Abstract
本发明涉及一种降血脂燕麦红曲保健茶及其制备方法,属于功能性固体饮料、保健食品和医药领域。燕麦富含膳食纤维、β‑葡聚糖等成分,具有辅助降血脂、减缓血糖增加功效。燕麦适当发芽提高了多种生物酶活力和活性物质含量,有利于促进红曲霉生长代谢。发芽燕麦接种功能性红曲霉发酵剂,提高了Monacolin K(他汀类)、麦角固醇、γ‑氨基丁酸、红曲色素等多种保健功效成分,提高降血脂效果。本发明生产工艺简单、产品冲泡成茶,酸甜可口、香气浓郁。
Description
技术领域:本发明涉及一种降血脂燕麦红曲保健茶及制备方法,属于饮料类保健食品、发酵工程技术领域,可应用于食品和医药行业。
背景技术:燕麦(Avena sativa L.)是世界性栽培作物,分布在五大洲40多个国家,主要集中于北半球的温带地区,北纬41°~43°是世界公认燕麦黄金生长纬度带,这里海拔1000米以上高原地区,年均气温2.5℃,日照平均可达16小时,是燕麦生长最佳自然环境。燕麦主要有两种:皮燕麦、裸燕麦。皮燕麦成熟后带壳,如澳洲燕麦;我国生产的主要是成熟后不带壳的裸燕麦(莜麦、油麦),在内蒙古、河北、河南、山西、甘肃、陕西、云南、四川、宁夏、贵州、青海等省区多有栽培,其适应性强,耐寒、耐旱、喜日照,是我国山区、高原、高寒地区的主要作物之一,生长期与小麦大致相同,年种植面积1800余万亩。
《本草纲目》中燕麦称为雀麦、野麦子,其性味甘平,能益脾养心、敛汗,可用于体虚自汗、盗汗或肺结核病人,煎汤服或“舂去皮作面蒸食及作饼食”。1997年美国FDA认定燕麦为功能性食物,具有降低胆固醇、平稳血糖的功效。美国《时代》杂志评选的“全球十大健康食物”中燕麦位列第五,是唯一上榜的谷类。现代医学表明,燕麦富含膳食纤维、β-葡聚糖,能促进肠胃蠕动,清理肠道垃圾,预防便秘;热量低,升糖指数低,降脂降糖,预防和控制糖尿病;能延缓胃排空,增加饱腹感,控制食欲,有益于减肥瘦身、预防和控制肥胖症,减少患高血压、中风等心血管疾病风险。中国裸燕麦含粗蛋白达15.6%,脂肪8.5%及磷、铁、钙等元素,与其它8种粮食相比,均名列前茅。燕麦中水溶性膳食纤维分别是小麦、玉米的4.7倍和7.7倍,B组维生素、尼克酸、叶酸、泛酸等含量丰富。
红曲在我国已有上千年历史。北宋陶谷的《清异录》中记载“以红曲煮肉”;李时珍《本草纲目》等记载了红曲制法及功能。红曲米是红曲霉发酵产物,颜色赤红,故被称为赤曲、红大米等。红曲霉发酵过程中可产生红曲色素、Monacolin K(他汀类物质)、麦角固醇、γ-氨基丁酸等多种次级代谢产物。目前常见红曲产品主要包括:红曲米、红曲红、红曲酶、洛伐他汀类等。红曲色素是一种优良天然食品着色剂,还具有防 腐和保健功效。MonacolinK能特异性抑制胆固醇合成系统中的限速酶HMG-CoA(3-羟基-3甲基戊二酸单酰CoA)还原酶活性,具有降低血浆中胆固醇、LDL(低密度蛋白)、IDL(中密度蛋白)等作用,可增加高密度蛋白HDL,降低抗动脉粥样硬化的风险。红曲霉发酵产生γ-氨基丁酸(γ-aminobutyricacid,GABA)具有降血压、利尿、调节激素分泌、提高记忆力等多种生理功效,并参与多种代谢活动的神经递质。麦角固醇(Ergosterol,C28H43OH,又称麦角甾醇)是维生素D2的前体,经过紫外线照射可转化为维生素D2,促进孕妇和老年人的钙、磷吸收,预防婴幼儿佝偻病等作用。
