本发明公开了一种减肥巧克力糖,由以下原料制成:可可液块、低聚异麦芽糖、瘦瘦果、脱脂乳粉、辣椒叶、荷叶、麦冬草、小飞蓬、食盐、开菲尔、善存粉、溶菌酶。本发明提供的一种减肥巧克力糖,原料丰富,外脆里软,酸甜适口,香味浓郁,营养均衡,易于吸收,能够增强免疫力,保护心脑血管,促进胃肠功能,抗氧化,排毒养颜,减肥瘦身,不反弹;以功能性低聚糖代替白砂糖,甜度温和,抑制糖分吸收,减少摄糖量,抑制体重增加;中药广泛易得,变废为宝,富含天然降脂成分,从根本上减肥瘦身;用蔬菜纸和石头纸进行包装,价格低廉,安全无毒,能够保护环境,节约成本;加入溶菌酶,天然抗菌,增加蛋白质含量,不含任何添加剂,食用安全健康。

技术领域
本发明主要涉及糖果加工领域,尤其涉及一种减肥巧克力糖。
背景技术
巧克力作为一种糖果制品,其营养和功能正逐渐得到越来越多消费者的重视,较多的研究指出,巧克力是一种健康食品,除了能为人体提供能量和营养外,还能预防心血管疾病,缓解过敏和风湿症状。美国哈佛医学院研究表明,巧克力对防癌、提高记忆力、防止痴呆、降低血压、防治胃溃疡都有意想不到的效果。
瘦瘦果,又名瘦身果、减肥果,学名大果藤黄。营养丰富,富含蛋白质、脂肪、粗纤维、核黄素、尼克酸、维生素C、羟基柠檬酸(HCA)等,HCA能够抑制脂肪的形成,从而达到减肥的效果,具有健脾消食,润肠通便,利咽消肿,补充营养,防癌抗癌,保护心脑血管,美容养颜,减肥瘦身,天然减肥,不反弹。
巧克力在中国的需求十分强劲,每年以25%的比例上升。目前市场上的巧克力产品风味比较少,热量高,多食容易导致肥胖,随着人们保健意识的不断增强,传统的高糖高脂巧克力已经不能得到青睐,市场亟需一种能够减肥瘦身,控制体重的巧克力糖。
发明内容
为了弥补已有技术的缺陷,本发明的目的是提供一种减肥巧克力糖。
一种减肥巧克力糖,由以下重量份的原料制成:可可液块56~58、低聚异麦芽糖21~23、瘦瘦果12~14、脱脂乳粉3~4、辣椒叶1.4~1.6、荷叶1.4~1.6、麦冬草1.1~1.3、小飞蓬0.4~0.6、食盐0.4~0.6、开菲尔0.6~0.8、善存粉0.2~0.3、溶菌酶0.02~0.03。
所述的瘦瘦果,为鲜果。
所述的复合酶,由以下重量比的酶制剂组成:纤维素酶:半纤维素酶:木聚糖酶:β-葡聚糖苷酶:脂肪酶=13~14:9~10:6~7:6~7:2~3。
一种减肥巧克力糖的制备方法,其具体步骤为:
(1)将瘦瘦果洗净,切块,长2.2~2.4cm,宽1.1~1.2cm,厚0.5~0.6cm,置于56~58℃的烘箱中烘干至含水量瘦瘦果重量的34~36%(w/w),得瘦瘦果干;
(2)将辣椒叶、荷叶、麦冬草和小飞蓬粉碎,过120~140目筛,得中药粉,加入中药粉重量3~4倍量的纯净水,混合均匀,加入复合酶,搅拌均匀,置于38~39℃水浴,47~49转/分钟,搅拌酶解4~5小时,加热煮沸后,停火,浸泡2~3小时,8000转/分钟离心15分钟,得提取液和中药渣,向药渣中加入药渣重量2~3倍量的体积分数为64~66%的酒精溶液,34~36转/分钟,搅拌处理30~40分钟,充分提取有效成分,提高中药利用率,10000转/分钟离心10分钟,得提取液和中药渣,合并所有提取液,67~69℃烘箱中干燥至无水分含量为瘦瘦果重量的0.6~0.8倍,得中药提取物;
