Abstract
一种开胃健胃夹心竹笋片及其制备方法,本发明的竹笋香酥脆爽,营养丰富,其特殊的处理过程能够防止竹笋在制作过程中的变色现象,且其营养成分和风味物质流失很少,可以最大限度的保留新鲜竹笋原有的营养、味道和芳香,且使用微波喷动能耗低,制得的竹笋干品质最好,特意加入维生素C来弥补微波喷动过程中维生素C的流失,来达到竹笋干的高品质、高营养;本发明加入的山楂促进消化、增强食欲,黄花菜具有止血、消炎、清热、利湿等功效,含有丰富的花粉、糖、维生素C、钙、脂肪、胡萝卜素、氨基酸等人体所必须的养分,此外,本发明在加工过程中添加了多种中草药,具有理气止痛、健胃消食、滋阴补肾、化痰行气的功效。

技术领域
本发明属于食品加工技术领域,涉及一种竹笋加工,尤其涉及一种开胃健胃夹心竹笋片及其制备方法。
背景技术
全世界共有1200 多种竹笋, 而我国就有500 多种, 其中可食用的有200 多种, 品质优良的为30 多种。近几年, 我国竹业发展迅速,大量的鲜笋原料进入市场。随着人们生活的提高,关于竹笋的吃法也越来越讲究,吃竹笋吃健康逐渐深入人心。
发明内容
本发明克服了现有技术中的不足,提供了一种开胃健胃夹心竹笋片及其制备方法。
本发明所采用的技术方案是:
一种开胃健胃夹心竹笋片,由以下重量份的原料制成:
竹笋200-220、甘松0.7-0.9、车前草1-1.2、余甘子0.9-1.1、芒果核0.7-0.9、洋葱10-15、山楂15-22、蜂蜜15-18、板栗仁10-12、黄花菜5-6、菜籽油4-5、维生素C、0.15%柠檬酸、0.02%乙二胺四乙酸二钠;
根据权利要求1所述的一种开胃健胃夹心竹笋片的制备方法,包括以下步骤:
(1)将竹笋切成片于在沸水中热烫7min,再经0.15%柠檬酸加0.02%乙二胺四乙酸二钠溶液的溶液浸泡3min取出备用;
(2)在温度为65℃、微波频率为800W的条件下对步骤(1)所得竹笋进行微波喷动干燥70min,取维生素C在常温下溶于水制得饱和溶液,将维生素C与处理后的竹笋按照0.1g/kg的用量均匀喷上维生素C饱和溶液,再风干得笋干片备用;
(3)将甘松、车前草、余甘子、芒果核加6-7倍水大火煎煮1-2小时后压滤去渣得中药液;将黄花菜晒干切成丝状、山楂拍碎后去核后倒入蜂蜜内搅匀得带丝蜜酱;
(4)将板栗仁蒸熟碾碎得板栗粉,取洋葱切片蘸菜籽油入烤箱内烤熟备用;
(5)将笋干片、中药液及剩余各原料充分混合后小火煎煮30-35分钟,捞出竹笋片,在其中一面上涂抹带丝蜜酱,再铺上一层板栗粉,最外层摆上烤熟的洋葱片,将两片相同处理的竹笋片蘸料面对称夹紧后压薄,即得。

具体实施方式
一种开胃健胃夹心竹笋片,由以下重量份(千克)的原料制成:
竹笋200、甘松0.7、车前草1、余甘子0.9、芒果核0.7、洋葱10、山楂15、蜂蜜15、板栗仁10、黄花菜5、菜籽油4、维生素C、0.15%柠檬酸、0.02%乙二胺四乙酸二钠;

1.一种开胃健胃夹心竹笋片,其特征在于由以下重量份的原料制成:
竹笋200-220、甘松0.7-0.9、车前草1-1.2、余甘子0.9-1.1、芒果核0.7-0.9、洋葱10-15、山楂15-22、蜂蜜15-18、板栗仁10-12、黄花菜5-6、菜籽油4-5、维生素C、0.15%柠檬酸、0.02%乙二胺四乙酸二钠。
2.根据权利要求1所述的一种开胃健胃夹心竹笋片的制备方法,其特征在于包括以下步骤:
(1)将竹笋切成片于在沸水中热烫7min,再经0.15%柠檬酸加0.02%乙二胺四乙酸二钠溶液的溶液浸泡3min取出备用;
