背景技术

金柑500~550、羊奶100~120、乌梅15~20、柠檬草15~20、香芋50~55、红酒30~35、米醋100~120、陈皮10~12、槐角10~12、荷花10~12、豆蛋白50~55、葡萄须20~25、绿豆皮15~20、酸梅汁30~35、营养添加液20~25和去离子水适量;
所述营养添加液,其特征在于是由下述重量份原料制成:星宿10~12、鸡胆汁5~7、旱莲草10~12、雄黄5~7、木槿皮5~7、酒石酸5~7、桉油3~5、牛筋粉8~10、食盐3~5、海参13~15、鲍鱼粉5~7、鲍头菇9~11和水适量;
所述营养添加液的制备方法:
(1)、将星宿、旱莲草、木槿皮、雄黄等混合炒制,使其均匀微焦,然后碾碎,再与牛筋粉、酒石酸等混合入瓷罐,加入 8~10倍水文火熬2~3小时,纱布过滤除渣,收集滤液;
(2)、将海参与鸡胆汁、食盐、桉油等混合,腌制20~25分钟,取出后放入瓦罐中,混合鲍鱼粉、鲍头菇、牛筋粉和2~3倍水,焖蒸30~35分钟,取出榨成匀浆,并与步骤1混合,调匀。

(1)、将筛选新鲜金柑,经清洗,果皮分离,果肉收集备用,将果皮破碎,以去离子水为萃取液进行果皮精油萃取,萃取温度100~130℃,萃取压力为8~12MPa,萃取时间为30~40分钟,提取液经快速冷却、过滤、沉淀后取上清精油,保存备用;
(2)、将乌梅、陈皮、槐角、绿豆皮等干燥后混合炒香,不断搅拌使其均匀受热,至15~20分钟后取出,与柠檬草、羊奶、酸梅汁等混合,煮至沸腾,取出密封1~2天;
(3)、将步骤1中备用的金柑果肉破碎后与香芋、红酒、豆蛋白、荷花、葡萄须、步骤2等混合,加入3~5倍量水,蒸煮20~25分钟,冷却至40~45℃,用苹果酸将物料PH值调节至4.0~4.5,加入质量分数为600U/g糖化酶,摇匀,于60℃进行糖化,48小时后灭酶;
(4)、向步骤3加入体积分数为0.2%活化酵母液,于30~32℃,酒精发酵3~4天;
(5)、将步骤3进行灭菌,过滤,收集滤液,按滤液体积接入活化的醋酸菌10%,于28~30℃进行醋酸发酵,3~5天,灭菌后并与营养添加液、步骤1提取的精油等混合,均质,封装。

(1)、将星宿、旱莲草、木槿皮、雄黄等混合炒制,使其均匀微焦,然后碾碎,再与牛筋粉、酒石酸等混合入瓷罐,加入 8~10倍水文火熬2~3小时,纱布过滤除渣,收集滤液;
(2)、将海参与鸡胆汁、食盐、桉油等混合,腌制20~25分钟,取出后放入瓦罐中,混合鲍鱼粉、鲍头菇、牛筋粉和2~3倍水,焖蒸30~35分钟,取出榨成匀浆,并与步骤1混合,调匀。
2.根据权利要求1所述的一种奶香清热健脾金柑米醋,其特征在于是由下列步骤制成的:
(1)、将筛选新鲜金柑,经清洗,果皮分离,果肉收集备用,将果皮破碎,以去离子水为萃取液进行果皮精油萃取,萃取温度100~130℃,萃取压力为8~12MPa,萃取时间为30~40分钟,提取液经快速冷却、过滤、沉淀后取上清精油,保存备用;
(2)、将乌梅、陈皮、槐角、绿豆皮等干燥后混合炒香,不断搅拌使其均匀受热,至15~20分钟后取出,与柠檬草、羊奶、酸梅汁等混合,煮至沸腾,取出密封1~2天;
(3)、将步骤1中备用的金柑果肉破碎后与香芋、红酒、豆蛋白、荷花、葡萄须、步骤2等混合,加入3~5倍量水,蒸煮20~25分钟,冷却至40~45℃,用苹果酸将物料PH值调节至4.0~4.5,加入质量分数为600U/g糖化酶,摇匀,于60℃进行糖化,48小时后灭酶;
(4)、向步骤3加入体积分数为0.2%活化酵母液,于30~32℃,酒精发酵3~4天;
(5)、将步骤3进行灭菌,过滤,收集滤液,按滤液体积接入活化的醋酸菌10%,于28~30℃进行醋酸发酵,3~5天,灭菌后并与营养添加液、步骤1提取的精油等混合,均质,封装。