(3)将中药提取物与瘦瘦果干混合均匀,加入脱脂乳粉和善存粉,34~36转/分钟搅拌12~14分钟,加入开菲尔,42~44转/分钟搅拌13~15分钟,充分混合均匀,置于22~24℃发酵20~24小时,使口感酸甜,促进物质分解,产生益生因子,利于吸收利用,加入食盐,混合均匀,置于3~5℃放置6~8小时,抑制杂菌生长,控制发酵,防止口感过酸,酸味适中,置于-44~-42℃的真空冷冻干燥机中冷冻干燥至水分含量为瘦瘦果重量的2~3%(w/w),得发酵瘦瘦果干;
(4)将可可液块加热至46~48℃,不断搅拌至完全融化,加入低聚异麦芽糖和溶菌酶,46~48转/分钟搅拌12~14分钟,精磨4~5小时,置于72~76℃精炼2~3小时,5℃/分钟降温至35℃,保持温度20~30分钟,2℃/分钟升温至45℃,保持温度30~40分钟,4℃/分钟降温至34℃,保持温度3~4小时,使巧克力组织细腻,成分均匀,入口即化,得可可浆料;
(5)将发酵瘦瘦果干浸入可可浆中,取出,置于模具中,于-14~-12℃冷却间,冷却16~18分钟,置于56~58℃的烘箱中3~4分钟,取出,置于-14~-12℃冷却间,冷却16~18分钟,使巧克力组织更加致密,脱模,用可食性白菜纸单独包装,得减肥巧克力糖;
(6)用石头纸进行外包装,得成品。
辣椒叶:富含多种氨基酸及矿质元素,能够驱寒养血,保胃健脾,促进胃肠功能,补肝明目,减肥美容。
荷叶:富含多种有效成分,保护心脑血管,降血脂,降血压,利尿通便,排毒养颜,减肥瘦身,不反弹。
麦冬草:镇静镇痛,降血糖,促进胃肠功能,提高抗饥饿能力,保护心脏,抗疲劳。
小飞蓬:抗菌消炎,保护心脏,清热利湿,散瘀消肿。
本发明的优点是:本发明提供的一种减肥巧克力糖,原料丰富,外脆里软,酸甜适口,香味浓郁,营养均衡,易于吸收,不含白砂糖,能够增强免疫力,保护心脑血管,促进胃肠功能,抗氧化,抗老防衰,排毒养颜,减肥瘦身,不反弹;以功能性低聚糖代替白砂糖,甜度温和,不甜腻,抑制糖分吸收,减少摄糖量,抑制体重增加;植物材料富含天然降脂减肥成分,并经开菲尔发酵,酸甜适口,促进肠道排毒,在肠内形成抑脂膜,从根本上减肥瘦身,美容养颜;用蔬菜纸和石头纸进行包装,价格低廉,安全无毒,无污染,能够保护环境,节约成本;加入溶菌酶,天然抗菌,增加蛋白质含量,不含任何添加剂,食用安全健康。

下面用具体实施例说明本发明。
实施例1
一种减肥巧克力糖,由以下重量份的原料制成:可可液块56、低聚异麦芽糖21、瘦瘦果12、脱脂乳粉3、辣椒叶1.4、荷叶1.4、麦冬草1.1、小飞蓬0.4、食盐0.4、开菲尔0.6、善存粉0.2、溶菌酶0.02。
所述的复合酶,由以下重量比的酶制剂组成:纤维素酶:半纤维素酶:木聚糖酶:β-葡聚糖苷酶:脂肪酶=13:9:6:6:2。
一种减肥巧克力糖的制备方法,其具体步骤为:
(1)将瘦瘦果洗净,切块,长2.2cm,宽1.1cm,厚0.5cm,置于56℃的烘箱中烘干至含水量瘦瘦果重量的34%(w/w),得瘦瘦果干;
