Abstract
本发明公开了红枣饮料及其制备方法。本发明所提供的红枣饮料主要由下述重量份的原料制成:红枣80份-85份,枸杞3份-6份,桑葚3份-6份,黄精1份-5份,甘草1份-5份,菊花1份-5份,陈皮1份-5份,山药1份-5份,龙眼肉1份-5份,莲子1份-5份,白果1份-5份和冰糖0.5份-2份。本发明的配方采用药食同源的原料,参照中医食疗方法进一步改进,并通过调整各成分的比例,制成了具有降血脂功效的山楂饮料。
Description
技术领域
本发明涉及食品领域,尤其涉及红枣饮料及其制备方法。
背景技术
红枣富含蛋白质、脂肪、糖类、胡萝卜素、B族维生素、维生素C、维生素P以及钙、磷、铁等营养成分。在药理药效方面具有健脾益胃、补气养血、养血安神等功效。
枸杞含有胡萝卜素、甜菜碱、维生素A、维生素B1、维生素C和钙、铁、磷等成分。由于枸杞功效显著且药性平和,所以被历代名家推崇为强身健体、延缓衰老之良药。
桑葚中含有鞣酸、苹果酸、维生素C和脂肪酸等。其中所含的脂肪酸主要为亚油酸、油酸、软脂酸、硬脂酸、亚麻酸等。此外,桑葚中含有丰富的白黎芦醇。黄精中含有多糖、氨基酸、黏液质、淀粉等成分,黄精味甘性平,有补气养阴、健脾益肾的功效。
甘草为多年生草本植物甘草的根及根茎,性味甘平,归心、肺、脾、胃经。具补脾益气、润肺止咳、缓急止痛、缓和药性之功,其有效成分为甘草甜素、甘草次酸、甘草苷元、甘草多糖。
菊花味甘苦,性微寒;有散风清热、清肝明目和解毒消炎等作用。
陈皮具有健脾和胃,行气宽中,降逆化痰的功效。
山药具有滋补细胞、强化内分泌、补益强壮、增强机体造血功能等作用。
龙眼肉性平,味甘,含有硫胺素、核黄素、尼克酸、抗坏血酸等化学成份,具有益气补血,安神定志,养血安胎的功效。
莲子性平、味甘涩,入心、脾、肾经;补脾止泻,益肾涩清,养心安神。
白果味甘,微苦、涩,性温,有小毒。能温肺益气,定喘咳,缩小便,止带滞,止泻,益脾。
尽管以上原料的功效已被世人所知,但在饮料行业中,其食用与药用价值并没有被充分开发与利用。
发明内容
本发明克服现有技术存在的不足,提供一种红枣饮料及其制备方法。
本发明所提供的红枣饮料,主要由下述重量份的原料制成:红枣80份-85份,枸杞3份-6份,桑葚3份-6份,黄精1份-5份,甘草1份-5份,菊花1份-5份,陈皮1份-5份,山药1份-5份,龙眼肉1份-5份,莲子1份-5份,白果1份-5份和冰糖0.5份-2份。

所述红枣饮料由下述重量份的原料制成:红枣83份-85份,枸杞4份-6份,桑葚4份-6份,黄精2份-5份,甘草2份-5份,菊花2份-5份,陈皮2份-5份,山药2份-5份,龙眼肉2份-5份,莲子2份-5份,白果2份-5份、冰糖1.5份-2份、柠檬酸1份-1.5份、苹果酸1份-1.5份、甜蜜素0.6份-1份和安赛蜜0.03份-0.05份。
本发明还提供了所述红枣饮料的制备方法,包括如下步骤:
(1)压榨提取:将桑葚破碎成果浆,压榨果浆得到果汁,在果汁中添加果浆酶和淀粉酶进行酶解,过滤、浓缩,作为提取液I;
(2)水煮提取:将红枣、枸杞、黄精、甘草、菊花、陈皮、山药、龙眼肉、莲子和白果用水提取,水提液静置后取上清液,超滤,浓缩,作为提取液П;
(3)调配:将冰糖加热溶解,再与所述提取液I和提取液П混合,即得到所述红枣饮料。
所述步骤(3)中所述将冰糖加热溶解后,再加入溶解了柠檬酸、苹果酸、甜蜜素和安赛蜜的水溶液,再与所述提取液I和提取液П混合,即得到所述红枣饮料。
所述步骤(1)中所述果胶酶和淀粉酶是按照质量比为0.03-0.08%的比例添加;所述酶解是在50-60℃条件下酶解60-120分钟。
所述步骤(2)中所述水煮提取的条件为用提取罐水煮提取2次,第一次加水10倍量,水沸后水煮1小时,第二次加水8倍量,水沸后水煮1小时;合并两次提取液,过100目筛;水提液在4℃低温静置12小时;取上清液,过5μm滤芯进行超滤,在70℃减压浓缩至比重为1.10。
本发明的配方采用药食同源的原料,参照中医食疗方法进一步改进,并通过调整各成分的比例,制成了具有降血脂功效的山楂饮料。
具体实施方式
实施例1、制备红枣饮料
该实施例中所用的原料红枣、枸杞、桑葚、黄精、甘草、菊花、陈皮、山药、龙眼肉、莲子、白果和冰糖均可从商业途径购买得到。
该实施例制备得到的红枣饮料如表1所示:

