本发明目的就是为了弥补已有技术的缺陷,提供一种滋补养胃的山药颗粒茶饮及其制备方法。

一种滋补养胃的山药颗粒茶饮,由以下重量份的原料组成:铁棍山药300-310、芋头50-52、南瓜子仁22-23、猴头菇15-16、菠萝20-22、沙枣汁12-13、纳豆干粉3-4、鱼腥草1-2、陈皮5-6、水适量。
根据权利要求l所述的滋补养胃的山药颗粒茶饮的制备方法,包括如下步骤:
(1)选取新鲜无霉变无虫蛀的铁棍山药洗净去皮切小块,投入到沸水中烫漂3-4分钟,水中加入山药重量份0.04-0.05%抗坏血酸护色处理防止山药发生褐变,捞出冷却后加适量水打磨成浆,添加2-3%蜂蜜、5-6%果葡糖浆混合均匀,接种植物乳杆菌发酵剂5-6%,在30-35℃条件下发酵7-8小时,灭菌后均质2-3次,旋转蒸发仪中浓缩2-3小时,得到铁棍山药浓缩发酵浆液;
(2)猴头菇用清水浸泡5-6小时捞出,芋头、菠萝去皮取果肉切小块,鱼腥草、陈皮加适量水煮制25-30分钟滤去残渣,与其他剩余成分加适量水打磨成浆,得到营养辅料;

(1)选取新鲜无霉变无虫蛀的铁棍山药洗净去皮切小块,投入到沸水中烫漂3-4分钟,水中加入山药重量份0.04-0.05%抗坏血酸护色处理防止山药发生褐变,捞出冷却后加适量水打磨成浆,添加2-3%蜂蜜、5-6%果葡糖浆混合均匀,接种植物乳杆菌发酵剂5-6%,在30-35℃条件下发酵7-8小时,灭菌后均质2-3次,旋转蒸发仪中浓缩2-3小时,得到铁棍山药浓缩发酵浆液;
(2)猴头菇用清水浸泡5-6小时捞出,芋头、菠萝去皮取果肉切小块,鱼腥草、陈皮加适量水煮制25-30分钟滤去残渣,与其他剩余成分加适量水打磨成浆,得到营养辅料;
(3)将铁棍山药浓缩发酵浆液与营养辅料混合均匀,添加0.8-0.9%甘露醇、3.5-3.6%海藻酸钠作为改良剂,采用冷冻干燥与微波真空联合干燥工艺以最大限度地保留原料中的营养物质,既在冷冻干燥4-5小时后取出进行微波真空干燥,微波真空干燥时温度为30-35℃,然后进行超微粉碎处理,得到原料超微粉;
(4)原料超微粉中添加重量份0.7-0.8%魔芋胶、2-3%黄原胶、7-8%麦芽糊精、2.4-2.5%改性大豆磷脂作为粘结剂,添加浓度为40-50%的酒精搅拌均匀制成湿料,酒精添加量为手握成团,轻压即散为标准;
(5)湿料滚制成大颗粒,经微波干燥处理挥发出其中的酒精及多余水分并保留其中的疏松微孔,取出冷却后过20-40目筛,灭菌后分袋密封包装即可。