(2)将辣椒叶、荷叶、麦冬草和小飞蓬粉碎,过120目筛,得中药粉,加入中药粉重量3倍量的纯净水,混合均匀,加入复合酶,搅拌均匀,置于38℃水浴,47转/分钟,搅拌酶解4小时,加热煮沸后,停火,浸泡2小时,8000转/分钟离心15分钟,得提取液和中药渣,向药渣中加入药渣重量2倍量的体积分数为64%的酒精溶液,34转/分钟,搅拌处理30分钟,充分提取有效成分,提高中药利用率,10000转/分钟离心10分钟,得提取液和中药渣,合并所有提取液,67℃烘箱中干燥至无水分含量为瘦瘦果重量的0.6倍,得中药提取物;
(3)将中药提取物与瘦瘦果干混合均匀,加入脱脂乳粉和善存粉,34转/分钟搅拌12分钟,加入开菲尔,42转/分钟搅拌13分钟,充分混合均匀,置于22℃发酵20小时,使口感酸甜,促进物质分解,产生益生因子,利于吸收利用,加入食盐,混合均匀,置于3℃放置6小时,抑制杂菌生长,控制发酵,防止口感过酸,酸味适中,置于-44℃的真空冷冻干燥机中冷冻干燥至水分含量为瘦瘦果重量的2%(w/w),得发酵瘦瘦果干;
(4)将可可液块加热至46℃,不断搅拌至完全融化,加入低聚异麦芽糖和溶菌酶,46~48转/分钟搅拌12分钟,精磨4小时,置于72℃精炼2小时,5℃/分钟降温至35℃,保持温度20分钟,2℃/分钟升温至45℃,保持温度30分钟,4℃/分钟降温至34℃,保持温度3小时,使巧克力组织细腻,成分均匀,入口即化,得可可浆料;
(5)将发酵瘦瘦果干浸入可可浆中,取出,置于模具中,于-14℃冷却间,冷却16分钟,置于56℃的烘箱中3分钟,取出,置于-14℃冷却间,冷却16分钟,使巧克力组织更加致密,脱模,用可食性白菜纸单独包装,得减肥巧克力糖;
(6)用石头纸进行外包装,得成品。
实施例2
一种减肥巧克力糖,由以下重量份的原料制成:可可液块57、低聚异麦芽糖22、瘦瘦果13、脱脂乳粉3.5、辣椒叶1.5、荷叶1.5、麦冬草1.2、小飞蓬0.5、食盐0.5、开菲尔0.7、善存粉0.2、溶菌酶0.02。
所述的复合酶,由以下重量比的酶制剂组成:纤维素酶:半纤维素酶:木聚糖酶:β-葡聚糖苷酶:脂肪酶=14:9:7:6:3。
一种减肥巧克力糖的制备方法,其具体步骤为:
(1)将瘦瘦果洗净,切块,长2.3cm,宽1.1cm,厚0.5cm,置于57℃的烘箱中烘干至含水量瘦瘦果重量的35%(w/w),得瘦瘦果干;
(2)将辣椒叶、荷叶、麦冬草和小飞蓬粉碎,过130目筛,得中药粉,加入中药粉重量3.5倍量的纯净水,混合均匀,加入复合酶,搅拌均匀,置于38℃水浴,48转/分钟,搅拌酶解4.5小时,加热煮沸后,停火,浸泡2.5小时,8000转/分钟离心15分钟,得提取液和中药渣,向药渣中加入药渣重量2.5倍量的体积分数为65%的酒精溶液,35转/分钟,搅拌处理35分钟,充分提取有效成分,提高中药利用率,10000转/分钟离心10分钟,得提取液和中药渣,合并所有提取液,68℃烘箱中干燥至无水分含量为瘦瘦果重量的0.7倍,得中药提取物;
(3)将中药提取物与瘦瘦果干混合均匀,加入脱脂乳粉和善存粉,35转/分钟搅拌13分钟,加入开菲尔,43转/分钟搅拌14分钟,充分混合均匀,置于23℃发酵22小时,使口感酸甜,促进物质分解,产生益生因子,利于吸收利用,加入食盐,混合均匀,置于4℃放置7小时,抑制杂菌生长,控制发酵,防止口感过酸,酸味适中,置于-43℃的真空冷冻干燥机中冷冻干燥至水分含量为瘦瘦果重量的2.5%(w/w),得发酵瘦瘦果干;