该实施例中红枣饮料的制备方法如下:
1、压榨提取:按照表1中原料的比例,挑拣原料桑葚,去除烂果、病果及杂质。用饮用流动水冲洗干净;将桑葚破碎成果浆;用带式榨汁机对果浆进行一次压榨;在果渣内加入1倍量纯净水,用带式榨汁机进行二次压榨;将两次压榨果汁过200目筛,按照0.03%(质量比)的比例添加果浆酶和淀粉酶(两种酶的质量比是2:1),50℃条件下酶解60分钟;将果汁过0.2μm膜超滤;将果汁进三效蒸发器浓缩,将其浓缩至Brix(可溶性固形物)60%,为提取液I;
2、水煮提取:分别按照表1中原料的比例,挑拣原料:红枣、枸杞、黄精、甘草、菊花、陈皮、山药、龙眼肉、莲子、白果去除杂质,用饮用水流动冲洗干净;将以上原料用提取罐水煮提取2次,第一次加水10倍量,水沸后水煮1小时,第二次加水8倍量,水沸后水煮1小时;合并两次提取液,过100目筛;水提液在4℃低温静置12小时;取上清液,过5μm滤芯进行超滤,在70℃减压浓缩至比重为1.10(55℃),得到红枣、枸杞、黄精、甘草、菊花、陈皮、山药、龙眼肉、莲子、白果提取液,为提取液П;
3、调配:将化糖罐内加入适量纯化水加热至30~40℃,然后按照表1中的比例,加入冰糖边搅拌边加热至90℃左右,确认溶解后过滤至调配罐。再与上述提取液I和提取液П混合,加入纯净水至1000ml,搅拌混合均匀;
4、进行过滤后,UHT灭菌(121℃,30秒),灌装,即得。
实施例2、制备红枣饮料
该实施例中所用的原料红枣、枸杞、桑葚、黄精、甘草、菊花、陈皮、山药、龙眼肉、莲子、白果、冰糖、柠檬酸、苹果酸、甜蜜素和安赛蜜均可从商业途径购买得到。
该实施例制备得到的红枣饮料如表2所示:

该实施例中红枣饮料的制备方法如下:

2、水煮提取:分别按照表1中原料的比例,挑拣原料:红枣、枸杞、黄精、甘草、菊花、陈皮、山药、龙眼肉、莲子、白果去除杂质,用饮用水流动冲洗干净;将以上原料用提取罐水煮提取2次,第一次加水10倍量,水沸后水煮1小时,第二次加水8倍量,水沸后水煮1小时;合并两次提取液,过100目筛;水提液在4℃低温静置12小时;取上清液,过5μm滤芯进行超滤,在70℃减压浓缩至比重为1.10(55℃),得到红枣、枸杞、黄精、甘草、菊花、陈皮、山药、龙眼肉、莲子、白果提取液,为提取液П;
3、调配:将化糖罐内加入适量纯化水加热至30~40℃,然后按照表1中的比例,加入冰糖边搅拌边加热至90℃左右,确认溶解后过滤至调配罐;按照表1中的比例,将柠檬酸、苹果酸、甜蜜素和安赛蜜加入少量80℃纯净水充分溶解,转移至调配罐;再与上述提取液I和提取液П混合,加入纯净水至1000ml,搅拌混合均匀;
4、进行过滤后,UHT灭菌(121℃,30秒),灌装,即得。
实施例3、本发明的红枣饮料评价
一、感官测试
1、实验方法
100名受试者,分别品尝编号为1-3的三种饮料,对口感、色泽、甜味、浓度和香味5个指标进行评判,在3种饮料中记录下感受最佳的饮料编号。编号为1为本发明实施例1制备的红枣饮料,编号2为本发明实施例2制备的红枣饮料,编号3为市场上购买的红枣饮料。
2、实验结果:对受试者的记录进行统计,如下:

结果显示,本发明制备的红枣饮料的各项指标均优于市售产品。
二、功能测试
1、分组:
60名女性受试者,将受试者随机分为三组:实验组1口服实施例1的红枣饮料,实验组2口服实施例2的红枣饮料,对照组口服市售的红枣饮料;以上各组的饮用方法均为:每日两次,饭后半小时饮用200ml,饮用30日。
2、疗效标准
有效:气色明显改善;
无效:气色无明显改善。
3、结果:
实验组1中的20例,有效15例,无效5例。
实验组2中的20例,有效16例,无效4例。
对照组中的20例,有效6例,无效14例。
由以上结果可见,本发明制备的红枣饮料具有滋补养颜的功效。

