄肉,放入清水中浸泡60-120分钟,再放入绞肉机,制得蝴蛄肉泥,加入蝴蛄肉重5-10%的料酒、2-4%的姜末,放入调味机调味腌制30-60分钟;
C.中药材预处理:按一定比例取中药材手参、仙掌子、果上叶,清洗干净,加入原料中药材重8-15倍的水,煎煮30-60分钟,再用60-80目网筛的过滤设备进行过滤,取得中药汁;
D.酱汁预处理:取适量的辣椒酱、辣椒酱重30-40%的黄豆酱、10-20%的中药汁,5-10%的甜面酱放入容器,加入酱重1-2倍的水,搅拌均匀,调成酱汁;
E.熬煮:向不锈钢锅内加入橄榄油10-15重量份,加热至100°C_120°C,倒入蝴蛄泥100-150重量份,手参楽30-50重量份、翻炒5_10分钟,加入酱汁40-60重量份、醋1_3重量份、蒜蓉泥5-10重量份,大火烧开,后用小火继续熬煮,最后加入5-10重量份白芝麻,翻炒至汁水收干即可;
F.罐装,冷却:将手参风味蝴蛄肉酱趁热称量,分装入已灭菌的容器设备中,迅速封口,装罐温度控制在75-80 °C,后进行常温冷却;
G.检验、贮存:将检验合格的手参风味蝴蛄肉酱置于阴凉、干燥、通风的库房中存放。

C.中药材预处理:按重量比例取中药材仙掌子53%、果上叶47%,清洗干净,加入原料中药材重8倍的水,煎煮30分钟,再用60目网筛的过滤设备进行过滤,取得中药汁;
D.酱汁预处理:取适量的辣椒酱、辣椒酱重30%的黄豆酱、10%的中药汁,5%的甜面酱放入容器,加入酱重1-2倍的水,搅拌均匀,调成酱汁;
E.熬煮:向不锈钢锅内加入橄榄油1kg,加热至1000C,倒入蝴蛄泥10kg,手参浆30kg、翻炒5分钟,加入酱汁40kg、醋I kg、蒜蓉泥5kg,大火烧开,后用小火继续熬煮,最后加入5kg白芝麻,翻炒至汁水收干即可;
F.罐装,冷却:将手参风味蝴蛄肉酱趁热称量,分装入已灭菌的容器设备中,迅速封口,装罐温度控制在75 °C,后进行常温冷却;

B.蝴蛄预处理:取新鲜的蝴蛄,清洗干净,剥壳取出蝴蛄肉,放入清水中浸泡120分钟,再放入绞肉机,制得蝴蛄肉泥,加入蝴蛄肉重10%的料酒、2-4%的姜末,放入调味机调味腌制60分钟;
C.中药材预处理:按重量比例取中药材仙掌子15%、果上叶13%、板栗15%、野核桃仁10%、巴戟天15%、麦门冬17%、黑皮根15%,清洗干净,加入原料中药材重15倍的水,煎煮60分钟,再用80目网筛的过滤设备进行过滤,取得中药汁;
D.酱汁预处理:取适量的辣椒酱、辣椒酱重40%的黄豆酱、20%的中药汁,10%的甜面酱放入容器,加入酱重2倍的水,搅拌均匀,调成酱汁;
E.熬煮:向不锈钢锅内加入橄榄油15kg,加热至120°C,倒入蝴蛄泥100-150kg,手参浆50kg、翻炒10分钟,加入酱汁60kg、醋3kg、蒜蓉泥10kg,大火烧开,后用小火继续熬煮,最后加入1kg白芝麻,翻炒至汁水收干即可;
F.罐装,冷却:将手参风味蝴蛄肉酱趁热称量,分装入已灭菌的容器设备中,迅速封口,装罐温度控制在80 °C,后进行常温冷却;
G.检验、贮存:将检验合格的手参风味蝴蛄肉酱置于阴凉、干燥、通风的库房中存放。

[0024]黑皮根,为番荔枝科植物陵水暗罗的根。全年可采,洗净,切片,晒干。陵水暗罗灌木,高1-4米。根通常单一,少分枝,根肥厚,外皮黑色,内部粉质,有特异香气。茎枝褐黑色,有疏毛。黑皮根味甘,性平。具有健脾益胃、补肾固精的功效,主治慢性胃炎、脾胃亏损、食欲不振、四肢无力、遗精。
