本发明涉及一种药用植物富硒富锌酵素及其制备方法。解决了现有技术的不足,技术方案为:所述药用植物富硒富锌酵素的主料包括下列重量份配比的原料组分:莼菜经脱胶处理的茎叶75%~80%、紫苏叶2~3%,野刺梨8~9%,万寿菊花瓣1~2%,高良姜2~3%,薤白2~3%,茴香1~2%,胡椒1%,山药3~4%、桂皮1%,所述各组分含量百分数之和应当等于100%。整个组方除莼菜、刺梨、山药、万寿菊外,其余都是药食兼用的具有提味、增香、除腥、开胃,应用历史悠久的调味品。其酵素香味别致,味道独特。保健、调理效果更加显著。

技术领域
本发明是一种复方药用植物生产酵素,特别是涉及一种药用植物富硒富锌酵素及其制备方法。
背景技术
中医中药是中国民族文化的国粹。据统计,目前制药与临床应用的中草药已达11000余种。除如朱砂等矿物类、如草乌等有毒类和配伍禁忌的“反药类”外,至少可以用来生产酵素的中药材有数千种(当然不属药食兼用的中药材是不能直接生产酵素的)。因此,在国际酵素食品风靡的时下,中国酵素产业重视中药植物资源的开发,是中国酵素生产的优势,或许也是改变中国中药国际市场份额低于5%的现状的一种新的途径。
莼菜又名蒪菜、马蹄菜、湖菜等,是多年生水生宿根草本药食兼用植物。同时属于第三纪孑遗植物,也是国家一级保护植物。利川因为受四纪冰川影响较小,所以与水杉、珙桐等植物活化石得以幸存。作为药材,莼菜整株均可入药;作为水生蔬菜,只是采摘的莼菜幼嫩的芽及芽叶鲜用,或以其经杀青等初加工用冰乙酸保质的莼菜。目前。作蔬菜用只占莼菜植物的5%,其中约95%的与莼菜幼嫩的叶芽有效成分相同的莼菜植株还没有得到利用。
目前,市面销售的酵素多为常见的水果、蔬菜单品或混合发酵制成。除人们熟知的常规营养物质和发酵后更加丰富的生物活性酶以外,应该说对已发生的疾病或已是亚健康体质的人群而言,是不具有治疗、辅助治疗或人体体质综合调理作用的。因不含有或含量很低的对疾病有针对性的生物活性物质。因此,用药食兼用植物生产酵素,应该比纯粹的谷物、蔬菜、水果生产的酵素对人体的保健功效更高。
中国“硒都”的利川市的富硒、富锌中药材生产酵素的特别意义是:除保持酵素公认减肥,健身、长寿、美容等等的效果外,通过食用其酵素,可以获得治疗、辅助治疗、预防疾病、调理人体脏腑功能的中药活性物质,因为通过食用酵素补硒、补锌,进而预防缺硒、缺锌引起的多种疾病,甚至是肿瘤类恶性疾病。
发明内容
本发明的目的是克服以上一般酵素生产技术缺少药用植物生物活性物质和不能补硒、补锌的制备方法的不足,提出一种含有多种药用植物活性物质、同时又富硒富锌的酵素技术及其制备方法。
本发明解决其技术问题所采用的技术方案是:一种药用植物富硒富锌酵素,所述药用植物富硒富锌酵素的主料包括下列重量份配比的原料组分:莼菜经脱去果胶处理的茎叶75%~80%、紫苏叶2~3%,野刺梨8~9%,万寿菊花瓣1~2%,高良姜2~3%,薤白2~3%,茴香1~2%,胡椒1%,山药3~4%、桂皮1%,所述各组分含量百分数之和应当等于100%。