竹叶、银杏叶已被我国卫生部列入″药食两用植物″。银杏叶(白果叶)中含有天然活性黄酮及苦内酯等与人体健康有益的多种成份,具有促进胆固醇代谢,扩张血管的作用,可预防心血管疾病。竹叶含有黄酮、酚酮、蒽醌、内酯等成分,具有抗氧化、清除自由基、降血脂等功效。沙棘果富含维生素C,被誉为天然维生素C的宝库,还含有多种黄酮类化合物,其中异鼠李素、槲皮素含量高,具有增加心肌营养及冠状动脉血流量、降低心肌耗氧量、抑制血小板聚集等作用。
目前,随着经济条件改善和生活水平提高,高血压、高血脂、高血糖的“三高”人群激增,开发降血脂类功能性食品具有良好市场前景。本发明提供了一种降血脂燕麦芽红曲保健茶及其制备方法,以发芽燕麦为主要原料,将选育的高产Monacolin K红曲霉作为主要发酵菌剂,发酵制备燕麦红曲保健茶。

发明内容:本发明提供了一种降血脂燕麦红曲保健茶及制备方法,其特征是以适当发芽燕麦为主要原料,以诱变选育红曲霉(Monascus sp.)CGMCC No.12502为发酵剂,在适宜环境条件下发酵制备富含Monacolin K的功能性燕麦芽红曲。并与烘焙的焦香燕麦、竹叶及银杏叶等按照一定比例复配混合,添加适量甜叶菊、沙棘果,制得降血 脂燕麦芽红曲保健茶。以固体饮料类食品形式,改变红曲类保健品多以胶囊或片剂的制剂形式。
技术方案:本发明提供一种降血脂燕麦芽红曲保健茶及制备方法,其特征是燕麦经适当发芽。研究表明,燕麦富含膳食纤维、β-葡聚糖、燕麦蛋白、燕麦肽、多酚等抗氧化物质,具有降血脂、降血糖等功效;燕麦发芽过程中,淀粉酶、蛋白酶等复合酶活性明显增加,直链淀粉和支链淀粉含量明显降低,可溶性糖、游离氨基酸、维生素、多酚类等含量明显提高,燕麦发芽有利于红曲霉生长代谢,提高其营养价值。
功能性红曲燕麦芽制备。诱变选育的Monascus sp.CGMCC No.12502接种于发芽燕麦,发酵过程消耗部分还原糖、淀粉等,并产生Monacolin K(他汀类物质)、麦角固醇、γ-氨基丁酸、红曲色素等多种次级代谢产物,制备的功能性红曲燕麦芽,其营养价值、降血脂保健功效进一步提高。
燕麦经适当烘焙,获得焦香风味燕麦,并与功能性红曲燕麦芽、竹叶、银杏叶、甜叶菊、沙棘果等适当比例复配,制得降血脂燕麦红曲保健茶,开水冲泡成茶,汤色红润,酸甜适口,香气浓郁。

技术效果:本发明生产工艺简单、成本低、食用安全,产品冲泡成茶,汤色红润、酸甜适口,香气浓郁、饮用方便;利用燕麦芽及功能红曲的复合酶系,复配银杏叶、竹叶、沙棘等,富含Monacolin K(他汀类)、β-葡聚糖、总黄酮等,增强其调节血脂和降血脂的保健功效。动物试验结果初步表明,该产品具有一定降血脂保健功效。
具体实施方式:
实施例1:按以下4个步骤(工艺流程及控制条件)实施。
(1)燕麦发芽:裸燕麦籽粒挑选除杂后,用1%次氯酸钠溶液浸泡30s消毒,用灭菌水反复冲洗4次,浸泡12h,置于25℃、相对湿度93%的发芽箱中发芽至根长1cm左右,50℃干燥,制得发芽燕麦。
(2)功能性燕麦芽红曲制备:在0.5L玻璃瓶或塑料瓶内放置100g发芽燕麦,3层棉布包扎封瓶口,110℃灭菌20分钟,接种诱变选育的红曲霉CGMCC No.12502发酵剂,在温度25℃、相对湿度90%条件下发酵20天,55℃干燥、粉碎至20目,制得富含Monacolin K的功能性燕麦芽红曲。
(3)焦香燕麦制备:将经清洗、粉碎至20目的燕麦加热干燥,160℃温度干燥、烘炒,烘炒时间为1.0h,制得焦香燕麦。
(4)调配制备:将功能性燕麦芽红曲,焦香燕麦,竹叶,银杏叶按照5∶1∶0.15∶0.15比例复配,添加适量甜叶菊、沙棘果,分装5g-10g小袋,制得降血脂燕麦芽红曲保健茶。
实施例2:按以下4个步骤(工艺流程及控制条件)实施。
