[0002] 石榴原产于波斯,古人誉之“天下之奇树,果中之极品”。《图经本草》载:“榴叶者,治咽喉燥渴,止下痢漏精,消食祛火”。石榴茶产于山东省枣庄市的“冠世榴园”,石榴园树木茂盛,风光秀丽,园内古寺、清泉、溪水、瀑布纵横其间。2001年12月被吉尼斯总部命名为世界吉尼斯之最。

[0007] 本发明公开的石榴芽红茶的制备方法主要包括鲜叶采收、萎凋、揉捻、发酵和干燥几个步骤,下面分别进行介绍。
[0008] I)鲜叶采收:为了保证一定的嫩度和防止茶叶高峰期过于集中,宜适当提早开园采摘。一般在3-5月份,清明后、谷雨前,当有10-15%的新芽时开始采摘。
[0009] 采摘标准必须依据树的种类、树势、年龄和肥水管理水平以及加工茶类对鲜叶原料的要求而定。采摘的对象是树的新芽。为了保持鲜叶的鲜度,防止发热红变,采下的鲜叶要按不同级别、不同类型快装快运至茶厂加工。装运鲜叶的器具,要保证清洁干净、通气良好。这样,既可防止细菌繁殖而产生异味,又能流通空气,防止茶叶发热变红。

[0015] 发酵是形成红茶色、香、味品质特征的关键性工序,一般是将揉捻叶放在竹筛内入发酵室发酵。发酵要掌握满足茶多酚氧化酶的氧化聚合反应所需的适宜温度、湿度和氧气量。①温度:通常室温控制在20-25°C,发酵的叶温保持在30°C左右为宜。如叶温超过40°C,则要进行翻拌散热,以免发酵过分激烈,使毛茶香低味淡、色暗。尤其是在高温季节里要采取降温措施,摊叶要薄,以利散热降温;反之,气温较低时,摊叶要厚,必要时采取一些保温措施。②湿度:空气湿度保持在90%以上,有利于提高多酚氧化酶的活性,有利于茶黄素的形成和积累;反之,若发酵时空气湿度过低,则不利于茶多酚的酶促氧化,使非酶促氧化加剧,造成汤色和叶底都变暗,滋味淡薄。③摊叶厚度:一般在8-12cm,嫩叶和叶型小的要薄摊,老叶和叶型大的要厚摊,气温低时要厚摊,气温高时应薄摊。无论厚摊还是薄摊,摊放叶子都要保证发酵时通气良好。发酵过程中应翻拌至少一次,以利散热通气。④发酵时间一般为2-3h。发酵叶青草气消失,出现一种新鲜的、清新的花果香,叶色红变时,即为发酵适度。

(2)萎凋:采用自然萎凋的方法,即将石榴芽薄摊在室内,放置17h,温度为27°C,湿度为81%,其中萎凋叶含水率为59%,萎凋至叶质柔软、叶面起皱纹、叶茎折不易断、叶色暗绿无光泽、青草气减少并带有愉悦的清香;
(3)揉捻:揉捻的环境条件包括温度和湿度,揉捻室要求室温保持在23度,湿度为
87% ;
(4)发酵:将揉捻叶均匀、松散堆放于竹筛内,厚度为11mm,叶子上面覆盖湿毛巾,在发酵架上发酵2.4h,温度为21°C,湿度为89%,待叶色黄红、有愉悦的香味出现时即可停止发酵;其间,为使发酵均匀,须翻拌3次,并随时注意测量发酵叶温度,将其有效控制在26°C,时间为3.5h ;
(5)干燥:将发酵好的茶坯进行高温烘培,迅速蒸发水分,烘干温度为155°C,烘至石榴茶叶水分含量为14% ;继续烘焙提香,温度为68°C,烘至石榴茶叶水分含量为4.5%。
Claims (1)
1.一种石榴芽红茶的制备方法,其特征在于,包括如下操作步骤: (1)鲜叶采收:在3-5月份,清明后、谷雨前,当有10-15%的新芽时开始采摘,采用手工采摘,要求提手采,保持芽叶完整、新鲜、匀净,不夹带老枝叶,不宜捋采、抓采和掐采; (2)萎凋:采用自然萎凋的方法,即将石榴芽薄摊在室内,放置10-20h,温度控制在20-28 °C之间,湿度控制在80-85%之间,其中萎凋叶含水率为50_60%,萎凋至叶质柔软、叶面起皱纹、叶茎折不易断、叶色暗绿无光泽、青草气减少并带有愉悦的清香; (3)揉捻:揉捻的环境条件包括温度和湿度,揉捻室要求室温保持在20-24度,湿度控制在85-90%之间; (4)发酵:将揉捻叶均匀、松散堆放于竹筛内,厚度为8-12mm,叶子上面覆盖湿毛巾,在发酵架上发酵2-2.5h,温度控制在20-25°C之间,湿度为80_90%,待叶色黄红、有愉悦的香味出现时即可停止发酵;其间,为使发酵均匀,须翻拌2-3次,并随时注意测量发酵叶温度,将其有效控制在25-35°C,时间为3-5h ; (5)干燥:将发酵好的茶坯进行高温烘培,迅速蒸发水分,烘干温度为150-180°C,烘至石榴茶叶水分含量为9-15% ;继续烘焙提香,温度为60-80°C,烘至石榴茶叶水分含量为4-6% ο