1.一种红枣饮料,其特征在于:所述红枣饮料主要由下述重量份的原料制成:红枣80份-85份,枸杞3份-6份,桑葚3份-6份,黄精1份-5份,甘草1份-5份,菊花1份-5份,陈皮1份-5份,山药1份-5份,龙眼肉1份-5份,莲子1份-5份,白果1份-5份和冰糖0.5份-2份。
2.根据权利要求1所述的红枣饮料,其特征在于:所述红枣饮料主要由下述重量份的原料制成:红枣80份-82份,枸杞3份-5份,桑葚3份-5份,黄精1份-3份,甘草1份-3份,菊花1份-3份,陈皮1份-3份,山药1份-3份,龙眼肉1份-3份,莲子1份-3份,白果1份-3份和冰糖0.5份-1份。
3.根据权利要求1所述的红枣饮料,其特征在于:所述红枣饮料主要由下述重量份的原料制成:红枣82份-85份,枸杞5份-6份,桑葚5份-6份,黄精3份-5份,甘草3份-5份,菊花3份-5份,陈皮3份-5份,山药3份-5份,龙眼肉3份-5份,莲子3份-5份,白果3份-5份和冰糖1份-2份。
4.根据权利要求1所述的红枣饮料,其特征在于:所述红枣饮料由下述重量份的原料制成:红枣80份-85份,枸杞3份-6份,桑葚3份-6份,黄精1份-5份,甘草1份-5份,菊花1份-5份,陈皮1份-5份,山药1份-5份,龙眼肉1份-5份,莲子1份-5份,白果1份-5份、冰糖0.5份-2份、柠檬酸0.5份-1.5份、苹果酸0.5份-1.5份、甜蜜素0.2份-1份和安赛蜜0.01份-0.05份。
5.根据权利要求4所述的红枣饮料,其特征在于:所述红枣饮料由下述重量份的原料制成:红枣80份-83份,枸杞3份-4份,桑葚3份-4份,黄精1份-2份,甘草1份-2份,菊花1份-2份,陈皮1份-2份,山药1份-2份,龙眼肉1份-2份,莲子1份-2份,白果1份-2份、冰糖0.5份-1.5份、柠檬酸0.5份-1份、苹果酸0.5份-1份、甜蜜素0.2份-0.6份和安赛蜜0.01份-0.03份。
6.根据权利要求4所述的红枣饮料,其特征在于:所述红枣饮料由下述重量份的原料制成:红枣83份-85份,枸杞4份-6份,桑葚4份-6份,黄精2份-5份,甘草2份-5份,菊花2份-5份,陈皮2份-5份,山药2份-5份,龙眼肉2份-5份,莲子2份-5份,白果2份-5份、冰糖1.5份-2份、柠檬酸1份-1.5份、苹果酸1份-1.5份、甜蜜素0.6份-1份和安赛蜜0.03份-0.05份。
7.权利要求1-6中任一所述的红枣饮料的制备方法,包括如下步骤:
(1)压榨提取:将桑葚破碎成果浆,压榨果浆得到果汁,在果汁中添加果浆酶和淀粉酶进行酶解,过滤、浓缩,作为提取液I;
(2)水煮提取:将红枣、枸杞、黄精、甘草、菊花、陈皮、山药、龙眼肉、莲子和白果用水提取,水提液静置后取上清液,超滤,浓缩,作为提取液П;
(3)调配:将冰糖加热溶解,再与所述提取液I和提取液П混合,即得到所述红枣饮料。
8.根据权利要求7所述的方法,其特征在于:所述步骤(3)中所述将冰糖加热溶解后,再加入溶解了柠檬酸、苹果酸、甜蜜素和安赛蜜的水溶液,再与所述提取液I和提取液П混合,即得到所述红枣饮料。
9.根据权利要求7或8所述的方法,其特征在于:所述步骤(1)中所述果胶酶和淀粉酶是按照质量比为0.03-0.08%的比例添加;所述酶解是在50-60℃条件下酶解60-120分钟。
10.根据权利要求7-9中任一所述的方法,其特征在于:所述步骤(2)中所述水煮提取的条件为用提取罐水煮提取2次,第一次加水10倍量,水沸后水煮1小时,第二次加水8倍量,水沸后水煮1小时;合并两次提取液,过100目筛;水提液在4℃低温静置12小时;取上清液,过5μm滤芯进行超滤,在70℃减压浓缩至比重为1.10。