利川莼菜性味甘性寒。归肝经。功效为利水、消肿、清热、解毒、厚肠胃,主消渴。富硒、富锌、含锗。利川莼菜含锌水平为153-299ppm,是迄今为止国内外蔬菜、食品含锌水平最高的。利川莼菜鲜品含硒水平为0.054ppm,干品含硒水平为0.157ppm。同时含锗(0.11ppm)。对鍺功效处于研发初期,一般可以接受的是美容。同时利川莼菜B族维生素含量丰富,但莼菜本身无味。紫苏叶性温味辛,归肺、脾经,功效为:发汗解表,行气宽中,主治风寒表证,脾胃气滞,胸闷呕吐。刺梨味甘而酸涩。功效为:健胃,消食。治食积饱胀。健胃,滋补强壮,解暑,消食。特别是富含超氧化物岐化酶(简称SOD),是国际公认具有抗衰、防癌作用的活性物质,还具有抗病毒、抗辐射的作用,在心血管、消化系统和各种肿瘤疾病防治方面,应用十分广泛。同时富含Vc,含量每100g为800-4000mg,万寿菊性寒、味苦微辛。归肺、肝、心三经。功效为:平肝清热,治肝经风热。其主要成分叶黄素,是很好的抗氧化还原剂,也是人体眼黄斑的组成物质。叶黄素人体不能合成,只能从食物摄取。高良姜味辛,性热。入脾、胃经。功效为散寒止痛,温中止呕,和胃平逆。高良姜是很好的增香剂。薤白味辛、苦,性温。归肺经、大肠经。功效为:开胸痹、导痰壅,散结满,止疼痛。主治:胸部闷痛,咳嗽气喘,冷痢后重等症。茴香性温,味辛,归肝、肾、脾、胃经。功效为:温肝肾,暖胃气、散塞结,散寒止痛,理气和胃。用于寒疝腹痛,睾丸偏坠,妇女痛经,少腹冷痛,脘腹胀痛,食少吐泻等症。茴香苗属辛香类蔬菜,富含类胡萝卜素。胡椒性热。味辛。归胃、大肠经。功效为:温中下气,消痰解毒。适宜:食欲不振、胃寒、慢性胃炎,糖尿病。特点:调味佳品。主要成分胡椒碱和芳香油。山药性平,味甘。归脾,肺,肾经。功效为:健脾补肺、益胃补肾、固肾益精。适宜:脾胃虚弱、倦怠无力、食欲不振、久泄久痢、肺气虚燥、痰喘咳嗽、肾气亏耗、腰膝酸软、糖尿病、尿频。鲜桂皮性热。味辛。归脾,肾,膀胱经。功效为:温中散寒,活血健胃,止痛。适宜:心动过缓、脉象沉迟、血栓闭塞性脉管炎、产后腹痛、痛经、腰膝冷痛、风湿性关节炎、胃寒、手脚冰冷。本品为调味佳品,有提味去腥效果。
因主料莼菜味甘性寒,故加桂皮、胡椒、高良姜等热性药物消减寒性以调和性味,提高适宜人群广泛性。酵素本质上是承担人体最基本生命活动的人体内数千种酶的总称。这些酵素人体内本身存在,食物酵素属于外部酵素。酵素存在于人体各组织以致于存在于各组织、器官的细胞。它不会改变不同植物的活性成分,只是提高这些药材活性成分的转化利用效率。因此,在本技术的药材组分上,除了莼菜归经肝经外,另外增加了归经胃经、肝经、肾经、脾经、膀胱经、大肠经、肺经、心经等药材。除了是本技术生产的酵素含有更多有益于人体健康和调理的生物活性物质以外,因不同药材归经的不同,也更有利于让酵素输送到相关器官、组织和这些器官、组织的细胞,如可以加强莼菜预防和辅助治疗消渴病的效果(刘翠俐等研究证明莼菜多糖具有很好的治疗糖尿病作用)。但如果单用莼菜,因味寒性将可能限制应用范围。故添加治疗糖尿病的温性山药和热性胡椒。添加刺梨、茴香、万寿菊一是为了增加维生素种类,如刺梨的Vc、茴香的胡萝卜素和万寿菊的叶黄素;二是增加酵素超氧化物岐化酶(SOD),三是利用刺梨的刺梨酸和其丰富的Vc提高酵素的防腐效果。四是在为食用者补充叶黄素预防眼睛因叶黄素补给不足造成眼黄斑病变。整个组方除莼菜、刺梨、山药、万寿菊外,其余都是药食兼用的具有提味、增香、除腥、开胃,应用历史悠久的调味品,其酵素香味别致,味道独特。保健、调理效果更加显著。