(1)燕麦发芽:裸燕麦籽粒挑选除杂后,用1%次氯酸钠溶液浸泡30s消毒,用灭菌水反复冲洗4次,浸泡14h,置于28℃、相对湿度95%的发芽箱中发芽至根长1cm左右,55℃干燥,制得发芽燕麦。
(2)功能性燕麦芽红曲制备:在1L玻璃瓶或塑料瓶内放置250g发芽燕麦,4层棉布包扎封瓶口,115℃灭菌15分钟,接种诱变选育的红曲霉CGMCC No.12502发酵剂,在温度28℃、相对湿度95%条件下发酵15天,60℃干燥、粉碎至30目,制得富含Monacolin K的功能性燕麦芽红曲。
(3)焦香燕麦制备:将经清洗、粉碎至30目的燕麦加热干燥,170℃温度干燥、烘炒,烘炒时间为0.8h,制得焦香燕麦。
(4)调配制备:将功能性燕麦芽红曲,焦香燕麦,竹叶,银杏叶按照4∶1∶0.15∶0.15比例复配,添加适量甜叶菊、沙棘果,分装5g-10g小袋,制得降血脂燕麦芽红曲保健茶。
实施例3:按以下4个步骤(工艺流程及控制条件)实施。
(1)燕麦发芽:裸燕麦籽粒挑选除杂后,用1%次氯酸钠溶液浸泡30s消毒,用灭菌水反复冲洗5次,浸泡16h,置于30℃、相对湿度95%的发芽箱中发芽至根长1cm左右,60℃干燥,制得发芽燕麦。
(2)功能性燕麦芽红曲制备:在1L玻璃瓶或塑料瓶内放置300g发芽燕麦,4层棉布包扎封瓶口,121℃灭菌10分钟,接种诱变选育的红曲霉CGMCC No.12502发酵剂,在温度32℃、相对湿度95%条件下发酵15天,60℃干燥、粉碎至40目,制得富含Monacolin K的功能性燕麦芽红曲。
(3)焦香燕麦制备:将经清洗、粉碎至40目的燕麦加热干燥,180℃温度干燥、烘炒,烘炒时间为0.5h,制得焦香燕麦。
(4)调配制备:将功能性燕麦芽红曲,焦香燕麦,竹叶,银杏叶按照3∶1∶0.15∶0.15比例复配,添加适量甜叶菊、沙棘果,分装5g-10g小袋,制得降血脂燕麦芽红曲保健茶。
Claims (2)
1.一种降血脂燕麦红曲保健茶,其特征是以发芽燕麦接种选育的红曲霉(Monascussp.)CGMCC No.12502,发酵制备富含Monacolin K的功能性燕麦芽红曲,并将经干燥、粉碎过筛的功能性燕麦芽红曲与焦香燕麦、竹叶、银杏叶、甜叶菊、沙棘果按比例复配混合,即制得燕麦芽红曲保健茶。
2.权利要求1所述的降血脂燕麦红曲保健茶制备方法,其特征是生产工艺流程及控制条件如下:
(1)发芽燕麦制备:裸燕麦籽粒挑选除杂后,用1%次氯酸钠溶液浸泡30s消毒,用灭菌水反复冲洗4-5次,浸泡12-16h,置于25℃-30℃、相对湿度93%-95%的发芽箱中发芽至根长1cm左右,50℃-60℃干燥,制得发芽燕麦。
(2)功能性燕麦芽红曲制备:在0.5L-1L玻璃瓶或塑料瓶内放置100g-300g发芽燕麦,3-5层棉布包扎封瓶口,110℃-121℃灭菌10-20分钟,接种诱变选育的红曲霉CGMCC No.12502发酵剂,在温度25℃-35℃、相对湿度90%-95%条件下发酵15-20天,55℃-60℃干燥、粉碎至20目-40目,制得富含Monacolin K的功能性燕麦芽红曲。
(3)焦香燕麦制备:将经清洗、粉碎至20目-40目的燕麦加热干燥,160-180℃温度干燥、烘炒,烘炒时间为0.5-1.0h,制得焦香燕麦。
(4)降血脂燕麦芽红曲保健茶的调配制备:将功能性燕麦芽红曲,焦香燕麦,竹叶,银杏叶按照5∶1∶0.15∶0.15--3∶1∶0.15∶0.15比例复配,添加适量甜叶菊、沙棘果,分装5g-10g小袋,制得降血脂燕麦芽红曲保健茶。