(4)将可可液块加热至47℃,不断搅拌至完全融化,加入低聚异麦芽糖和溶菌酶,47转/分钟搅拌13分钟,精磨4.5小时,置于74℃精炼2.5小时,5℃/分钟降温至35℃,保持温度25分钟,2℃/分钟升温至45℃,保持温度35分钟,4℃/分钟降温至34℃,保持温度3.5小时,使巧克力组织细腻,成分均匀,入口即化,得可可浆料;
(5)将发酵瘦瘦果干浸入可可浆中,取出,置于模具中,于-13℃冷却间,冷却17分钟,置于57℃的烘箱中3分钟,取出,置于-13℃冷却间,冷却17分钟,使巧克力组织更加致密,脱模,用可食性白菜纸单独包装,得减肥巧克力糖;
(6)用石头纸进行外包装,得成品。
实施例3
一种减肥巧克力糖,由以下重量份的原料制成:可可液块58、低聚异麦芽糖23、瘦瘦果14、脱脂乳粉4、辣椒叶1.6、荷叶1.6、麦冬草1.3、小飞蓬0.6、食盐0.6、开菲尔0.8、善存粉0.3、溶菌酶0.03。
所述的复合酶,由以下重量比的酶制剂组成:纤维素酶:半纤维素酶:木聚糖酶:β-葡聚糖苷酶:脂肪酶=14:10:7:7:3。
一种减肥巧克力糖的制备方法,其具体步骤为:
(1)将瘦瘦果洗净,切块,长2.4cm,宽1.2cm,厚0.6cm,置于58℃的烘箱中烘干至含水量瘦瘦果重量的36%(w/w),得瘦瘦果干;
(2)将辣椒叶、荷叶、麦冬草和小飞蓬粉碎,过140目筛,得中药粉,加入中药粉重量4倍量的纯净水,混合均匀,加入复合酶,搅拌均匀,置于39℃水浴,49转/分钟,搅拌酶解5小时,加热煮沸后,停火,浸泡3小时,8000转/分钟离心15分钟,得提取液和中药渣,向药渣中加入药渣重量3倍量的体积分数为66%的酒精溶液,36转/分钟,搅拌处理40分钟,充分提取有效成分,提高中药利用率,10000转/分钟离心10分钟,得提取液和中药渣,合并所有提取液,69℃烘箱中干燥至无水分含量为瘦瘦果重量的0.8倍,得中药提取物;
(3)将中药提取物与瘦瘦果干混合均匀,加入脱脂乳粉和善存粉,36转/分钟搅拌14分钟,加入开菲尔,44转/分钟搅拌15分钟,充分混合均匀,置于24℃发酵24小时,使口感酸甜,促进物质分解,产生益生因子,利于吸收利用,加入食盐,混合均匀,置于5℃放置8小时,抑制杂菌生长,控制发酵,防止口感过酸,酸味适中,置于-42℃的真空冷冻干燥机中冷冻干燥至水分含量为瘦瘦果重量的3%(w/w),得发酵瘦瘦果干;
(4)将可可液块加热至48℃,不断搅拌至完全融化,加入低聚异麦芽糖和溶菌酶,48转/分钟搅拌14分钟,精磨4~5小时,置于76℃精炼3小时,5℃/分钟降温至35℃,保持温度30分钟,2℃/分钟升温至45℃,保持温度40分钟,4℃/分钟降温至34℃,保持温度4小时,使巧克力组织细腻,成分均匀,入口即化,得可可浆料;
(5)将发酵瘦瘦果干浸入可可浆中,取出,置于模具中,于-12℃冷却间,冷却18分钟,置于58℃的烘箱中4分钟,取出,置于-12℃冷却间,冷却18分钟,使巧克力组织更加致密,脱模,用可食性白菜纸单独包装,得减肥巧克力糖;