作为优选,所述药用植物富硒富锌酵素的辅料为麦芽糖和食用白酒。
作为优选,所述莼菜为利川莼菜的茎叶。
一种药用植物富硒富锌酵素制备方法,适用于如权利要求1所述的药用植物富硒富锌酵素,包括依次进行的以下步骤,
选料步骤、分类整理步骤、将原料按主料比例混合臭氧灭菌步骤、低温风干步骤、高速超微粉碎步骤、装罐步骤、发酵步骤、低温熟化步骤、过滤步骤、杀菌步骤、无菌条件下自动灌装步骤和检验入库步骤。本发明是首次采用复方药用植物生产的酵素。产品除具有一般意义上的酵素功效以外,还具有清热解毒、利水消肿、行气宽中、健胃消食、平肝清热、散寒止痛、温肝暖胃、消痰解毒等调理功效。本技术生产的酵素对Vc缺乏症,Vb缺乏症、胡萝卜素缺乏症,缺硒、缺锌、缺叶黄素引起的相关疾病的人群有很好的改善效果。特别是对改善消渴病患者症状有积极的作用。本技术主原料莼菜(75-80)为采摘蔬菜用的莼菜芽、叶后的莼菜茎叶,对莼菜种植农户增收效果显著,对提高莼菜产业链整体效益意义巨大。本技术采用相近于窖香型白酒熟化醇化的后熟工艺熟化,产品色、香、味独具风格。本技术终端产品为液体酵素,在生产过程中不加入水,不使用化学防腐剂、杀菌剂,不使用人工合成的矫味剂、着色剂和增香剂,产品完全天然、安全。
所述选料步骤为:
9月在海拔1000-1200m,北纬30度的湖北利川选取莼菜、山药、高良姜、进入黄熟期的刺梨和处于盛花期的万寿菊;

在所有原料中,莼菜茎叶经挑去黄叶和病虫茎叶后,采用低温离心方法脱去果胶备用,万寿菊只取花瓣洗净备用,高良姜和山药分别去皮洗净备用,茴香叶和薤白分别洗净备用,桂皮刮去粗皮洗净备用,紫苏去梗留叶洗净备用,刺梨去籽和花瓣形成的果翼后洗净备用。
作为优选,所有原料的洗净备用动作均为在0-2度的冷库中,用干净消毒后的竹席摊晾滤水。
作为优选,臭氧灭菌步骤为:
配制浓度为1~1.5mg/L的臭氧水,将原料按主料比例混合后形成的物料投放入臭氧水中,物料投放量按照物料:臭氧水=6:10的比利投放,物料静态浸泡在臭氧水中8~10秒,然后搅动浸泡4~5秒后将物料捞出,用清水冲洗摊晾。

在风干机中以25~30摄氏度的情况下莼菜风干25~30分钟,其他物料风干10~15分钟;
所述高速超微粉碎步骤为:
将物料加入常温超微粉碎系统进行细度过500目的超微粉碎后出料,生成原料浆,出料口温度控制为20度~25度;
所述装罐步骤为:
原料浆中加入增酵辅料,每100份质量的原料浆加入10份质量的麦芽糖和2份质量的食用酒后经三维混合机混合,将混合后的混合物利用微波杀菌机杀菌,微波杀菌机杀菌时温度为20度~25度,将经过消毒混合物打入发酵罐,装量为发酵罐容积的75%~80%,无菌条件下植入益生菌菌株,
所述发酵步骤为:
恒温温度25~28摄氏度,发酵30天后,恒温20~24摄氏度继续发酵,发酵持续50~90天,至发酵罐内液面黄亮、无霉斑且清新药香味扑鼻时为止。
作为优选,所述低温熟化步骤为:
取出发酵罐内液体过加压过滤装置进行粗滤,然后用2000L/min植物过滤系统进行精滤后存入土陶瓦缸,在缸口用双层保鲜膜封口后压上按缸口直径1.5倍制作的棉质河沙沙袋,土陶瓦缸内保持12~14摄氏度恒温;
低温熟化完成后取出土陶瓦缸内液体依次过滤步骤、巴士杀菌步骤、无菌条件下自动灌装步骤和检验入库步骤完成药用植物富硒富锌酵素生产。

一种药用植物富硒富锌酵素制备方法,适用于如本实施例所述的药用植物富硒富锌酵素。工艺路线为:
选料步骤、分类整理步骤、将原料按主料比例混合臭氧灭菌步骤、低温风干步骤、高速超微粉碎步骤、装罐步骤、发酵步骤、低温熟化步骤、过滤步骤、杀菌步骤、无菌条件下自动灌装步骤和检验入库步骤。
具体所述选料步骤为:
9月在海拔1000-1200m,北纬30度的湖北利川选取莼菜、山药、高良姜、进入黄熟期的刺梨和处于盛花期的万寿菊;
所述莼菜取水面起至水下20-30cm以内的茎叶,所述山药取块茎,所述万寿菊取花,所述刺梨取果,紫苏取叶,所述高良姜取块茎,桂皮取鲜皮,茴香取苗,胡椒取果实,薤白取鳞茎。
更具体为:因酵素加工原料必须鲜活状态以保证原料酶的活性。而不同原料因生长周期不同,原料有效成分(蛋白质、碳水化合物和脂肪及生物活性成分含量)差异较大。因此,在海拔1000-1200m,北纬30度的湖北利川,以9月中旬为宜。此时,莼菜芽叶萌动减缓,茎叶生长加快;山药、高良姜地上部茎叶生长基本停止,地下部块茎膨大加速;刺梨进入黄熟期;万寿菊处于盛花期;莼菜取水面起至水下20-30cm以内的茎叶,山药取块茎,万寿菊取花,刺梨取果,紫苏取叶,高良姜取块茎,桂皮取鲜皮,茴香取苗,胡椒取果实,薤白取鳞茎。
所述分类整理步骤为:

利用泡沫清洗机配制浓度为1~1.5mg/L的臭氧水,将原料按主料比例混合后形成的物料投放入臭氧水中,物料投放量按照物料:臭氧水=6:10的比利投放,物料静态浸泡在臭氧水中8~10秒,然后搅动浸泡4~5秒后将物料捞出,用清水冲洗摊晾。
所述低温风干步骤为:
在风干机中以25~30摄氏度的情况下莼菜风干25~30分钟,其他物料风干10~15分钟;机机械选型:(大洋牌)DY(6m)。
所述高速粉碎步骤为:
将物料加入超微粉碎系统进行细度过500目的超微粉碎后出料,生成原料浆,出料口温度为20度~25度;机械选型YSC-715型加配冷却系统(北京燕山正德公司制造)。
所述装罐步骤为:
原料浆中加入增酵辅料,每100份质量的原料浆加入10份质量麦芽糖和2份质量的食用酒后经SYH-400三维混合机混合,调整Ph为5~5.5,将混合后的混合物利用微波杀菌机杀菌,微波杀菌机杀菌时温度为20度~25度,将经过消毒的混合物打入发酵罐,发酵罐从上海金奔实业有限公司定制(罐中预置搅拌、罐内温度感应装置和排热阀),容积2000L。装量为发酵罐容积的75%~80%,无菌条件下植入益生菌菌株,每罐8至10株,菌株从台湾晶叶酵素(青岛)有限责任公司引进纯化。
所述发酵步骤为:
恒温温度25~28摄氏度,发酵30天后,恒温20~24摄氏度继续发酵,发酵持续50~90天,至发酵罐内液面黄亮、无霉斑且清新药香味扑鼻时为止。具体是温度高于30摄氏度时,启动罐内搅拌装置,打开排热阀散热,降至25度时关闭排热阀。发酵30天后,恒温20-24继续发酵。发酵时间持续50-90天。至罐内液面黄亮,无霉斑,清新药香味扑鼻时为度。