(6)用石头纸进行外包装,得成品。
对比例
市售普通巧克力糖。
实施例和对比例巧克力糖的感官评定:
随机选择30人,每人对实施例和对比例的巧克力糖进行评定,每项满分10分,分别对每项进行打分,结果取平均值,并根据分数解释巧克力糖的各指标特征。实施例和对比例巧克力糖的感官评定结果见表1。

从表1的结果表明,本发明的一种减肥巧克力糖,色泽混匀,口感丰富,香味浓郁、奇妙、和谐,外脆里软,入口即化,不粘牙,得到广大消费者的喜爱。
实施例和对比例巧克力糖的减肥效果:
选择清洁级SD成年大鼠200只,随机分为4组,每组50只,雌雄各半,每只大鼠除正常饮食外,每天喂食该组的巧克力糖粉末2g/Kg(按照大鼠体重计),连续喂食30天,受试前后每只大鼠均进行称重并记录,并取平均值,实施例和对比例巧克力糖的减肥效果见表2。

从表2可以看出,实施例的减肥巧克力糖,受试后,实施例的大鼠体重明显小于对比例,说明本发明提供的减肥巧克力糖具有明显的减肥效果。

1.一种减肥巧克力糖,其特征在于,由以下重量份的原料制成:可可液块56~58、低聚异麦芽糖21~23、瘦瘦果12~14、脱脂乳粉3~4、辣椒叶1.4~1.6、荷叶1.4~1.6、麦冬草1.1~1.3、小飞蓬0.4~0.6、食盐0.4~0.6、开菲尔0.6~0.8、善存粉0.2~0.3、溶菌酶0.02~0.03。
2.根据权利要求1所述的减肥巧克力糖,其特征在于,所述的瘦瘦果,为鲜果。
3. 根据权利要求1所述的减肥巧克力糖,其特征在于,所述的复合酶,由以下重量比的酶制剂组成:纤维素酶:半纤维素酶:木聚糖酶:β-葡聚糖苷酶:脂肪酶=13~14:9~10:6~7:6~7:2~3。
4.根据权利要求1所述减肥巧克力糖的制备方法,其特征在于,具体包括以下步骤:
(1)将瘦瘦果洗净,切块,长2.2~2.4cm,宽1.1~1.2cm,厚0.5~0.6cm,置于56~58℃的烘箱中烘干至含水量瘦瘦果重量的34~36%(w/w),得瘦瘦果干;

(3)将中药提取物与瘦瘦果干混合均匀,加入脱脂乳粉和善存粉,34~36转/分钟搅拌12~14分钟,加入开菲尔,42~44转/分钟搅拌13~15分钟,充分混合均匀,置于22~24℃发酵20~24小时,加入食盐,混合均匀,置于3~5℃放置6~8小时,置于-44~-42℃的真空冷冻干燥机中冷冻干燥至水分含量为瘦瘦果重量的2~3%(w/w),得发酵瘦瘦果干;
(4)将可可液块加热至46~48℃,不断搅拌至完全融化,加入低聚异麦芽糖和溶菌酶,46~48转/分钟搅拌12~14分钟,精磨4~5小时,置于72~76℃精炼2~3小时,5℃/分钟降温至35℃,保持温度20~30分钟,2℃/分钟升温至45℃,保持温度30~40分钟,4℃/分钟降温至34℃,保持温度3~4小时,得可可浆料;
(5)将发酵瘦瘦果干浸入可可浆中,取出,置于模具中,于-14~-12℃冷却间,冷却16~18分钟,置于56~58℃的烘箱中3~4分钟,取出,置于-14~-12℃冷却间,冷却16~18分钟,脱模,用可食性白菜纸单独包装,得减肥巧克力糖;
(6)用石头纸进行外包装,得成品。