所述低温熟化步骤为:
取出发酵罐内液体至过滤装置加压进行粗滤,然后用2000L/min植物过滤系统进行精滤后存入土陶瓦缸,在缸口用双层保鲜膜封口后压上按缸口直径1.5倍制作的棉质河沙沙袋,土陶瓦缸内保持12~14摄氏度恒温;
低温熟化完成后取出土陶瓦缸内液体依次过滤步骤、巴士杀菌步骤、无菌条件下自动灌装步骤和检验入库步骤完成药用植物富硒富锌酵素生产。粗滤用LZO2型管式过滤装置加压过滤。精滤用2000L/min植物过滤系统过滤(沈阳五衡过滤设备有限公司出品)。
本技术生产产品为液体酵素。在全生产过程中,不加水或其它液质,完全利用原料本身的液质。(因主原料莼菜含水量达90%以上)。本技术灌装过程严格执行无菌操作,空气净化级别为100级。本技术酵素滋味、色泽、香气源自于原料自身的,不使用任何调色剂、矫味剂、增香剂。本技术酵素熟化场地为半地下式冷库,既可以保持空气流通,又便于恒温降低能耗。本技术生产过程中,杀菌消毒采用物理技术,不使用防腐、灭菌的添加剂或化学杀菌剂。
酵素本质上是承担人体最基本生命活动的人体内数千种酶的总称。这些酵素人体内本身存在,食物酵素属于外部酵素。酵素存在于人体各组织以致于存在于各组织、器官的细胞。它不会改变不同植物的活性成分,只是提高这些药材活性成分的转化利用效率。因此,在本技术的药材组分上,除了莼菜归经肝经外,另外增加了归经胃经、肾经、脾经、膀胱经、大肠经、肺经、心经等药材。除了是本技术生产的酵素含有更多有益于人体健康和调理的生物活性物质以外,因不同药材归经的不同,也更有利于让酵素输送到相关器官、组织和这些器官、组织的细胞。加强预防和辅助治疗消渴病等疾病的效果。如对糖尿病的预防和治疗,果单用莼菜生产酵素因其性味寒性将可能限制应用范围。故添加有治疗糖尿病效果的温性山药和热性胡椒。添加刺梨、茴香、万寿菊一是为了增加维生素种类,如刺梨的Vc、茴香的胡萝卜素和万寿菊的叶黄素;二是增加酵素超氧化物岐化酶(SOD),三是利用刺梨酸和刺梨丰富的Vc提高酵素的防腐效果。四是在为食用者补充叶黄素预防眼睛因叶黄素补给不足造成眼黄斑病变。整个组方除莼菜、刺梨、山药、万寿菊外,其余都是药食兼用的具有提味、增香、除腥、开窍,应用历史悠久的调味品。其酵素香味别致,味道独特。保健、调理效果更加显著。
以上所述的实施例只是本发明的一种较佳的方案,并非对本发明作任何形式上的限制,在不超出权利要求所记载的技术方案的前提下还有其它的变体及改型。
Claims (10)
1.一种药用植物富硒富锌酵素,其特征在于,所述药用植物富硒富锌酵素的主料包括下列重量份配比的原料组分:莼菜经脱胶处理的茎叶75%~80%、紫苏叶2~3%,野刺梨8~9%,万寿菊花瓣1~2%,高良姜2~3%,薤白2~3%,茴香1~2%,胡椒1%,山药3~4%、桂皮1%,所述各组分含量百分数之和应当等于100%。
2.根据权利要求1所述的药用植物富硒富锌酵素,其特征在于,所述药用植物富硒富锌酵素的辅料为麦芽糖和食用白酒。
3.根据权利要求1所述的药用植物富硒富锌酵素,其特征在于,所述莼菜为利川莼菜。
4.一种药用植物富硒富锌酵素制备方法,适用于如权利要求1所述的药用植物富硒富锌酵素,其特征在于,包括依次进行的以下步骤,
选料步骤、分类整理步骤、将原料按主料比例混合、臭氧灭菌步骤、低温风干步骤、高速粉碎步骤、装罐步骤、发酵步骤、低温熟化步骤、过滤步骤、杀菌步骤、无菌条件下自动灌装步骤和检验入库步骤。
5.根据权利要求4所述的药用植物富硒富锌酵素制备方法,其特征在于,所述选料步骤为:
9月在海拔1000-1200m,北纬30度的湖北利川选取莼菜、山药、高良姜、进入黄熟期的刺梨和处于盛花期的万寿菊;
所述莼菜取水面起至水下20-30cm以内的茎叶,所述山药取块茎,所述万寿菊取花,所述刺梨取果,紫苏取叶,所述高良姜取块茎,桂皮取皮,茴香取苗,胡椒取果实,薤白取鳞茎。
6.根据权利要求5所述的药用植物富硒富锌酵素制备方法,其特征在于,所述分类整理步骤为:
在所有原料中,莼菜茎叶经挑去黄叶和病虫茎叶后,采用低温离心方法脱去果胶,万寿菊保留花瓣洗净备用,高良姜和山药分别去皮洗净备用,茴香叶和薤白分别洗净备用,桂皮刮去粗皮洗净备用,紫苏去梗留叶洗净备用,刺梨去籽和花瓣形成的果翼后洗净备用。
7.根据权利要求6所述的药用植物富硒富锌酵素制备方法,其特征在于,所有原料的洗净备用动作均为在0-2度的冷库中,用干净消毒后的竹席摊晾滤水。
8.根据权利要求6所述的药用植物富硒富锌酵素制备方法,其特征在于,臭氧灭菌步骤为:
配制浓度为1~1.5mg/L的臭氧水,将原料按主料比例混合后形成的物料投放入臭氧水中,物料投放量按照物料:臭氧水=6:10的比利投放,物料静态浸泡在臭氧水中8~10秒,然后搅动浸泡4~5秒后将物料捞出,用清水冲洗摊晾。
9.根据权利要求8所述的药用植物富硒富锌酵素制备方法,其特征在于,所述低温风干步骤为:
在风干机中以40~45摄氏度的情况下莼菜风干25~30分钟,其他物料风干10~15分钟;
所述高速粉碎步骤为:
将物料加入冷却系统进行细度过500目的超微粉碎后出料,生成原料浆,出料口温度为20度~25度;
所述装罐步骤为:
原料浆中加入增酵辅料,每100份质量的原料浆加入10份质量麦芽糖和2份质量的食用酒后经三维混合机混合,将混合后的混合物利用微波杀菌机杀菌,微波杀菌机杀菌时温度为20度~25度,将经过消毒混合物打入发酵罐,装量为发酵罐容积的75%~80%,无菌条件下植入益生菌菌株,
所述发酵步骤为:
恒温温度25~28摄氏度,发酵30天后,恒温20~24摄氏度继续发酵,发酵持续50~90天,至发酵罐内液面黄亮、无霉斑且清新药香味扑鼻时为止。
10.根据权利要求9所述的药用植物富硒富锌酵素制备方法,其特征在于,所述低温熟化步骤为:
取出发酵罐内液体至过滤装置加压进行粗滤,然后用2000L/min植物过滤系统进行精滤后存入土陶瓦缸,在缸口用双层保鲜膜封口后压上按缸口直径1.5倍制作的棉质河沙沙袋,土陶瓦缸内保持12~14摄氏度恒温;
低温熟化完成后取出土陶瓦缸内液体依次过滤步骤、巴士杀菌步骤、无菌条件下自动灌装步骤和检验入库步骤完成药用植物富硒富锌酵素生产。
